As always, the purpose of this thread is to gather the community to explore a category of flavor and its many uses. And it's also to have FUN!
Post recipes containing this week's Flavor of the Week, as the star or in a supporting role, with or without development notes. Talk about other people's recipes that use it. Compare and contrast different manufacturers' versions of the FOTW. Ask for help using that flavor in general or to achieve something specific, offer advice, brainstorm ideas, consider substitutions, suggest pairings... really anything at all as long as it's on topic.
#This week, this is also where you can comment to win the the Beverage-Type Flavor Pack ($70 value!) from Flavorah.
This pack contains some of FLV's newest newest flavors: Juniper Gin, Back Bar Bitters, Brut Bubble Wine, Citrus Soda, Cola, and Tequila Agave. As well as these older offerings: Bourbon, Coffee, Eggnog, Elderflower, Horchata, Irish Cream, Mocha, Morning Mimosa, Raisin Rum, and Root Beer.

#This week's flavor is... FOTQ2 (New Hotness)!
Huh?
This is FOTW's second time to do FOTQ, after was requested months ago that we periodically set aside a week not for a single flavor profile, but for all the brand newly released flavors. So this is the week for the newest flavors just released between April 1 and June 30.
Personally, the only ones I have lined up are the 22(!) new flavors that have just been released by Wonder Flavours: Citrus Gummy Candy, Apple Gummy Candy, Portugese Egg Tart, Crumble Topping, Sweetener (Stevia 15%), Bread (Butter Toast), Kumquat, Grape Juice, Egg Yolk, Buttermilk, Raspberry Jelly Bean, Bread (Banana Nut), Corn Powder, Citrus Drink (Five Fruits), Bourbon (Aged Cream), Southern Sweet Tea, Philadelphia Butter Cake, Pineapple (Baked), WF Sugar Cookie, Amaretto, Tropical Gummy Candy, and Bread (Sweet). I'm very sure VSO has also had some very new releases, though I'm not sure which ones they are. And Chemnovatic might have some new ones as well, or at least flavors that are newly available for retail customers. What did I miss? Let us know! And if you've had a chance to try any of these new releases yet, please tell everyone what you think!
How did that get to be the FOTW?
It was requested!
>If you're not interested in the upcoming FOTWs, please take this opportunity and comment to request one that interests you (or send me a PM to do that).

I am really digging WF Crumble Topping, Apple Gummy Candy, and Raspberry Jelly Bean, but the Sugar Cookie is also pretty damned good. I need to write up notes on all of these...
Is the Crumble Topping actually a crumble topping? I’ve been trying to make a crumble for ages but the topping part always eludes me.
To my tastes, yes it is. From my notes:
> Very accurate, this is a mildly sweet (somewhere between confectioners' sugar and caramel) crumble topping with a tiny hint of spice.
Some info about the Sobucky Super Aromas (SSA): it’s a new flavorline of Sobucky, the polish company that also produces the Molinberry line and Moliq. They‘re partners with Chemnovatic and a very interesting company. They used to sell Inawera concentrates before they ended that partnership in 2014 due to the lack of professionalism on inaweras side and started to work on Molinberry with Chemnovatic. So most probably some good stuff in the Super Aromas line that was introduced on chefs today (75 flavorings afaik) at a really affordable price.
I bought a bunch of them from Chefs this morning before running out the door to school. Looking forward to trying them . . . thought it odd that in that massive bunch of flavors no vanilla custard.
They have the creme brûlée, they say it’s a vanilla custard with a caramelized sugar crust. Maybe that’ll work.
This is very interesting. Do you know if they will be available in the U.S.? Anyway, thank you for the info. ✌️
Out of all the new Wonder Flavors that I got, Egg Yolk is the best flavor and I can’t think of one thing to mix it with.
It sounds disgusting to me, but I'm less alarmed by the idea of vaping Egg Yolk than by how PINK the Butter Toast concentrate is.
I pulled that one out of the box and immediately thought it was something else. I don’t know what makes pink, maybe the butter they used, but it took a little self pep-talk to vape it.
