Hopefully I have posted some notes for last weeks episode below. The internet where I am at the moment is awful and I’ve tried to post this so many bloody times! If they’re not below yet then they’re available on last weeks FOTW thread.

Emily's Bottom Three:
WF Egg Yolk SC: The egg isn't the most prominent note. What little there was tasted like the yolk of a hard boiled egg. Too creamy, more like Miracle Whip. Like mayonnaise, but a little more tangy and sweeter. The sweetness is off putting. Spoilt, funky note. Not dry. May have its uses, maybe if used really low in a custard or something. But even then the eggy-ness isn't the right type of eggy-ness for that. Don't know what application it would fit into. As a SF it's horrible.

Portuguese Egg Tart SC: The custard was too eggy for Emily. Slightly sweet, dark, spice note, lemony sweetness. ID10-T thought it was a moderately eggy custard with a fairly prominent lemon note. Not much bakery, just a little toastiness on the end. Seems more like the top of a baked custard. But not the flakey, buttery crust of a Portuguese egg tart. ID10-T thought it tasted great as a SF but not sure what to do with it.

WF Corn Powder SC: Will have some good uses in a mix, like bumping up OOO Corn Bread. But as a SF it's weird. It's dry and powdery. Not buttery or sweet like FA Corn. Just a bit of corn flavour. OOO Corn Bread is good, but a bit too soft. When it's cranked up it gets dry and good towards Fritos. WF didn't seem like it would go like Fritos as it's not got the AP like OOO. If you want buttery sweetcorn use FA Corn. For Cornflakes there's Cereal 27. ID10-T thought it could be used in conjunction with CAP Sugar Cookie to make a corn cookie. Like a sugar cookie made with a bit of corn flour.

ID10-T's Bottom Three:
WF Ameretto SC: At 3% and 1.5% ID10-T got mostly Ameretto, but with a bit of a vinyl, plastic off note. Not a lot, even at 3%, but won't tolerate any amount of shower curtain! Emily got a touch of vinyl but not much at all.

WF Southern Sweet Tea SC: Emily liked it. But thought it was a bit more earthy than sweet tea. ID10-T thought it was very earthy. Like some sort of heavily brown sugar glazed, slightly caramelized, roasted vegetable. It tree bark and brown sugar. Strong brown sugar note and strong earthiness and a hint of bitterness. Tasted like tea on the very finish. Could be really great in a tobacco? (Sam in the chat said he loves this flavour at 5%) Tested at 2%, 3% and 6%. 6% tasted the same as at 3%, just bolder and significantly sweeter. As it's a brown sugar sweetness it made it more brown.

WF Bread (Butter Toast) SC: The concentrate is alarmingly pink in colour. Doesn't taste like buttered toast. Very sweet. The sweetness is a darker, caramel-y type sweetness. Kind of like a bad caramel corn. A little butter. The butter is really nice. Weird roasted, not toasted, quality.

Cheeba's Bottom Three:
WF Citrus Drink (Five Fruits) SC: Emily liked it. Cheeba ranked it so low because he found it harsh. Although Emily and ID10-T didn't think it was especially harsh for citrus. But they both steeped it for a week. Cheeba only steeped it for 2-3 days. Tastes like Five Alive. Emily found pineapple to be the most prominent note. Comes in first, then get lemon-lime. ID10-T got mostly orange with lemon-lime behind it. Tastes like a mix of real citrus juice and Kool-aid, as does Five Alive. Very sweet. A little soft. Most of WF fruits are pretty punchy. Tested at 3%

WF Buttermilk SC: Potentially a very useful ingredient for mixing. Could be really great in a bakery. As a SF it's a very thick and smooth, very dairy, sour tang. Doesn't taste at all butiric. Like a butter flavoured drinkable yoghurt. Pretty accurate to buttermilk. Tastes almost identical to HS Ice Cream (not HS French Vanilla Ice Cream) so probably don't need WF if you already have that. Would work well in pancake and waffle mixes.

