Hey I've posted some notes for the last episode of Noted below. Sorry they are a bit late.

PART 3:

Noted Ep. 192: VANILLA ICE CREAM (ft. Folkart and Bubbasbrewz)

FW Vanilla Bean Ice Cream: Everyone would rank it lower. It was Folkart's least favourite of those he tried. He thought it wasn't very flavourful. ID10-T thought it tastes like cheap ice cream. More like heavily sweetened whipped cream than ice cream. Fluffy. Thinner, similar in that regard to FA. Not very thick, but it is creamy. Quite sweet. Not very flavourful. Almost like it mutes itself. Emily uses it when she's making an ice cream that she doesn't want to be very rich, like a sherbet. Works well for that as it's so mellow. Definitely not vanilla bean. More like vanilla extract, and not very much of it. BB got chemically, bitter off notes, just like those you get if you push OOO Cream Milky Undertone too high. ID10-T tested at 4% and 6%. No off notes at 6%. Sam tested at 5%. BB tested at 6%.

Great Lakes Vanilla Bean Ice Cream: Emily liked it, pretty good. Darker vanilla. Really thick and creamy. But needs more sweetness. Really nice mouthfeel. Very rich and dark.

Emily has tried Great Lakes Creamy Milk and Cookie Dough. GL Creamy Milk had slight dairy note. But not much flavour. A little bit of body. Like OOO Cream Milky Undertone, but weaker in flavour and sweeter. GL Cookie Dough has same coconut off note that FLV Cookie Dough has. Has a gritty texture like cookie dough. Pretty decent. No chocolate.

SSA Ice Cream Vanilla: ID10-T didn't think it could carry a full ice cream in a recipe on it's own. But works great as part of an ice cream layer. It's really good. Great vanilla. Thick and creamy. Rich. ID10-T found the top note was a little soft and bland. A bit of a dead spot for the first 75% of it. So needs something else to fill that in. But the last 25% of it is so good. It's best attribute is the way that it finishes. Leaves a really nice, lingering aftertaste. BB, Emily and Folkart ranked it as their number one. Isn't a bully, like LB VIC can be in some recipes. More versatile. Folkart didn't get any pepper. Super full. Eggy and buttery. Ticks all the boxes of what you want in an ice cream. At 2% with a couple of days steep ID10-T found the butter to be a bit artificial tasting. At 1.75% with a week steep he didn't get that. So thought it either needs steeping for a week, or to be kept below 2%, or both. Folkart thought 3% was the sweet spot. Could vape it solo at 3%. Found it so buttery, so thick. He really likes butter, so if you don't like buttery vapes you may want to use it lower. Using it at higher % would work really well with caramel, butterscotch or butter pecan. Really strong. Although Folkart thought 3% was the sweet spot. Sam tested at 1.5%. Emily tested at 2%. BB did 1.75%. Folkart tested at 3%. ID10-T tested at 1.75% and 2%.

WF Vanilla Ice Cream SC: ID10-T thought it tasted really accurate to vanilla ice cream. It's not the custard-y style, palate coating ice cream. But it is thick and full. If you like ice cream, but not butter then this is a great option. It's not buttery, not custard-y or eggy. Has a bit of a dead space in the middle where it's a little milky tasting, but mostly just sweet and dry. The top note and the finish taste startlingly accurate. Need something to fill in the middle. Maybe SSA Ice Cream Vanilla?

TFA Vanilla Swirl: Tastes like soft serve ice cream. Not the richest, or most decadent. Not a great SF. Fairly boring and bland. But an excellent ingredient that everyone should have. Amazing additive. Works well in ice cream recipes and recipes that aren't ice cream. Most versatile. Can use if you just need a little more mouthfeel in a mix. A great blender of creams, brings everything together. Will mute things if not careful. But muting can be a positive if you have sharp or rough flavours that need smoothing out. Some people have reported getting a spice note. ID10-T has used up to 4%. Didn't get any off notes. Usually uses it around 2%.

PUR Vanilla Bean Ice Cream: Folkart thought it was more like a vanilla whipped cream than an ice cream. Bright vanilla, but very light. Has no weight to it. Ok if you just want to add a bright vanilla note to a mix. Probably not worth buying.

OOO Vanilla Ice Cream Blend I: Cheap, fluffy ice cream truck ice cream with too much water in it. Lemon note. Lemon pleasant, but doesn't fit into a VIC. Could use as a lemon cream?