I think the egg yolk might have a lot of potential, assuming it functions as I think it will, to add more weight and body to creams and custards that otherwise read a bit too thin. Maybe find use to help push an orange Julius or an eggy cream recipe over the proverbial hump.
I get your drift, I'm going to think about it as a thickener when I try it.
Probably one of the reasons I'm about icked out by the idea of it is that I made the mistake of ordering the FA Egg Yolk from Italy before and trying that.
I'm super excited to hear about the bourbon aged cream, egg yolk, and any/all of the CNV flavors that have recently come available.
For obvious reasons, I have an overwhelming interest in hearing about the CNV dragonfruit, though I suppose I could just mix up a tester myself.
I made Dico buy the egg yolk to test it. I think it’s polarizing, but I really liked it.
If it works like I think it should I think it's gonna be valuable as an enhancer for creams/custards to really add that eggy weight that sometimes goes missing
You won't hear about CNVs from me, at least not this week on Noted. I looked at that box of 22 WFs and was just done with ordering flavors for this. Hopefully someone will use this FOTW FOTQ thread to talk CNV with you.
I will say I sniffed all these WF's when mixing samples and the Bourbon Aged Cream made me go mmmmmmmmmmm
Yeah, when I saw the list initially that was the one flavor I kept staring down. It might be foul but it was the one flavor name that caught my eye and made me start thinking of ways to use that profile.
I want to hear want y'all have to say about the wf gummy and sweet tea flavors. Hopefully talk about egg yolk so my bf can stop wondering if it smells like farts lol.
I can’t wait to hear about the new WF line. I bought a few and to be honest was a bit disappointed with the couple I’ve tried so far.
The Baked Pineapple didn’t come across as baked and had a bit of an odd floral-ish quality. Like it had WF Honey smothered on it. It just didn’t seem to work with the pineapple. But it might be coverable or workable in certain mixes?
I was really excited for the Bourbon Aged Cream. I love the RF Aged Bourbon Cream and hoped it could be a good alternative. But it wasn’t as full or flavourful as RF and the Bourbon was a bit artificial and candy-ish. Maybe I didn’t try it high enough? I’ve seen a review by someone else who really liked it. Ive found a few WF that are pretty underwhelming as SFs but they work really well in mixes.
I’ve got a few other of the new WF left in my dauntingly big box of flavours to SFT. Hopefully there’s some that really blow me away.
I agree with you. I have loved so many of their flavors I was stoked to get this batch, I went all in and got all of them. I’ve heard people say crumble topping is good, I’m not sure I agree. Same with the sugar cookie, yet I loved the other two cookies I have, or is it three? I don’t know what they were doing in this last batch. It occurred to me they were giving us flavors that absolutely must be mixed together to enjoy. But some of them you have to get past the gawd awful smell, ie the corn powder, egg yolk and sour milk. I had hopes the corn wouldn’t smell like creamed corn, but it does, and ugh, yuck. The others that don’t smell straight up gross, at the % they recommend, I don’t taste a thing. Maybe I’m broken.. which is a possibility.. anyway, I look forward to Noted, and then your write up. Maybe you could throw in some of your interpretations of the various flavors. ✌️💛
Yep to everything you said! I got the corn powder too cos I was kinda hoping I’d be able to use it for things like making corn bread more corny. But I smelt it and put it to the back of the line for SFTing! I don’t really wanna vape creamed corn. Some others I tried were really light in flavour, even after steeping. I haven’t really experimented with %s or mixing them with other flavours though. But I have tried a few of their flavours in the past that I could barely taste, like their Fluffy White Cake and Angel Cake. I thought there may be something in them that just didn’t agree with me? Or maybe vapers tongue? The candy ones I got seem good though. I used the Apple Gummy Candy in mix and it worked pretty well. Have you SFT all the ones you got?
