Hey, I’ve posted some notes for this weeks episode of Noted below for anyone who might find them useful. Cheers
PART 1:
Noted Ep. 163: BREAKFAST BREADS (ft. Humanpuck)
(Episode aired on 11th August 2020)
According to ZiggyWay's winning Reddit comment MB Classic Belgian Waffle and CCW Waffle (now known as CC (Chefs Choice) are the best combo for a Belgian waffle they've tried so far. But CCW Waffle needs a months steep. Use around 2%. Don't use above 3% for best results.
(Ranked from worst to first)
Humanpuck is reading an anonymous contributors notes as they couldn't appear on the show in person. So ranked by nameless writer.
LQ (HiLIQ) Cinnamon Toast: Terrible. Synthetic, plastic vinyl cinnamon. Nauseating. Like a cinnamon shower curtain. Tested at 2%
6.04
FP (Flavor Phoenix) Blueberry Muffin: Blueberry cleaning product and cough syrup.
6.50
From the FP flavours Humanpuck has tried they tend to be pretty potent and not very authentic or accurate to the name of the bottle.
NF (Nature's Flavors) Organic Banana Nut: Synthetic banana with burnt nuts. Chemical off notes. Tested at 3%
7.48
TP (Tasty Puff) Blueberry Muffin: Like blueberry mixed with a pine tree. Background note of weed. No bakery. Got worse the more they vaped it.
8.50
FA Croissant: A croissant sprayed with lemon pledge. Strong lemon cleaning product off note. Buttery croissant underneath. But can't get around the lemon.
10.18
FW Banana Nut Bread: CONTAINS SUGAR SYRUP. The actual concentrate is black. Very banana forward. No bready-ness or bakery note. Less spice than other BNB flavours and not enough nut. The banana is fairly decent, surprising as FW Banana is pretty awful. Destroys wicks fast.
12.05
HC (Health Cabin) Cinnamon Danish: A mess. Some cinnamon, but not prominent. Faint AP note. Definitely not discernable as a Danish. Faint cinnamon air. Tested at 2%. A lot of HC flavours are potent at 0.25% so possible 2% was too high and muted?
14.17
HS Cinnamon Bread: Burnt toast. Not sure how burnt it is, but HP thought peanut butter and jelly might drown out the burnt aspect?
15.58
HS Muffin: Not a muffin. A bready coffee. Very dark and roasted, to the point it tastes like coffee. Not sweet. Even darker than WF Coffee Cake. Had a definite bready note.
16.25
RF Blueberry Muffin SC: Very different from RF Blueberry Muffin. More of a candy blueberry. No real muffin or bakery notes. Might be good as an additive in a blueberry candy recipe? Tested at 3%
19.49
RF Cinnamon Toast: Burnt toast with a hint of cinnamon. Slightly less burnt than HS Cinnamon Bread. But still burnt.
20.54.
RF Blueberry Muffin: (Not the SC version) Strange blueberry fruit medley with a touch of cinnamon. No muffin or bakery at all. Not a terrible flavour, but not sure where you'd use it. More of a mixed berries. Tested at 3%. Usually have to use the non SC RF pretty high. So 3% could be too low?
22.14
RF Banana Bread: Mediocre. The banana is in between realistic and artificial Runts. Cheap, Wal-Mart brand banana bread.
23.21
WF Bread (Banana Nut) SC: Like banana nut bread, but instead of using bananas it's been made with banana Jello powder or banana pudding mix. It does all the other elements, it's bready. There is some nuttiness. But the banana isn't right. It's not Runty, but not a realistic, cooked in banana. It's a bit creamy. Not enough banana either, a bit too soft and mellow. Lacks texture of BNB. Overall not unpleasant. But a bit weird and not authentic.
