Advice on how to alter a recipe.

SVRF - Balanced (Clone)

(tpa) - Cheesecake (Graham Crust) - 1.0%

(fa) - Coconut - 2.5%

(tpa) - Cotton Candy - 0.5%

(fa) - Mirangue - 4.0%

(tpa) - Sweet Cream - 7.0%

total flavoring - 15%

Steep results: At 7 days coconut was too strong.

At 14 days coconut is almost a distant memory and a lot of the sweetness is gone.

When altering a recipe is there a rule of thumb lets say 0.5% increments / decrements of a desired flavor?

I want to alter the recipe to bring coconut and sweetness further to the front. Should I lower the mirangue and raise cotton candy or add a regular sweetner.

** Thanks to everyone for the guidance. I made a new batch last night using Meringue @ 1.5% and sweet cream @ 1% will let you know in 7 days.

** After 7 days the coconut is present but creamy and the finish is nice and sweet. I did replace cotton candy with FA Sweetner at 1% and may alter the recipe again but I'm waiting to try it again next week.

I'm not. I have no idea how much Sweet Cream would be excessive in a pod, though I'd probably be afraid to try more than 4%.

The percentages for Meringue and Sweet Cream are way, way too high. Bring Meringue down to 1.5 and sweet cream to 1.

that brings the total flavoring down to 7% or did you mean lower them by 1.5 and 1% respectively? and should I add a plain sweetner 0.5% to the mix?

Total flavor percentage is irrelevant. Thats not something you should be concerned about

Thanks for clearing that up I'm looking forward to trying this again at 1.5 and 1% and I'm replacing cotton candy with sweetener since I don't have any coconut candy.

7% TFA sweet cream is impressively high, to the point where it's honestly surprising to me you can taste anything other than vaguely sweet cheese.

FA meringue is also very high, I don't think I'd see much need in bringing that north of 2% in many, if any, cases.

If you're really trying to elevate sweetness rather than increasing the use rate of a muting agent in Ethyl maltol (TFA Cotton candy) I'd probably look at introducing FLV sweet coconut to kill two birds with one stone.

Cotton Candy makes things feel too dry for me if I add too much. I'd probably just add a few drops of super sweet and that might fill in some of the missing sweetness. Maybe try TFA Coconut Candy instead of FA Coconut if you have it.

Rules are made to be broken. If you're only mixing 10mls or so to test then maybe make 3 versions or so where you alter the % slightly between each until you get to where you want to be.

Yep, your sweet cream and meringue are smothering your flavor. Like when you put too much cream in your coffee.

I'm trying it again tonight. I'll keep you posted I usually taste after 7 and 14 days. This is one of my first favorite flavors.

You should really lower the sweet cream. After 2 weeks that will wipe everything else out. Also, if you're going for a "premium" taste, then yes, ditch the cotton candy and use sucralose.