FA Vanilla Ice Cream: One of FA newer flavours. Nothing wrong with it. But very average. Good vanilla note. Not as thick as many others. Very light in flavour. Bright vanilla, pleasant, but not strong. Not worth getting. If you wanted an all FA VIC combine FA Vienna Cream, FA Fresh Cream and one of FA's vanillas. FA Madagascar would be ID10-T's choice. If you wanted a darker vanilla use FA Vanilla Bourbon. If you wanted it brighter use FA Tahity. Let it steep for 5 days. It will be better than FA Vanilla Ice Cream.

OOO Vanilla Ice Cream Blend II: Not offensive. But a little dry. More like a vanilla marshmallow than VIC. Flat. Vanilla a bit dull. Fluffy texture.

OOO Vanilla Ice Cream Blend III: Very similar to OOO VICB II. Only reason it's ranked higher is because it's a bit darker and has a bit more of a malty vanilla. Might make it more useful in mixes and makes it more interesting as a SF. Could use in a milkshake, but would add another ice cream otherwise you'll have a marshmallow shake.

OOO Vanilla Ice Cream: BB didn't enjoy it. Out of the 12 flavours he tried he ranked it number 11. Really underwhelming. Could use as a mild cream if you have nothing better. Nothing offensive. Very meh. Not really ice cream, more just a cream. Sounded similar to OOO VIC Blend II.

difference between ice cream and cream flavours - ice cream more custard-y, buttery, coating. Has to feel more developed than cream. More dimension and volume.

HS French Vanilla Ice Cream: Everyone else would rank it higher. Works amazingly in certain recipes to fill in cream profiles. It's what makes the IC Trinity. Very useful flavour, just not a great VIC as a SF. Very good mouthfeel. Extremely thick. Base-y, buttery, rich. Great vanilla note. Very dark and rich. A little bit tangy as so eggy. Have to use it sparingly as an additive. ID10-T thought it might work great with chocolates to give that fatty feel. A lot of chocolates are missing the mouthfeel and the dense, rich fattiness. BB thought adding a dash of VSO Cashew would help bring out the fattiness while not being too overtly nutty. Use around 1% and below 2%. Sam tested at 2%, didn't get anything off. Emily tested at 2-3% and got straight butter. At 2% ID10-T got too much butter, tasted a bit movie theatre butter-ish and fake.

VSO Cashew is similar to avocado in that it has that oily, fattiness. Which would probably make it a great to chocolates. Some people have used avocado flavours, like FLV Avocado, with chocolates. But Cashew doesn't have that avocado taste and isn't overtly nutty. Which may make it a better option. Would also work great in peanut butters to add the oily, rich, fattiness.

CNV Vanilla Ice Cream and MB Thick Vanilla Ice Cream: ID10-T could barely tell the difference between them. The MB TVIC is just a little better. CNV is a little less sweet and a little less flavourful overall. MB isn't that flavourful any way. Sam and BB thought the vanilla note was mellow and middle of the road. Very thick, good mouthfeel. Not very creamy, just thick. BB didn't get any buttery-ness and no vanilla bean note. Thought it would be good in a milkshake to give mouthfeel. Add some fruits and another cream. Maybe MB Milkshake? Emily really liked MB TVIC. Liked the vanilla note. Palate coating, thick and rich. ID10-T tested both at 3%. Sam tested MB at 4%.

CAP Vanilla Bean Ice Cream: Sam thought it could be a sub for TFA? But ID10-T and Emily thought it was too different. The vanilla is different. Not the same vanilla note that is in things like CAP Vanilla Custard etc. Dairy/milky notes. Emily uses it where she wants more milk, like milkshakes. It's more like an 'ice milk' instead of an 'ice cream'.

PART 1:

Noted Ep. 192: VANILLA ICE CREAM (ft. Folkart and Bubbasbrewz)

No cooling in any of the ice creams.

If you are going to add cooling to heavy creams then use WS23. Koolada or FA Polar Blast is not a good idea. Even WS23 can be problematic, but better than the other options. Can usually just get a hint of cooling, any more will make your mix go weird.

HC Vanilla Ice Cream: Really dark and malty. ID10-T got a little bit of a burnt rubber off note. Folkart wasn't a fan of it either, but didn't get any rubber. Thought there was too much butter. A lot of butter. Concentrate is very dark in colour. Folkart and ID10-T both tested at 2%.