I’ve made samples of all of them. I just can’t bring myself to try the corn or egg yolk. When I tried the FA corn, same thing, but I forged ahead and tried it. And it’s creamed corn. I don’t know why I thought that was a good idea. WF fluffy white cake, I up that %, I don’t pay attention to what they recommend. I figured it was me, or my setup but the bakery ones need to go higher for me. I did try the buttermilk, and I liked it, well, I think it will work well in recipes. The mascarpone cheese from a previous release tastes like cheese, blue cheese, or something that’s gone bad. So I was afraid of the buttermilk. Honestly, it’s pretty good. (Not as a stand alone, but an ingredient in yogurt, or cheesecake, or to give a shortcake a twist) sugar cookie I can’t taste, in the same way I can’t taste the almond cookie, or the crumble topping. I am hoping on noted they can illuminate the secrets to the new released flavors. BTW, chefs has sobucky super aromas, I picked up nearly all of them. Are you getting them too?
PART 1:
Noted Ep. 164: Flavor Of The Quarter 2
(*Episode aired on 18/08/20)
(Ranked from worst to first)*
Emily's Bottom Three:
WF Egg Yolk SC: The egg isn't the most prominent note. What little there was tasted like the yolk of a hard boiled egg. Too creamy, more like Miracle Whip. Like mayonnaise, but a little more tangy and sweeter. The sweetness is off putting. Spoilt, funky note. Not dry. May have its uses, maybe if used really low in a custard or something. But even then the eggy-ness isn't the right type of eggy-ness for that. Don't know what application it would fit into. As a SF it's horrible. 7.50
Portuguese Egg Tart SC: The custard was too eggy for Emily. Slightly sweet, dark, spice note, lemony sweetness. ID10-T thought it was a moderately eggy custard with a fairly prominent lemon note. Not much bakery, just a little toastiness on the end. Seems more like the top of a baked custard. But not the flakey, buttery crust of a Portuguese egg tart. ID10-T thought it tasted great as a SF but not sure what to do with it. 11.35
WF Corn Powder SC: Will have some good uses in a mix, like bumping up OOO Corn Bread. But as a SF it's weird. It's dry and powdery. Not buttery or sweet like FA Corn. Just a bit of corn flavour. OOO Corn Bread is good, but a bit too soft. When it's cranked up it gets dry and good towards Fritos. WF didn't seem like it would go like Fritos as it's not got the AP like OOO. If you want buttery sweetcorn use FA Corn. For Cornflakes there's Cereal 27. ID10-T thought it could be used in conjunction with CAP Sugar Cookie to make a corn cookie. Like a sugar cookie made with a bit of corn flour. 14.30
ID10-T's Bottom Three:
WF Ameretto SC: At 3% and 1.5% ID10-T got mostly Ameretto, but with a bit of a vinyl, plastic off note. Not a lot, even at 3%, but won't tolerate any amount of shower curtain. Emily got a touch of vinyl but not much at all. 18.41
WF Southern Sweet Tea SC: Emily liked it. But thought it was a bit more earthy than sweet tea. ID10-T thought it was very earthy. Like some sort of heavily brown sugar glazed, slightly caramelized, roasted vegetable. It tree bark and brown sugar. Strong brown sugar note and strong earthiness and a hint of bitterness. Tasted like tea on the very finish. Could be really great in a tobacco? (Sam in the chat said he loves this flavour at 5%) Tested at 2%, 3% and 6%. 6% tasted the same as at 3%, just bolder and significantly sweeter. As it's a brown sugar sweetness it made it more brown. 19.37
