Apple Fritter

Good day all, been a while since I posted a recipe.

This is a long time in the making. Tried and wasn't happy with earlier iterations and other ingredients. Getting CAP Vanilla Cupcake & JF Biscuit added to my stash, and semi-recently PUR Country Apple breathed new life into my hunt for an amazing Fritter. My favorite donut!

It gave me some ideas (FA Joy), but also sent me in the wrong direction long ago lol ... as my flavor notes will expand upon.

  • CAP Cinnamon Danish Swirl 1.9%
  • CAP Sugar Cookie 1.6%
  • CAP Vanilla Cupcake 2.3%
  • JF Biscuit 1.0%
  • FA Joy 0.5%
  • FA Fuji 0.9%
  • PUR Country Apple 2.6%
  • FLV Rich Cinnamon 0.21%
  • Rick's Sugar Daddy 0.5%

Minimum Steep Time: 4 days

Recommended Steep: 7+ days

CAP Cinnamon Danish Swirl - A great flavoring that many are very familiar with. I kept this under 2% as I've found that it can really mess up a recipe when used too high and steeped a long time. There's a 1-2 week window where it shines, then it can completely overtake a mix. Keeping it lower, and with supporting bakery elements, can make this recipe more 'steep-proof'

CAP Sugar Cookie v1 - Again an old favorite that adds a beautiful rich mellowness and depth. "EZ button for bakery creations!" No need to take any higher than 1.6% while used in this capacity.

FA Joy - This is critical to the slightly doughy center of the fritter. Used above 0.5% can add a very distracting note vs a nice subtle one. This helps give more range to the recipe as a whole.

JF Biscuit - Helps strengthen the bakery element up against all the other components. This allowed me to lower the CDS percentage to retain its subtleness and therefore balancing of the recipe.

CAP Vanilla Cupcake - Not what I expected lol .... but that surprise is what allowed me to add a nice top layer of icing and separation to the flavor profiles. Without that extra range, mixes can get muddled. (fritter in a blender)

PUR Country Apple - This stuff is gold!! I find you need to mix at a decent percentage to get a strong caramelized apple taste. This is the outer layer of fritter that gets deep-fried chunks of apple.

FA Fuji - I used this staple ingredient as a hint of the apple chunks that are inside the dough. Brighter to help cut though the bakery notes, but not the star. Definitely sits higher on the palate than the Purilum apple.

FLV Rich Cinnamon - King of Cinn. I find this can be volatile and perhaps react with the long-chain aromatic flavors over time. So I add just 1 drop per 30ml and only once the recipe has steeped for 4-7 days or whenever I decide to put this recipe into ADV rotation. Sometimes I make a 4oz batch then just transfer 1oz, add cinn, and shake.

Sugar Daddy - I have an issue with sucralose. I find this stuff at low percentages give sweetness without that nasty taste. Replace with your favorite sweetener.

I tried hard not to add any excess elements (my kryptonite lol) as that can 'bridge' the different layers and do more harm than good.

Also I would like to note as a baker. Apple fritters are traditionally made up from the trimmings of cinnamon rolls. It was really a happy accident.

Not yet dude but I will! Thanks for reminder! All my mixing stuff currently in storage whilst we move home. As soon as get it back I'm back on the diy..been buying normal store juice and feel sick with myself every time I do paying those prices

Good luck with the move! I had one this month and finally got a 3 tier trolley & some circular labels* from Michaels to get my DIY stuff properly unboxed

*fits 4oz caps nicely

As it sits right now, this is what I have stepping right now.

WF Bavarian cream .75%

FW yellow cake 1%

Cap cinnamon sugar 2%

Cap glazed doughnut 4%

FLV rich cinnamon .25%

FLV apple filling 1%

FLV apple cider .5%

FLV fried dough .25%

Pur country apple 2%

It's been my favorite so far (on the shake) a steep will confirm.

I've made note of your progress. I have had so many confections that I thought would nail it. At this point I'm numb and trying blends I've learned along the way. Some day this will be a known profile..... I hope!

I hope so too! Perhaps some inspiration / getting back to the basics.

My experience was to chill and regroup later.

You own a lot of flavors that I don't have. My stash is ~70% fruit lol

Zep has tons of off notes according to the reviews. FLV likely has a solid profile, but I bought Joy a year ago and realize it's got a slim margin of error

I'm sitting on 30ml of joy. I always think it will steep out some but it just keeps getting more prominent. I've also been working on an apple fritter for around 2 years now. It was the reason I bought joy. I feel it was in error.

Pretty certain I bought Joy for the very same reason, as I don't need a hint of yeast in any other recipe lol

After failures, I eventually went with a run of Apple Pies and Cinnabon recipes then a 9 month hiatus from bakeries.

I used 1 drop per 30ml when testing this particular new recipe. Ended up tripling without it hitting the palate in a negative way. Everyone is unique tho 😁
