I love VT's Bilberry Ripe because it's not earthy tasting to me like other Bilberry flavors I've tried. To me the Bilberry in this Blueberry Jam has a very distinct taste; it's good, and different.

VT Bilberry Ripe is a terribly named flavor to my taste. It tastes like a great blueberry jam flavor. I don’t know what Bilberry actually tastes like but I think it’s supposed to be early, like you say.

I haven't had a bilberry IRL either, so I'm not positive if they are supposed to be "earthy", but from the Bilberry concentrates I've tried, that seems to be a trend. However, from what I've read online, Bilberry is "...more acidic in taste and shines when cooked with sugar to make things like jam because it will be more intensely flavoured than blueberries..."

Then, you add to the mix the blue colored Huckleberry which is supposed to taste very close to Blueberry but sweeter (also used in Jam making). And then you have Black Currant and Elderberry, which are described as having a sweet earthy taste and when cooked (ex.jam making) are dark, rich, and flavorful. So all these darker cooked* "Blueberry" flavors to me will share qualities or lean toward either a Blueberry, Huckleberry, Bilberry, Black Currant or Elderberry. Choosing which one of these to label next to a flavor like this...was difficult.

I usually combine IW Bilberry w/ IW blueberry... its very similar to the blend used in Bluebird, i don't think i ever released Blue Meanie

Yeah, shisha bilberry. IIRC shisha bilberry is the smooth mellow blueberry, IW blueberry is the... tarter more detailed notes?