WF Bread (Butter Toast) SC: The concentrate is alarmingly pink in colour. Doesn't taste like buttered toast. Very sweet. The sweetness is a darker, caramel-y type sweetness. Kind of like a bad caramel corn. A little butter. The butter is really nice. Weird roasted, not toasted, quality. 23.30
Cheeba's Bottom Three:
WF Citrus Drink (Five Fruits) SC: Emily liked it. Cheeba ranked it so low because he found it harsh. Although Emily and ID10-T didn't think it was especially harsh for citrus. But they both steeped it for a week. Cheeba only steeped it for 2-3 days. Tastes like Five Alive. Emily found pineapple to be the most prominent note. Comes in first, then get lemon-lime. ID10-T got mostly orange with lemon-lime behind it. Tastes like a mix of real citrus juice and Kool-aid, as does Five Alive. Very sweet. A little soft. Most of WF fruits are pretty punchy. Tested at 3% 25.29
WF Buttermilk SC: Potentially a very useful ingredient for mixing. Could be really great in a bakery. As a SF it's a very thick and smooth, very dairy, sour tang. Doesn't taste at all butiric. Like a butter flavoured drinkable yoghurt. Pretty accurate to buttermilk. Tastes almost identical to HS Ice Cream (not HS French Vanilla Ice Cream) so probably don't need WF if you already have that. Would work well in pancake and waffle mixes. 28.51
PART 2:
Noted Ep. 164: Flavour of the Quarter 2
Middle of the Road Flavours:
WF Bourbon Aged Cream SC: Nice dairy note. Thick, dark. A little woody. Has a bit if a boozy bite. Overall not bad. But there's better bourbons and better creams out there. Better to mix FLV Bourbon with your favourite vanilla cream. 32.57
WF Bread (Sweet) SC: A very useful ingredient. WF Glazed Donut tastes like the outer crust part of the donut. This is the rest of the donut. It's the fluffy, white innards. Not much fun as a SF. Very bland, slightly yeasty, sweet, bready. It's not that yeasty so could be used to fill in other things like French toast. 34.12
WF Raspberry Jelly Bean SC: Cheeba liked it. Thought the raspberry was pretty good. Had an OK gummy texture. ID10-T thought it was mostly a dark, sweet candy or jammy raspberry. But had an odd savoury element and a little funkiness, reminiscent of some currant flavours. Very deep candied raspberry, not floral or ketchup-y. Doesn't have the outer shell or the density or dense sweetness of a jelly bean. More like a jam. 37.03
WF Grape Juice SC: Sticky sweet, Kool-aid. Very candied grape. But not the artificial, purple flavour many grapes tend to be. Had some punch to it. A bit reminiscent of SC Grape, similar Blow Pop grape flavour. But not as sweet. Could be a pretty good Kool-aid with just some sweetener and some ice. 39.48
WF Citrus Gummy SC: Nice flavour, but the texture is lacking. Even thinner than the WF Citrus Drink. ID10-T found it a little harsh. Does the sugary coating on the citrus slice candies well. Very sweet. A good top note flavour. Not going to fill out a gummy recipe. 41.34
WF Bread Banana Nut: Discussed last week. Tastes like banana bread made with banana pudding, instead of banana. Not enough banana, it's very mellow and soft. What is there is artificial, but not Runts. Underwhelming. 43.40.
WF Sweetener (Stevia 15%): Effective if you want to use stevia as opposed to sucralose. Mostly flavourless. Will give sugar lips finish. Stevia can leave a bitter after taste that lingers for a long time. It is possible to use it low enough to avoid the bitterness. Tested at 3%. Way too much! 3% is maybe comparable in sweetness to around 1.5-2% CAP Super Sweet. But the bitter after taste is nasty at that %. 44.39
The non Stevia WF Sweetener is an abomination!