Middle of the Road Flavours:
WF Bourbon Aged Cream SC: Nice dairy note. Thick, dark. A little woody. Has a bit if a boozy bite. Overall not bad. But there's better bourbons and better creams out there. Better to mix FLV Bourbon with your favourite vanilla cream.

WF Bread (Sweet) SC: A very useful ingredient. WF Glazed Donut tastes like the outer crust part of the donut. This is the rest of the donut. It's the fluffy, white innards. Not much fun as a SF. Very bland, slightly yeasty, sweet, bready. It's not that yeasty so could be used to fill in other things like French toast.

WF Raspberry Jelly Bean SC: Cheeba liked it. Thought the raspberry was pretty good. Had an OK gummy texture. ID10-T thought it was mostly a dark, sweet candy or jammy raspberry. But had an odd savoury element and a little funkiness, reminiscent of some currant flavours. Very deep candied raspberry, not floral or ketchup-y. Doesn't have the outer shell or the density or dense sweetness of a jelly bean. More like a jam.

WF Grape Juice SC: Sticky sweet, Kool-aid. Very candied grape. But not the artificial, purple flavour many grapes tend to be. Had some punch to it. A bit reminiscent of SC Grape, similar Blow Pop grape flavour. But not as sweet. Could be a pretty good Kool-aid with just some sweetener and some ice.

WF Citrus Gummy SC: Nice flavour, but the texture is lacking. Even thinner than the WF Citrus Drink. ID10-T found it a little harsh. Does the sugary coating on the citrus slice candies well. Very sweet. A good top note flavour. Not going to fill out a gummy recipe.

WF Bread Banana Nut: Discussed last week. Tastes like banana bread made with banana pudding, instead of banana. Not enough banana, it's very mellow and soft. What is there is artificial, but not Runts. Underwhelming.

WF Sweetener (Stevia 15%): Effective if you want to use stevia as opposed to sucralose. Mostly flavourless. Will give sugar lips finish. Stevia can leave a bitter after taste that lingers for a long time. It is possible to use it low enough to avoid the bitterness. Tested at 3%. Way too much! 3% is maybe comparable in sweetness to around 1.5-2% CAP Super Sweet. But the bitter after taste is nasty at that %.

WF Pineapple Baked SC: A bit disappointing. Didn't have the dark, caramelised, cooked-ness. While it's not bright, it's not dark enough. Tastes warm rather than cooked. Like pineapple that has been warmed up, not baked. Musty, savoury note and a darker sweetness that makes it seem like it has a bit of a honey flavour in it. The mustiness is a bit distracting. It's almost floral, but not quite. They're using that darker sweetness to try to make it taste baked, but it doesn't work. Overall the flavour is soft, not bold enough. It's missing the concentrated sweetness baked pineapple has. Could be useful though as it's a more base-y pineapple. Doesn't have the sharp top notes. So could use to give another pineapple some body. It's not cooked enough to not fit into a beverage or fruit mix. Probably not capable of being the only pineapple if pineapple is a main note. Not bold or flavourful enough. Doesn't taste bad, but not accurate to the name. Tested at 3%. 3% seems too high. Maybe 1.5% to fill out another pineapple.

WF Apple Gummy SC: Not bad, but not a standout flavour like WF Strawberry or Blueberry Gummy Candy. Tastes like green apple rings candy. WF Sour Gummy also tastes like apple rings too. But Apple Gummy is much more accurate. It's sticky sweet and thick. Nice texture. The apple flavour is really nice. No nail polish remover or not grassy like a lot of green apple flavours can be. Could do with a little more tartness and brightness. The apple just needs to be bumped up a bit. It's a bit dull. But that could be fixed with something like WF Jolly Candy aka Green Hard Candy or CAP Green Apple Hard Candy. Or for more sourness a bit of FLV Sour Apple. WF Apple Gummy Candy and CAP GAHC could be a great combo for an apple rings candy mix. Use WF for the body and CAP to punch up the apple flavour. Then add a little FLV Sour Apple for extra sourness. A bit of sweetener.

