Hey I've posted some notes for the last episode of Noted below.
I also have a big list of flavours, their % range, their properties and a short description that I could maybe post if that would be of help to anyone? It's info I've collated from Noted, flavour reviews, my own testing...pretty much all over the place. I haven't cited where I got the individual info from though as it was only intended for my own reference. But maybe I can write a disclaimer at the top or something?

Noted Ep. 179: CHAMPAGNE (ft. ConcreteRiver)
WF Champagne Soda: Not supposed to be champagne. Based on a soda. WF CS tastes exactly like baby powder. Even has the powdery texture. Smells like bubblegum in the bottle. But tested at various %s and all tasted like baby powder. 1-1.5% tastes purely of baby powder. Tested at 1%, 1.5%

(WF Champ. Soda based on this? Champagne Cola - It is typically dark yellow to light brown in color, with a flavor comparable to bubblegum or cream soda, with no connection to "champagne" or "cola". INW Sparkling Wine: Tastes like a cheap sparkling wine with a shot of bubblegum flavoured snow cone syrup. Mostly tastes like champagne, a little bubbly, very slightly boozy. But then get a strong bubblegum off note. Emily thought it wasn't unpleasant. But has a brightness that is too bright, should be deeper, more juicy. ID10-T thought at 3% the boozy-ness was a bit rhubarb-ish and almost a little camphorous and very unpleasant. Concrete thought it had a nice sourness. Didn't taste bad, but doesn't work for a champagne. Emil tested at 2%. ID10-T tested at 1% and 3%.

TFA Champagne: Has been a popular flavour for a long time and a lot of fun to play with. But not a very good champagne. Commonly used flavour, but maybe because those using it haven't discovered the better flavours? White grape juice flavour. Not fizzy. Has a slight mineral-ish taste to it that sort of used to pass for effervescence. Flat, not very sweet. A little fermented in a yeasty way if % pushed up and it's not mixed with a strong flavour. A mild flavour, not very bold or strong. Concrete thought it tastes like champagne smells after it's been spilled and has dried. Useful as a modifier for other things. Concrete has found it knocks the edge off florals. Could work well with TFA Honeysuckle? According to TFA website it contains water.

FA Wine Champagne (White Sparkling Wine): Not that flavourful. What flavour it has is pretty weird. At 2% is pretty soft. So ID10-T pushed it to 3% and it tasted like rotten grapes. So is just going to be a soft, background flavour. At 2% and below is not rotten, just fermented. Not at all fizzy. More like white wine than champagne. Too fermented to be white grape juice, definitely a wine. Sweet. The tartness it has is almost, but not quite vinegar-y. Tastes more like white wine than FA Wine White, which is more of a brighter white grape. A little gross as a SF, but not so much as it's so soft. Seems like it could be a good base for any kind of fruit wine mix. ID10-T trie a recipe which used it with watermelon to make watermelon wine and it worked well. So not usable but not a very good champagne. No fizz. But Emily gets a slight sharpness that is attempting to be fizz. But ID10-T would describe that sharpness as kind of vinegary. Emily and Concrete thought it was underwhelming.

FW Pink Champagne: Tastes very pink. Cavity inducingly sweet. Has some damp powdery-ness around the edges, like a nod to effervescence. So has kind of a fizzy champagne feel. Not really boozy. Like a flat, non alcoholic sparkling white grape juice, only pink. The pinkness maybe tastes a bit like a candy strawberry if you really focus on it. Pretty enjoyable just as a candy grape, strawberry-ish flavour. But not a particularly good champagne. Seems like it would work well in a Sweet Tarts mix with the sweetness and the way it's kind of powdery, but not dry. It works really well to make certain fruits taste more candied. Also works to give body in a slushy or snow cone recipe. To give that pulverised ice texture, plus sweetness. It's a useful flavour that's worth having. But it's not going to be a crisp pink champagne.

LA Sparkling Wine: Pretty solid. Not quite as sweet as FW Pink Champagne. But pretty sweet. Like a grape juice with a smidgen of boozy sharpness. Has a bit of a mineral taste that kind of mimics fizzy-ness. Not really boozy, but fermented enough that it is definitely a champagne. Deep, full bodied. Other flavours do the bubbles a lot better, but otherwise it pretty much nails the flavour of a very sweet champagne. May be useful in champagne mixes to add depth.

FLV Morning Mimosa: A really good flavour. But Concrete called it prison wine or like a home-brew champagne where the fermentation hasn't been done particularly well. Almost too realistic in that it plays up some of the funkier aspects of the champagne. The fermentation, instead of tasting crisp tastes more funky. identifiable as champagne. Has a decent bubble-ish effect, some zesty citrus up front. But there's a deep, mild funkiness about it. Perfectly workable and desirable if used kind of low and you don't try to really push it all the way into the front. If you do try to push it by itself to the foreground that funk tends to dominate. The orange note is really good, it's one of Concrete's favourite oranges. It's just attached to the sparkling wine.

VT Blood Orange Champagne: If VT sold the champagne flavour separate from the blood orange then it would easily be the best champagne flavour. A really accurate champagne that tastes like it has blood orange flavouring added to it, rather than real blood orange juice. The orange is Kool-Aid-ish. It's artificial, fake and cheap tasting. The orange also limits versatility. But it is really tasty and really good as a SF. Very robust. Has a great fizz. Works well mixed with FLV Morning Mimosa. The zesty and funky aspects of the MM and the candy, fake aspects of BOC have a way of correcting the other's issues. The orange tastes more realistic and it makes the champagne taste less funky and more fizzy. ID10-T uses MM under 0.75% and BOC at 4-5% when used together. Makes a great mimosa. ID10-T likes to add a bit of WF Orange Juice to make it a bit more orange-y. Can use it at 6-7% as a SF. Effective down around 2%.

FLV Brut Bubble Wine: Excellent sparkling wine flavour. Tastes somewhat like FLV Morning Mimosa, but not quite so funky. A little boozy. Has a bit of an apple note, like apple juice. Crisper and more effervescent than MM. Gets a bit of a bubblegum-ish undercurrent if used too high. It's more versatile than VT BOC as it doesn't have that artificial orange note. At 3% and above gets bubblegum-y. 1% is effective.

ID10-T thinks people should have all of these flavours, except for INW Sparkling Wine and WF Champagne Soda. There's great uses for all the others, even if that's not necessarily as champagne, and they're all pretty good.
DIY or DIE Sang Petillant (one shot): Seems like it contains FLV Moscato. Delicious, relaxing flavour. Like a citrus blend mimosa that's mostly natural blood orange juice with a splash of white grapefruit. ID10-T was expecting a deeper, more earthy flavour. But got quite a lot of the brighter, nicely bitter white grapefruit. Nice to see a more interesting, innovative profile being sold as a one shot. Evokes a feeling of decadence.