WF Pineapple Baked SC: A bit disappointing. Didn't have the dark, caramelised, cooked-ness. While it's not bright, it's not dark enough. Tastes warm rather than cooked. Like pineapple that has been warmed up, not baked. Musty, savoury note and a darker sweetness that makes it seem like it has a bit of a honey flavour in it. The mustiness is a bit distracting. It's almost floral, but not quite. They're using that darker sweetness to try to make it taste baked, but it doesn't work. Overall the flavour is soft, not bold enough. It's missing the concentrated sweetness baked pineapple has. Could be useful though as it's a more base-y pineapple. Doesn't have the sharp top notes. So could use to give another pineapple some body. It's not cooked enough to not fit into a beverage or fruit mix. Probably not capable of being the only pineapple if pineapple is a main note. Not bold or flavourful enough. Doesn't taste bad, but not accurate to the name. Tested at 3%. 3% seems too high. Maybe 1.5% to fill out another pineapple. 48.56
WF Apple Gummy SC: Not bad, but not a standout flavour like WF Strawberry or Blueberry Gummy Candy. Tastes like green apple rings candy. WF Sour Gummy also tastes like apple rings too. But Apple Gummy is much more accurate. It's sticky sweet and thick. Nice texture. The apple flavour is really nice. No nail polish remover or not grassy like a lot of green apple flavours can be. Could do with a little more tartness and brightness. The apple just needs to be bumped up a bit. It's a bit dull. But that could be fixed with something like WF Jolly Candy aka Green Hard Candy or CAP Green Apple Hard Candy. Or for more sourness a bit of FLV Sour Apple. WF Apple Gummy Candy and CAP GAHC could be a great combo for an apple rings candy mix. Use WF for the body and CAP to punch up the apple flavour. Then add a little FLV Sour Apple for extra sourness. A bit of sweetener. 54.12
WF Tropical Gummy Candy SC: One of Emily's favourites. Pretty yummy. Very clearly guava. Not as funky as some other guavas. But has enough funk to be authentic. Has a bit of a pink grapefruit citrus note. Very fresh tasting. Really nice syrupy thickness. Really thick. Bold, punchy flavour. Very sweet, sweeter than an actual guava. But no distinct gummy candy taste, but makes it more versatile. Could easily use it in something like a tropical punch. It's called Gummy Candy, but should be called Guava (or A Better Guava Than Our Other Guava!) Nice pink guava. Not like FLV Pink Guava that is very heavy on the pink grapefruit. WF isn't as funky either. Not like CAP Sweet Guava which is syrupy, more base-y and darker. WF is bright. Could work really nicely with WF Citrus Drink? 56.44
Top Flavours:
WF Kumquat SC: ID10-T's favourite of the week. Cheeba wanted a bit more flavour, but that may have been because it lacked some elements of authenticity? Needs to be a little brighter, tarter. ID10-T and Emily thought it had plenty of flavour. All tested at 3%. Cross between a lemon and a tangerine with a little touch of tropical funk. Tart. Lemon up front. Tangerine in the base with nice sweetness and earthiness, finishes like a blood orange. Very robust, has base-y, dark note like a blood orange while also having bright lemony top notes. Although it's really tasty it lacks authenticity. Not as bright, sharp or tangy as a kumquat is. They're pretty sour. ID10-T's initial idea was pairing it with coconut and rum in a tropical cocktail. Well balanced, it's not top or bottom heavy. Tested at 3% 53.09 and 1.00.10
WF Sugar Cookie SC: Too soft. Couldn't be the single cookie flavour in a mix where cookie is a main note. But it is yummy. Could use to boost another cookie or bakery. Would fit into many types of bakeries. Very sweet. Soft baked with a touch of vanilla. Nice butteriness. Tastes buttery but is not particularly rich. Kind of airy. Missing the gritty, crumbly, crunchy element. Very moist and soft. Tested at 3%. Use around 2% if using to accent another cookie or bakery 1.02.56
WF Brown Sugar Cookie tastes like ferrets!