WF Tropical Gummy Candy SC: One of Emily's favourites. Pretty yummy. Very clearly guava. Not as funky as some other guavas. But has enough funk to be authentic. Has a bit of a pink grapefruit citrus note. Very fresh tasting. Really nice syrupy thickness. Really thick. Bold, punchy flavour. Very sweet, sweeter than an actual guava. But no distinct gummy candy taste, but makes it more versatile. Could easily use it in something like a tropical punch. It's called Gummy Candy, but should be called Guava (or A Better Guava Than Our Other Guava!) Nice pink guava. Not like FLV Pink Guava that is very heavy on the pink grapefruit. WF isn't as funky either. Not like CAP Sweet Guava which is syrupy, more base-y and darker. WF is bright. Could work really nicely with WF Citrus Drink?

Top Flavours:
WF Kumquat SC: ID10-T's favourite of the week. Cheeba wanted a bit more flavour, but that may have been because it lacked some elements of authenticity? Needs to be a little brighter, tarter. ID10-T and Emily thought it had plenty of flavour. All tested at 3%. Cross between a lemon and a tangerine with a little touch of tropical funk. Tart. Lemon up front. Tangerine in the base with nice sweetness and earthiness, finishes like a blood orange. Very robust, has base-y, dark note like a blood orange while also having bright lemony top notes. Although it's really tasty it lacks authenticity. Not as bright, sharp or tangy as a kumquat is. They're pretty sour. ID10-T's initial idea was pairing it with coconut and rum in a tropical cocktail. Well balanced, it's not top or bottom heavy. Tested at 3%

WF Sugar Cookie SC: Too soft. Couldn't be the single cookie flavour in a mix where cookie is a main note. But it is yummy. Could use to boost another cookie or bakery. Would fit into many types of bakeries. Very sweet. Soft baked with a touch of vanilla. Nice butteriness. Tastes buttery but is not particularly rich. Kind of airy. Missing the gritty, crumbly, crunchy element. Very moist and soft. Tested at 3%. Use around 2% if using to accent another cookie or bakery

WF Brown Sugar Cookie tastes like ferrets!
WF Crumble Topping: Cheeba's favourite, ID10-T ranked it number 2. ID10-T and Cheeba thought it was pretty accurate to crumble topping. Emily thought it was not like a brown sugar cookie as it's not oat-y enough. Like the crumbs of a chocolate chip cookie, without the chocolate chips. ID10-T didn't find it that dark. People have used INW Biscuit or CAP Sugar Cookie in mixes for crumble topping. This would be a much better option if it sits on top of a mix. Nobody had used it in a mix. It's really buttery, sweet. Cheeba found it pretty oat-y. But Emily and ID10-T didn't. Nice crumbly texture.

WF Philadelphia Butter Cake SC: Emily's favourite. Very rich, buttery, cake-y. Really good yellow cake flavour, like a pound cake. Both Emily and ID10-T got a little sourness on the first puff. There's a little butiric in this flavour. ID10-T is sensitive to butiric, but it's subtle enough that it's only noticeable in the beginning of the first puff. Not offensive or bothersome. Could be the FW Yellow Cake killer. All the other yellow cake flavours don't have the buttery richness FW has. But WF has that. Only missing the crispy, outer edges of a cake, which FW does have. Definitely just the inside. The butter is really deep and base-y and much more prominent than in other cake flavours. Cake note very accurate. If you wanted to make a pound cake this would be a better option than FLV Pound Cake as it doesn't have the anise and coconut off notes FLV has. Tastes like something a recipe could be built around. But also seems like a small amount could be used to improve another cake flavour. Like WF Fluffy White Cake or PUR Simply Cake, or any cake really.
