It's About Thyme Herbs were flavor of the week again
submitted almost 7 years ago by ID10-TWinner of the 2nd DIYorDIE World Mixing Championship

As always, the purpose of this thread is to gather the community to explore a category of flavor and its many uses. And it's also to have FUN!

Post recipes containing this week's Flavor of the Week, as the star or in a supporting role, with or without development notes. Talk about other people's recipes that use it. Compare and contrast different manufacturers' versions of the FOTW. Ask for help using that flavor in general or to achieve something specific, offer advice, brainstorm ideas, consider substitutions, suggest pairings... really anything at all as long as it's on topic.

#This week's flavor is... HERBS!!!

How did that get to be the FOTW?

It was requested. If you're not interested in this FOTW, please take this opportunity and comment to request one that interests you (or send me a PM to do that).

Past FOTW posts can be found here

The NOTED podcasts, which are bascially video FOTWs, are listed on this sheet, maintained by /u/apexified

That is some sage advice. If you've got more, keep it cumin!

Although I have a lot of these, the only ones I've used so far are Shisha Rosemary (just a brilliant strong rosemary) and Zen Garden (this can be a single flavor, though I go back and forth on it. I want it to be more-ish, but my percentages may be too low on it and I should retest. It's basil plus...stuff, it's complex and hard for me to pin down, perhaps slightly odd. Those qualities keep the interest though. I think it will go beautifully with FLV Basil which I plan to buy next month, and I also think it could be amazing with strawberries or.... carrot if raw and sweet. Sweet plants of any type, fruit or veg, I would try with it).

I'd love to see dandelion and burdock, they're almost herby.

There's a ancient beer recipe (from before the time hops were discovered as a preservative) that involved dandelion, burdock, and a few others... I think horehound, maybe? Its been a while.

Wiki says sassafrass and wintergreen.

Reading on though, this belongs in Root Beer week more.

Nah.. I remember seeing the beer in question. Was marketed as following recipe from some old German monastery. Listed ingredients, and the two you named weren't there. The other ones were florals of some sort iirc

Cardamom please

I've been wanting to try this

FA Cardamom is extremely realistic and extremely strong. Really good flavor. Not a single flavor flavor. Needs something to be a base behind it. Works amazingly well with apricot, peach, rice, and probably would be fine on its own with cream or certainly vanilla cream. I haven't tried them but I bet pear and apple would work well with it too.

FA Cardamom is pure bliss. It's been a while since I closed my e-liquid buisiness and I haven't shared any recipes yet but here's one:

Cardamalmond / Fyrstekake (Sold it under another name, these are what I referred to it as):

  • 4.4% FA Almond
  • 0.6% FA Caramel
  • 1% FA Cardamom
  • 1.2% FA Custard Pi
  • 2.4% FA Marzipan
  • 1% Nonna's Cake
  • 0.2% Torrone

Notes:

This uses a very high percentage of Marzipan and a fairly high percentage of Almond. They can both be easily hidden behind the Cardamom and you want it taking center stage.

The recipes based on the Nordic cake "Fyrstekake", a kind of tart cake that uses almond and cardamom. I had a really hard time emulating the cake elements of this recipe so I gave up entirely and started pushing towards a pure sweet cardamom and almond flavour, focusing on the fundamentals rather than blurring the lines with excess background.

Having said that I've left Nonna's cake in (simply because that's what was in it when I started selling it) which you can omit without much of a difference. I feel the custard pi smooths it while adding a slight cake depth that really adds to the recipe.

I tried a LOT of variations, adding things like nut mix, various pryazine mixes, sweeteners (sucrolose, EM), smoothers (MTS), creams (all FA and a few other popular ones) and I feel this is the best mix.

One thing I failed to fully perfect is a mixture with Catalan cream. The spiced cream really added something but took away from the cardamom/almond combo. I should revisit that sometime to see if I can make something of it.

I'd like to be able to do something like Kheer from 2OHM6

It sounds so good but I can't bring myself to spend $40+ on a bottle

FYI cardamom is a spice, not an herb.

