From the username i assume youre german. I know you use a type of yoghurt named quark. Im struggling to find that one in greece cause i tasted it in germany and it was AMAZING in a kaesekuchen. If fw yoghurt replicates this im all about getting it on my next order. Thanks for the tip!

Quark is actually a type of soft cheese, though often marketed as a high protein yogurt it's not. Possible similar flavours you could find are. Cottage cheese (similar flavour different texture) paneer, fromage blanc , ricotta.

Dairy milk and also meringue have this effect. Try NY cheesecake paired with capella custard and the first two I mentioned instead of using yogurt lol.

I've read that a Hangsen flavor is also good for that. Italian Cream or something... Their cream flavors can really thicken things up too.

I have Hangsens Italien Cream. It's really good to ticken Mixes, or make them Creamy. But for the cheesy taste self, it cant help.

Yes, to thicken up its perfect, but not to give that typical sour note.
