Trying to nail a real cannoli (whine and stuff)

Hi everyone!

Cannoli is one of my favourite vape treats, but is also one my favourite desserts. Although cannoli recipes and e-liquids are great, real cannolis have some components that i'm missing in these liquids.

Some of these components are white wine ( or marsala), butter and salt, lemon and/or orange peel, and cocoa powder.

I've been doing tests, and for the butter and salt, tpa butter works well. but that's where the trouble starts, and I want to start with the biggest one:

The wine, oh god. The soft touch of wine in the dough is somehow remarkable in a good cannoli, but I don't know how to deal with this. Inspired by WF cannoli sheel flavour, I thought maybe some Anise like FA's could work, and it was a good attempt but I want to avoid that licorice at all cost. ¿Maybe some champagne would work? ¿Some spice lice clover?

For the citrus peel, I thought I'd use FA custard, but I'm not really convinced by that cheap pastry cream with lemon flavoring. I thought about using FA catalan cream, but maybe is too spicy for a cannoli. It also has cinnamon, which the cannoli could have, but I think it's a too aggressive and spicy cinnamon.

The cococa is not really remarkable in a cannoli but you know is there in some way. Just tried FA cocoa, but even at 0.1% becomes more overpowering than I'd like.

Also, some random idea for the "shell" part? having a little problem with the fried-non baked thing. trying WF cannoli shell, FA zeppola, FA joy, OOO powdered sugar, FA joker, VT/WF croissant, sugar cookie, INW/JF biscuit...

So here are a few thoughts:

I think FLV Pastry Zest could work pretty well here. Here is the review from Concrete River FLV Pastry Zest

For the wine note you could go with a champagne flavor or give FLV Moscato or Sangria (reviews by Concrete) a try but very low so it doesn't mess up the flavor profile

For fried (Non-Baked) check out FLV Fried Dough Or Donuts (Do NOT go above 0.25%)

Another flavor that could work well in this is either FLV Marshmallow Vanilla or OOO Marshmallow Vanilla

I do I do, those cannolis have a depth that gets lost, or left behind once it leaves the nyc area. It’s like trying to get a good bagel outside of the upper west side- (which is where I grew up). Can’t be done.

Silly, I didn’t skip a skip, I’m just closer 50% of the time than the hop skip and a jump it is to Connecticut... my dad is 92, his wife passed away a few months back, and his aide came down with the virus, so I stay over 3 nights a week to break up the silence, and you know take care of him. Hopefully, soon, his aide will return and I can go back to two nights a week. 💛✌️

This looks like a typo, for citrus peel I'd try INW Shisha Orange or INW Shisha Lemon.

FA Custard Premium does not have lemon in it, or citrus, from my experience. You get citrus peel from FA Custard Premium? Am I Tripping?

Nope, you're right, it's the non-premium custard that tastes like lemon, I wrote custard premium by inertia

The one I made at home is:

Filling:
(16-oz.) container ricotta 
1/2 c. mascarpone cheese (sicilians usually use just the ricotta)
1/2 c. powdered sugar
1 c. heavy cream 
1 tsp. pure vanilla extract
1 tsp. orange and lemon zest
1/4 tsp. salt

Shell:
2 c. flour
1/4 c. granulated sugar
1 tsp. salt
1/2 tsp. cinnamon (that one is very optional, but sicilians usually put in, and I like a lot)
4 tbsp. butter
6 tbsp. marsala (you can use white wine if not having marsala)
1 egg

but the most important thing is frying that in extra virgin olive oil

oh my gosh, I feel so embarrased.

I don't know if wadeyloops is here, but his recipe is the one I enjoy the most, I find the VT cheesecake/FLV fronsting/VT creme brulee a really smart and effective option.

FE Goji Berry stand-alone has a definite wine aspect. Undoubtedly. The whole profile mostly tastes like Ocean Spray cranberry, and I considered the wine to be an off note. Unless that's what you're looking for. I've used it in a an orange cranberry cookie recipe recently with good results. It would be worth a try. I definitely get the hint of it I was looking for in the cookie. If I bump up the % I have no doubt it would be a wine-y cookie.

Not sure about other brand's Goji Berry flavors. I've also never noticed the wine flavor in a cannoli shell, but that probably means I haven't had the authentic cannolis you're talking about.

The zest part is something else I was going for in the orange cranberry cookie. I used INW Shisha Orange, but I'm not the biggest fan of that flavor. I know it has a lot of love around here. It's a good orange, but I don't get zest out of it. I'm still looking for a true orange zest.

Lemon zest, on the other hand, is something I know. I've used INW Lemon Mix for this definitely. It's been discontinued as far as I know, however. I've also used CAP Lemon Meringue Pie with a touch of FE Lemon as a bakery zest. The Lemon Meringue Pie isn't the zesty part, but it adds depth and density and a little lemon so you use less FE Lemon for the actual zest. And you can never go wrong with the zest of FA Lemon Sicily at the right %s. That one is a tricky flavor for me. It goes 0 to 100 real quick.

Thank you very much for your extended answer! indeed gonna try the FE Goji Berry in a berry-covered version. Shisha orange and me are not good friends due to the oil film that does not dissolve and remains on the surface of the liquid. Sicily comes quickly for muddled to overpowering, but that lemon meringue pie is something really interesting I've not thought about before

Hi. It all sounds lovely, but I‘m thinking it‘s much too complex for a vape recipe. In my opinion, food recipes need to be simplified in order to translate to a vape. If it’s too complex, it usually gets muddled. Not sure if it’s been mentioned, but I believe HC Eggroll is supposed to be an excellent cannoli shell. Good luck!

I know man, the main profile is going to be powdered sugar/fried pastry and cheesecake/cream, marsala and citrics are going to be just slight nuances. Going to give a try to HC eggroll, thank you very much!

True Italian cannoli cream is made of ricotta cheese, vanilla extract and sugar that's it. True Italians put in citron cubes and crushed pistachios while it's more of the Italian Americans that put in mini Chocolate Chips. It's not really as complex as people make it out to be.

yeah, the cheese thing is a headache, is not the same but but I've done that part with cheesecake and diary notes and is a little bit pleasant imo. Sicilians also usually add lemon and/or orange zest to the cream

PD: the cocoa part I was meaning was the powdered cocoa sicilians usually put in the shell dough

Think about what you taste when it comes to desserts, or anything for that matter, don't get confused by "ingredients". Think about marshmallow for example, is marshmallow anything other than sweetness and a little vanilla possibly? Isn't marshmallow more of a texture as it is a taste?