Brand new mixer, gimme hell! First two attempts are still steeping (both are fruity/a little floral). Does anyone have a good clove cigarette recipe? I miss them and part of the reason I got into DIY was because I couldn't find any good clove tobacco flavors. If it's relevant, I used to smoke Djarum clove little cigars.

The line between "herbs" and "spices" is pretty blurry but I think clove clearly crosses it.

But regardless of its relevance to the Flavor of the Week, here you go: https://alltheflavors.com/recipes/44355#klove_by_cheebasteeba

That recipe is a great clove cigarette. Clove can really stick in your atomizer but it's worth it. Also you can take that native up to around 2.5% and it's still good there.

Totally fair! I saw one clove pun and went for it haha. Thank you for the recipe, I'll have to give it a try!

Clove may not be a herb, but clover is... is there a clover flavor? (I ask because it actually would be useful in a few mixes. Especially a ale-based one.)

Not quite a clove cigarette, but an excellent spiced tobacco as well: https://alltheflavors.com/recipes/57961#dune_an_arrakis_remix_by_kindground

Posting this again Sonoma Redux . . . I just finished another 30mL of this mix.

Rationale behind the marriage of rosemary, vanilla, and lemon: From time to time, my wife will simmer a pot of vanilla extract, slices of lemons, and sprigs of rosemary with water to scent the house. It is a delicious smelling aroma . . . and apparently, one of the scents that Williams-Sonoma uses to scent their stores (hence the name). I've always been enthralled by the scent and thought it might make for an interesting vape. Recently, she bought a cool mist aromatherapy diffuser and got amber vanilla, lemon, and rosemary scents to use in it. I found myself drawn to it. The amber vanilla added an almost bakery type aroma to the mixture, and I decided to get some rosemary concentrate to try my hand at this flavor. I got into DIY to scratch the itch for flavors that I could not readily buy . . . and this is something I've been wanting to try for quite some time.

I wanted vanilla to be dominant with lemon and rosemary falling in line behind it. This was not originally intended to be a custard, but I felt lacking the body of a custard really affected this and made it fall flat rather quickly. I knew I wanted it to have that same full-bodied flavor that I was getting from the aroma, so it needed that thick mouth-feel that only a custard can provide. This also helped add to the richness that I was getting from the aroma my wife concocts . . . when she boils water, lemons, rosemary, and vanilla, the scents come together to equal something much greater than the sum of their parts (I suspect it is due to the ingredients slowly cooking in the simmering pot).

The remix:

Variations on a theme. This is a remix of my first shared recipe. This mix seems much more cohesive with flavors layering and settling in together instead of on top of one another. The lemon is a bit more prominent with the rosemary blending in and acting as an earthy accent. This is perfectly sweet without any added sweetener. All in all, I feel like this mix better represents the original scent that inspired it. I used Wayne's combination of FW Butter Cream and French Vanilla with TFA Meringue from his Maple Vanilla. I kept Holy Vanilla and Shisha Rosemary from the original recipe. I used FE Lemon and INW Lemon Cake for the lemon layer and used FA Custard Premium for the custard layer. I used OOO Vanilla Marshmallow to blend the layers together and for its extra hint of vanilla and mouthfeel.

| Company | Flavor | % | |:-------:|:---------------------:|:---:| | FW | Butter Cream | 2 | | FW | French Vanilla | 1.5 | | INW | Shisha Rosemary | 1.5 | | INW | Lemon Cake | 2 | | FE | Lemon | 1 | | FA | Custard Premium | 3 | | DIYFS | Holy Vanilla | 1.5 | | TFA | Meringue | 1.5 | | OOO | Marshmallow - Vanilla | 1 |

Edit . . . struggling with the formatting

Although I haven’t tried this recipe, the earlier version definitively proved that Shisha Rosemary is an awesome ingredient

Is there a cilantro concentrate? Anyone tried it? Does it taste like soap?
