So mandatory "just got back into this and I'm predictably in love with the scene and juicy possibilities again already" blah blah. It's true but still blah.
I really want to make a nice Coffee, Peppermint, Cooling Cream and I'm not sure where to start. A really beautiful solid cream base I like was in a Caramel Ice Cream recipe (below).
Am I right in thinking that if I remove the caramel and add a Coffee, a Peppermint (or any good mint) and some WS-23 (30%) then this cream base is a solid foundation to build on? If so can anyone recommend a good clean strong coffee and a really good mint that would work?
If flavours are sweet, I can scrap the cap to compensate. Would really love some guidance and good flavours for coffee and mint that the community love, and if WS23 will work I'm lost a bit.....
1% - (FA) Cream Fresh 0.5% - (CAP) Super Sweet 1% - (TPA) Sweet Cream 4% - (TPA) Vanilla Bean Ice Cream 3% - (TPA) Vanilla Swirl Total Flavouring: 11% Steep Time 2-3 Weeks VGPG: 70+
Maybe something like
LB white chocolate peppermint 5%
WF smooth cappuccino 2%
FA cream fresh 1%
Vanillin (10% PG) 0.5%
Definitely the white chocolate peppermint. It is what I was going to rwcommend.
Thanks for the help! I really love the base I've already got above. Would it work to add LB White Chocolate Pepperminy 5% WF Smooth Cappuccino 2% & WS23 (30%) 1.5%
On to the base above? Or would I need to simplify it this way? :)
It would probably be a good place to start although maybe increase the lbwcp to 6% to 7% or so to punch through all the cream. You can always increase or decrease them a little to tweak it to your tastes.
Edit, the peppermint is going to show itself decently and you might bring the ws-23 down to 0.5%
MB Double Mocca Coffee
SSA Mocca Coffee are both awesome
Brilliant Thanks very much for the heads up, I appreciate that I take it there a kind of a chocolate coffee flavour? Do you think they would work with my base and some ws23 and do you have a good mint or peppermint I could add to that? Also do you use them both together or just one or the other?
I don't get much chocolate out of them. It's more like it's rolled into a deep, robust coffee. I think your base is too complicated. I'd start simple. Add on more to future iterations if it's needed.
Lb white chocolate Peppermint is a great joice, as suggested by others.
I use VSO Espresso...Purilum caramel coffee with sweet milk, and Purilum Capuccino coffee..in different recipes...They are all good imo. But taste is subjective..
> can anyone recommend a good clean strong coffee
No. Good coffee flavors do not exist outside of actual coffee. Sorry.
Lol that sucks too hear. Is the one flavour your missing a decrnt coffee by any chance?