24.14
FLV Lembas Bread: A very authentic muffin. Distinguishable from a cupcake, cake or bread etc. Distinctly a muffin. Missing some of the darker, outer crust. But really spot on to the fluffier inside of a muffin. Not as sweet as a cupcake. Has the bready-ness of a muffin. Has a little butteriness, could perhaps use a little more? But that's easily fixed. Has a bright, fruity type sweetness. A bit lemony. But can be covered. Also can make fruits like blueberry pop. A hint of citrus would probably work in most fruit muffin recipes. Would probably get wierd in something like a chocolate muffin mix though. An apple cinnamon muffin would be good with PUR Country Apple or FLV Apple Filling. Emily used Soho in her Orange Cranberry Muffin recipe to give it the darker, outside crust Lembas Bread is missing.
26.33
Recipe: Cran Orange Muffin by MlNikon: Uses a touch of Soho to give it a fresh from the oven baked-ness. FLV Pound Cake make it a bit heavier and less dry.
29.01
OOO Banana Nut Bread: Not as good as TFA. Lighter and less of a bread. Just a banana nut flavour with some cinnamon. Tested at 3%. OOO is erratic when it comes to what %s to use their flavours at. Maybe 3% is too low and the bready-ness may come through at higher %?
31.15
WF Coffee Cake: In the US a coffee cake is any cake served with coffee, usually a cinnamon crumb cake (in the UK coffee cake is a sponge cake with coffee in it, and traditionally walnuts). WF is bready, roasty, coffee, cake. The coffee note isn't bad. Not very sweet. No cinnamon. Hint of chocolate. Not a bad flavour, just disappointing as was expecting the American version of coffee cake.
32.25
FLV Blueberry Muffin: It's the cooked blueberries in a muffin. But there's no muffin or bakery note. Not quite as sweet as blueberries are when cooked. Very cooked. The fact there's no muffin makes it versatile. Could use in a pancake etc. If it was mixed with another, more jammy blueberry could be used to make a pie filling. Useful flavour to have. If you wanted to then it into a blueberry muffin FLV Lembas Bread could be used to add rest of the muffin. Would also need something for the outside crust of the muffin, Emily used FA Soho. Or could potentially use WF Roasted Hazelnut SC very sparingly, as it's so dark and roasted. Might be able to use a cookie flavour for that?
34.50
FW Coffee Cake: Cinnamon crumb cake type coffee cake. Discernable bakery flavour. Nice cinnamon, without being overpowering. Dead on, authentic coffee cake. Not sure what else you'd add to it.
37.53
TFA Banana Nut Bread: Good overall. Slightly artificial, but not offensive. Nice banana and light cinnamon on the finish. Definitely identifiable as BNB. Nice nuttiness. Really great bready body. Needs a little bit of help. A little dry. Something like custard or butter can easily fix that. WF Cookie Butter works great. Apparently works really well in a pod. If that's true that makes it one of the few bakery flavours that does. Would probably have to use it at something like 10-12%. A bit weak, 5-6% is a good starting %. ID10-T has had a recipe that uses it at 8% and it worked fine that high. Not overbearing, no off notes.

PART 2:
Noted Ep. 163: BREAKFAST BREADS (ft. Humanpuck)
VT Croissant and WF Croissant: Everyone else would have ranked WF Croissant below VT as a SF. But they work great paired together. They fill in what the other lacks. VT has the butteriness and the outer crust. WF has the inside flakiness and graininess. VT is a little top heavy, get butter right up front. It has a lot of really good butter. Then get the crispy, outer layer of the croissant. But trails off after that into almost flavourless, powdery, slightly doughiness. WF is soft overall and can get lost in a mix by itself. As a SF it's not particularly enjoyable, it's a bit weird. Both VT and WF are a little sweeter than an actual croissant. But probably won't be a problem as any other elements you're likely to add will be sweet. Like jam, fruit, chocolate etc. Humanpuck has combined VT with FA Cookie in a recipe. They go together really well for a stuffed croissant.
43.18
DIYFS Blueberry Muffin: Really nice muffin with a light blueberry. The sweetness is almost like the sugar crystals on the top of a muffin. Nice bakery note. Got the whole blueberry muffin profile right. Don't need to add anything. Tested at 3%
47.34
WF Crepe: Discussed in more depth last week. Slightly sweet, eggy. Nice citrus-y spice note. Very smooth. Probably wouldn't put maple syrup with it because of the citrus. Goes really well with VT Golden Syrup. Pretty tasty as a SF.
