Longan is one of the fruits I crave ever so often and I was thinking of developing a recipe with it. My brief search yielded nothing. Are there any good longan flavors out there? I really dont want to test every lychee and hope one is close. I'm also thinking about durian but I'm expecting that to be disastrous.
Lychee Notes
HS Lychee - Moldy Welch’s white grape juice filtered through dryer sheets. So this is identifiable as a lychee flavor, but at the same time, all kinds of horrible. Where there should be a little funky tropical ripeness, it tastes like rot. Where there should be a subtle rosy floral, there’s a mouthful of laundry room. It’s sweet and has a deep, thick body, but where there should be a little citrusy tartness, there’s the taste of the same kind of citrusy note in INW Cactus and a disproportionate amount of harshness.
Amoretti Lychee - VG-based flavor. 4% is not enough for a single flavor, or a week isn’t a long enough steep for it, but I don’t really want to try it higher or after a longer steep, because even with the light flavor here, there’s a savory almost meaty hint and an oily mouthfeel. Like lightly floral grapey fruit lightly spritzed with hot dog sweat. It’s possible that steeps out or gets overtaken by a great lychee flavor at a higher concentration but I don’t have a super high hope for that.
Amoretti Guarana - PG-based flavor. Interesting, unique flavor. Kind of tastes like drinking a mixture of cola and apple juice while chewing pink bubble gum. A little bit tart, citrusy, and kind of spicy at first, but a deep, caramellly sweet flavor with some apple-like fruitiness along with that bubblegum taste and a smooth finish.
HC Litchi - There might be a sweet spot for this somewhere between 1 and 2%, but I wasn’t satisfied with the light amount of flavor I was getting from it at 1%, so I bumped it up to a little over 2% and got white grape jelly thoroughly mixed with a slightly chemical perfumey hair-sprayish floral. One thing that sets it apart from the others is the way it vapes, where instead of leading with floral and then finishing fruitier, it’s pretty consistent throughout the exhale. I wish one did that without but with a more natural-tasting floral note.
HS Longan - A better lychee than HS lychee, but kinda weird? It’s supposed to taste like a muskier lychee, as best I can tell from a quick googling, but it actually tastes like lychee plus an almond-like nuttiness. You get that rosy floral upfront, but the rest is a nearly an almond butter and white grape jelly sandwich without the bread, but thinner and more syrupy than that would be. It’s a sweet and syrupy flavor overall, though the floral is a bit on the dry side. I feel like mixing this with orange and some kind of booze might be a shortcut to a mai tai, but OoO has a Mai Tai flavor that just needs the booze, so something to do with this is isn’t jumping right out at me.
Hi Liq Red Lychee - Does not taste like a lycee. There’s a little bit of fruity tartness in there, but aside from that, the closest flavor I’ve tried to this is HS Watermelon, which bizarrely tastes more like sweetened rosewater than watermelon. Nothing offensive, just not what I was expecting at all. In the bottle it smells as much like lychee as any of the other lychee flavors, maybe a little more berry-like, when vaped it’s a full-bodied rosy floral with just a bit of sweet-tart fruitiness to it.
FA Lychee - I’ve had a recipe where 0.25% of this reinforced another lychee and it was fine, but by itself at 1% this is stupid floral, pushing up on dryer sheets. And also a bit thin and dry. It’s barely recognizable as a lychee. Maybe this is what real fresh lychee tastes like? I hope not though. If you told me it was a rose flavor I might believe you. The floral is rough and the base note that should taste like grapes with maybe hits of grapefruit and pear, tastes more like grape skins without the sweeter, more mellow, juicier body, and there’s a weird chemical off note here and it’s a little harsh.
FLV Lychee - Way floral, tastes as much like a flower as a fruit. There is a sticky sweet syrupy sort of accurate white grapey base with a hint of tartness that does taste like a lychee, but the floral edge on it comes out swinging and is intense. It’s also off. White the other lychee flavors and actual lychee have a floral note that tastes kind of like a rose, this is more like some kind of mutant rose-elderflower thing. I actually like this flavor a lot, but I like florals. This does not taste like something someone who doesn’t like florals could enjoy, which isn’t true of all the lychees, I think.
TFA Lychee - Passable but flawed lychee flavor. The floral part is too pronounced for candy, but the base tastes and feels like a combination of a bunch of lychee gummies and a few peach rings. It’s very thick and full, mouth coating and lingering. But the lychee and peach gummies are weird with flowers on top. Maybe that floral business is accurate for a fresh lychee - I don’t know, never had one - but it does work so well with that candy base. It also tastes a little too rosy, more rosy than the floral note in a canned lychee. A fresh one, maybe, not sure.
CAP Sweet Lychee - This is a good fuckin flavor, and also probably the most versitle lychee flavor I’ve tried. It tastes like canned lychee, sweet and syrupy, with an appropriate, subtle, rose-like taste upfront, followed a base that tastes like a slightly funky tropical white grape with a hint of grapefruit-like citrus, except this is a little more like funky white grape jelly, it’s so thick and syrupy sweet. Probably the most approachable, maybe most versatile lychee.
Seems like the perfect lychee for something like a lychee slush drink like you might get a boba place, but with the right mixing things you could probably sell it as real canned lychee.
FE Lychee - This is actually my favorite lychee. I’ve had a lychee hard candy from Taiwan that I’m certain was made out of this. The flavor was identical. Very subtle rosy floral upfront, sugary sweet flatter more artificial base with a subtle funky ripeness to that white grape plus grapefruit tartness that lychee does. Strong, punchy flavor. I’m not sure if there’s actually some hard candy body here or if it’s just my mind playing tricks on me because of how much this tastes like that lychee candy. But it’s even sweeter than more syrupy flavors. Drier floral at first, but overall mouthwatering. Very bold, full flavored. This would probably be my go to for any candy lychee or to sweeten another lychee.
People say RFSC Lychee is the best one, but I haven't tried that one yet.
How similar would you say longan is to lychee?
Reading seems to indicate they're a little more tart but otherwise quite similar, is that accurate?
That's a tough one. I even asked my mom who's Vietnamese and knows them well and even she struggled to put it into words. We both agreed that they are about as similar as they are different. We also much prefer Longans. She described lychee as more earthy. They are equally earthy to me but in different ways. For me, longans have more of a bold flavor. They have a unique but mild twang, closer to spicy than tart.
I stopped by the market to see if I could get both and they only had rambutan. Figures....
/u/sizzmo1 are you developing for commercial? We never get requests for longan, but you could work around it with some soursops and lychee maybe? Maybe at least send a note to our customer service and if we are doing dev in a future release, bryson could put you on the feedback list for that flavor to help tune it in.
Durian. Stuff is so bad it is illegal! I will never understand that flavor... and there would never be a way to make money on it since the usage rate is about .000001% but to each his own.

This is just for myself. I am writing some software which will generate recipes for me using genetic algorithms. A more varying and wider range of flavors could yield some more interesting combinations. Which is why I was thinking durian. I agree, the ROI on durian may be a very long time. I think it could make some interesting pastries though.
Fortunately, it looks like everything else on my list is available, even persimmon which surprised me.
