I've been rushing the DIY process and not following exact recipes. I've made a few to standard, but really only 1 that's really popular. I went after a cheesecake with this one, and I tried 3 strawberry's as a fruit base. It's still lacking and I'm wondering what else I can do to make it a bit more cheesy. Here is the recipe I have so far, it's good and maybe it just needs a steep, but it's missing that twang I'm after.

I would reduce strawberry ripe more in line with the other strawberries.

If it's twang you're after, these won't give it to you. You've already got INW Cheesecake and LA Cream Cheese Icing. Maybe also try lemon, lime, Greek yogurt, WF Sour Ball Candy.
I'd bring down the Strawberry Ripe to 3% or replace altogether, especially if you're a strawberry "non taster". If you are.. Go for RF Strawberry instead at 2-2.5%. If you are looking for a more bright strawberry with a bit of tang I'd try INW Shisha Strawberry instead of the CAP in addition to the RF Strawberry.
I'm not sure how you could make this more cheesy as the Cream Cheese Icing should be one of the best for this, but maybe a yogurt in combination with INW Shisha Strawberry can help for that aspect. NY Cheesecake would make it more buttery I think.
INW Cheesecake is an excellent pick, but I don't think 4% is necessary here. I'd go for 2-2.5% max since you are also using Graham Crust.
Noted on the strawberry part. I think the cheesecake at the percent used is actually pretty decent, but it could be lowered. I see what you are thinking with the yogurt, I actually mixed up addys yogurt tonight and fooled around with it a bit more later. I actually just messed around and made another juice tonight and it turned out pretty good, although I used a bit much of the yogurt. Downside is that has a bit of a sour note. This is just my thinking but maybe I used the cream cheese icing to low, I'm really just getting the frosting more than anything. I find INW cheesecake really strong so I never really use more than 2% in a cheesecake mix.
Addy's Yogurt is indeed pretty sour, but he used the yogurt at 8%. It was designed when atomizers were not as powerful and flavorful as what we have now. Some are still good to date, but beware of those old recipes! If you start with maybe 4% in your recipe it could add the tang that you are looking for.
Maybe someone else can comment on the use of the Cream Cheese, I have no experience with it (yet). Just keep experimenting with the %'s in small batches and you will get it where you want it to be sooner or later.
I haven't really gotten into Blueberry's yet either, might give it a go in the near future.

Another popular varient is going with lemons. I've never eaten a lemon custard in real life but apparently many people love it

Never noticed that red velvetyness but you're so right! I've always wondered what sets the chocolate flavor in red velvet apart from other chocolate flavors. Good notes
Red Velvet cake is just chocolate cake with red food coloring, and coated heavily in cream cheese icing. And layers separated by cream cheese icing. Which is enough to make it the second best type of chocolate cake (behind German chocolate cake). Then Black Forest, because of the cherries. Maybe if someone did a lava cake with marzipan topping, that could be in third...
As mentioned earlier I would go for the trinities. Not only for the cheesecake but probably try the strawberry trinity too which can be varied in percentage to fit your personal taste. Strawberry ripe 3%, Shisha Strawberry 2%, Red Touch 1% or lower the SB ripe and up the Shisha SB or the Red Touch. You could try to add a tiny bit of Greek or Creamy Yoghurt for the twang. I think Wayne did that when he first tried Yes We Cheesecake (he also used Strawberry, there's a YouTube video you could watch)
You may want to try some HS Italian cream. And get rid of the strawberries.

what % of HS Italian cream would you add to the trinity
i would start at 3% cap nycc, and 1% HS Italian cream. Then either INW YWCC or TFA CCGC depending on where I was going with it.
Then probably 2% INW cherries in liqueur and 2% GL cherry and 1% FA Marzipan to make it a good cheesecake (ie one with cherries instead of some hideous thing that would ruin it). Or maybe I'd go with 3% TFA Irish cream and 1% FLV Creme de Menthe for the boozy cheesecake.
