Fresh strawberry will fade if left to breathe, and I often suspect that this is true with other fresh fruits but candied fruits are a different story. I hope your not just using flavorings from a supermarket that contain alot of alcohol, their generally no good. If you just want to pick up something local for convenience, craft stores that carry baking goods often have some known brands like capella or Lorann, you just gotta know what to get. Avoid Wilson's flavorings except for their custard. wilsons is big in these type of stores in Canada.

Steeping confuses me too cuz I made some with baked cinnamon and cream from liquid Barn last week and I read that disert type flavors have to steep for up to 4 weeks but I can't taste fruit much rn so I tried it after only like 5 days and it tastes just like a cinnamon roll. I'm also sceptical about leaving the top off for a long time while steeping especially if it's for weeks at a time because alcohol evaporates really fast so for the most part so all the flavor will go right out the top too. But I have very little experience diy , I am new to this myself.
