Difference between CAP Super Sweet, and FW sweetner?
submitted over 4 years ago by lapinskymidstate91

Is there one you prefer more? Could someone maybe explain the main difference? Are either better for desserts!?

I have seen fw suggested for desserts, because cap has citric acid in it, while fw is just sucralose. The citric acid doesn't go as well with dessert profiles according to some people. If you sub one for the other, just remember cap is 2x as strong, so adjust % accordingly

What should I use for fruity dessert flavors? Like a lemon meringue pie or raspberry custard?

Cap is 20% dilution of sucralose (plus a couple of other things, I forget). FW is a 10% dilution.

So pretty much the same, with Cap being twice the strength.

I think FW is 30-40% according to their safety sheet.

Took a minute to find that sheet. And it does read like that. I was wrong OP

That is entirely too much sweet....

Those other couple of things make a difference in a mix. I never use CAP Super Sweet in bakeries and I never use FW Sweetener in fruit mixes.

Edit: To answer OP’s question...it’s subjective, but FW Sweetener is better in dessert mixes.

I definitely prefer using FW Sweetener over CAP Supersweet. I used Supersweet for months, until I had over-poured it one too many times. Since FW Sweetener is half as strong, it is FAR easier to use in smaller batches. I highly recommend FW, it changed my recipe game.