VT French Vanilla Ice Cream: ID10-T didn't think it was French vanilla or ice cream. Floral vanilla with bright cherry and almond notes. Thick. Cherry is almost plastic-y, not a good cherry. BB and Sam both got black liquorice notes. Sam thought it would be a good base for a black liquorice ice cream. BB ranked it as his least favourite of those he tried. Thought it was chalky, slightly floral. Emily didn't get any floral notes, but after re-tasting did get some anise. She thought it was like a knock off version of FLV Smooth Vanilla. If you use that above 0.2-0.25% it gets a bit floral and anise-y.
ID10-T tested at 3%. Emily and Folkart tested at 2%. BB tested at 4%. Sam tested at 2% or 3%.

VT Vanilla Ice Cream: Emily really liked it. Got a rich, dairy VIC with a darker vanilla note. Buttery like TFA VIC. One of the least sweet ones she tried. ID10-T got nail polish off note. Not nail polish remover, nail polish. Like eating a dark and caramel-y vanilla pudding while waiting for your nails to dry. Folkart didn't think it was specifically ice cream. More like a buttery cream. Vanilla wasn't overpowering. BB didn't like it. Agreed that it was a buttery cream. But found it really astringent. Mouthfeel wasn't good. Weak. He also got a bit of a nail polish off note. Bitter and drying. ID10-T tested at 3% and 6%. Emily tested at 3%.

TFA Vanilla Bean Ice Cream: Everyone else would rank number one. Used to be ID10-T's favourite flavour. Didn't used to taste pepper, but it gradually tasted more and more peppery. In between black pepper and oxidized nicotine. Folkart also gets pepper, like a spicy vanilla. For non-pepper tasters it's a delicious, dark vanilla, buttery, rich, full, thick vanilla ice cream. Tastes like real vanilla bean, a bit spicy. Very thick and custard-y. Like it has eggs in it. Smooth and creamy. If you don't know if you will get pepper from it buy a 10ml and SFT at around 4%. Even if you do get a little bit of pepper you can still use it in something like a tobacco where you want that peppery spicy-ness. Maybe something like a Turkish RY4?

LB Vanilla Ice Cream: Everybody else would rank second highest. ID10-T and Folkart get a slight pepper-y note. Although it is still Folkart's first choice for a VIC as it's so thick and rich. Probably the thickest of the ones hes tried. Just as buttery and rich as TFA. The vanilla note in TFA is a bit darker. Custard-y type ice cream. Silky smooth. Full mouthfeel. A lot of people who get pepper from TFA don't get it from LB.

TFA Vanilla Bean Gelato: A little weird. Thick, smooth and a little buttery. But also a bit waxy and kind of plastic-y. Too buttery to be accurate for gelato. Not as eggy as custard-y ice cream. The vanilla isn't vanilla bean. It's not like the dark specks of vanilla you get in ice cream, it's more flat, yellow, like French vanilla. Indistinct, but prominent fruity-ness to the sweetness. Has been used successfully in fruit and cream recipes. Maybe wouldn't work for anything else? Folkart uses it if he wants to add eggy-ness to a mix. Gets a lot of eggy-ness. Doesn't use it as an ice cream.

RF Vanilla Ice Cream SC: ID10-T got diet, caramel astronaut ice cream. Some dairy, but lacking richness. Dry and thin. Some vanilla but it's overpowered by a darkness, like a not great brown sugar-ish caramel. BB really liked it, ranked number 3. Got a nice, rich ice cream with a vanilla bean type vanilla. Full flavoured, full bodied. Really sweet. He used it at 1% with SSA Ice Cream Vanilla and it turned out really good. Maybe needs to be used around 1%? Maybe ID10-T over-flavoured it at 3%? Concentrate is dark in colour. ID10-T tested at 3%. Steeped for 4 days. Needed longer? BB had 2 days steep.

INW Miss Cream: INW describe it as a creamy custard taste with delicate hint of fudge and vanilla. ID10-T didn't get any fudge, not even anything dark that resembles fudge. Vanilla not delicate. Not custard-y. Vanilla is super bright, artificial, nearly floral. Sits on top of heavy, dairy flavoured cream. A fluffier, more airy flavour. Like canned whipped cream. Might work well in an ice cream layer, especially one you need to taste more milky. Has a good dairy note that doesn't taste gross or weird. ID10-T tested at 2%

Isn't it always interesting to hear others' takes on your favourite flavours? I'm so bummed that VTA VIC didn't work out for you guys though, as it's in my top 5! Luckily, I don't get any off notes whatsoever, and it is very much like a soft serve, bright vanilla top notes to me. That said, there are plenty other flavours I DO get off notes with, that others love. I'm glad that SSA ICV went down a treat though, I also love this as an accent with other creams. Great show you guys