WF Crumble Topping: Cheeba's favourite, ID10-T ranked it number 2. ID10-T and Cheeba thought it was pretty accurate to crumble topping. Emily thought it was not like a brown sugar cookie as it's not oat-y enough. Like the crumbs of a chocolate chip cookie, without the chocolate chips. ID10-T didn't find it that dark. People have used INW Biscuit or CAP Sugar Cookie in mixes for crumble topping. This would be a much better option if it sits on top of a mix. Nobody had used it in a mix. It's really buttery, sweet. Cheeba found it pretty oat-y. But Emily and ID10-T didn't. Nice crumbly texture. 1.05.00
WF Philadelphia Butter Cake SC: Emily's favourite. Very rich, buttery, cake-y. Really good yellow cake flavour, like a pound cake. Both Emily and ID10-T got a little sourness on the first puff. There's a little butiric in this flavour. ID10-T is sensitive to butiric, but it's subtle enough that it's only noticeable in the beginning of the first puff. Not offensive or bothersome. Could be the FW Yellow Cake killer. All the other yellow cake flavours don't have the buttery richness FW has. But WF has that. Only missing the crispy, outer edges of a cake, which FW does have. Definitely just the inside. The butter is really deep and base-y and much more prominent than in other cake flavours. Cake note very accurate. If you wanted to make a pound cake this would be a better option than FLV Pound Cake as it doesn't have the anise and coconut off notes FLV has. Tastes like something a recipe could be built around. But also seems like a small amount could be used to improve another cake flavour. Like WF Fluffy White Cake or PUR Simply Cake, or any cake really. 1.07.57

Portuguese Egg Tart SC: The custard was too eggy for Emily. Slightly sweet, dark, spice note, lemony sweetness. ID10-T thought it was a moderately eggy custard with a fairly prominent lemon note. Cheeba's Bottom Three:
WF Citrus Drink (Five Fruits) SC: Emily liked it. Cheeba ranked it so low because he found it harsh. Although Emily and ID10-T didn't think it was especially harsh for citrus. Would work well in pancake and waffle mixes. 28.51
Looking forward to hearing about citrus drink, southern sweet tea, sugar cookie and any cnv if anyone gets them, thanks!
how is corn powder, is it anything like a straight corn flavor without any butter or vanilla or whatever
from the notes here and the regional look of the other new wf flavors like eggtart and sweet bread, i suspect egg yolk is salted duck egg. need a sale or other excuse from bcf soon
I don't know what's new and what's not other than the ones mentioned here but I've tried the WF butter toast solo recently and I was a bit disappointed only because I had certain expectations. it tasted more like bread than toast to me.and WF Zapote, but I'm not sure if this is a new one.
I have WF Kumquat and egg yolk sitting in my shopping cart with their fingers crossed waiting for the results of this weeks episode =]
I’m sooo excited to hear your opinions on these new flavors. Yay for fotq! 💛✌️also, did you happen to see there’s new flavors on chefs? They are called Super Aroma’s. Have you heard of them?
I also noticed today Chef's new super aromas. Very curious about them.
Also, not to turn this into a WF solo discussion but what are some must have flavors of theirs that you've already tested?
I haven't tried any of the newest ones yet except Bread (Banana Nut), which was disappointing. You mean which ones that I've already tried ever?
Sure. Ever.
OK, so I went through all the WF I've tried (so far) and attempted to make a top 10 list, but it wound up being like 20. Then I thought about what "must have" means to me - it offers something that others just don't or is just that much better than the others. And came up with these: Strawberry (Baked), Crispy Wafer, Glazed Donut, Pixie Stick Candy, Candy Stick Candy, Sour Ball Candy, Chews Candy, Strawberry Gummy Candy, Blueberry Gummy Candy, Sour Blue Raspberry Candy, Sour Watermelon Candy, Fluffy White Cake, and Vanilla Ruyan Custard. I guess. There are quite a few other great ones but I wouldn't say you need them.
The awful ones are more memorable to me and so it's much easier to make a WF "avoid" list, which you didn't ask for, but here it is anyway: Strawberry Milk, Milk Caramel Candy, Champagne Soda, Dweeb Candy, Milk, Ripe Galia Melon, and Saskatoon Berries. I found all of these to be a special kind of awful.
I really want to try some of those new Wonder Flavors, but I'm on a self-imposed flavor ban against buying new flavors since I have too many waiting for me to SFT. I did recently get some CNV Passionfruit, which is new to Bullcity, so I will try to get that tested soon.
I guess CNV flavors count as "new" flavors as well?
CNV Lemon Cream Wafer sure is a delicious addition to my stash.
WF Bread (Butter Toast) is not .. It's like .. some moron baker made his first ever dough, and for some reason put way too much yeast in it - Then he dropped it on the floor, and tried to wash off the dirt in the sink - Turning this yeasty dough into a wet mess. Yuck
