Alfred's Pudding

Alright everyone, here it is. I should have considered that a name like Alfred Pudding would make me responsible for an awesome pudding recipe. So, after a depressingly large amount of trial and error and countless testers, I am finally ready to share my latest creation. I owe u/ConcreteRiver a gargantuan thank you for helping me get this thing figured out. Had it not been for his wisdom, I probably would have ran out of FLV Vanilla Pudding before I was satisfied. This recipe is functional as a shake and vape, but you will get more of the INW Custard and it gets better around day 5. Let's get into the recipe:

After trying out numerous vanilla flavorings (i.e., INW Shisha Vanilla, TPA Vanilla Swirl, FA Madagascar), I was still unhappy with the results. I wanted something to bring some serious depth to the vanilla from FLV Vanilla Pudding, without altering the texture that was already there. This is the first place that u/ConcreteRiver really helped me out. He recommended that I look into FA Bourbon (Vanilla) and FLV Vanilla Bean to bring authenticity without altering the mouthfeel. I ordered both of them immediately, and initially planned on using both in this recipe. I tested out FLV Vanilla Bean first, but it didn't bring the dark and spicy vanilla note that I was searching for. So I added in Bourbon and worked my way up to where I was happy. However, my suspicion (that was corroborated by Concrete) was that the FLV Vanilla Bean was just getting lost, and it wasn't necessary.

INW Custard was in my original recipe, however it was removed early on because I found it was bringing too much egg where I had it, and I wasn't sure it was the flavor I wanted. I went through about 5 iterations before I decided to try it again a bit lower. Pudding does have trace amounts of egg, and FLV Vanilla Pudding wasn't bringing that to the table. At this level, I think it blends into the profile enough that you probably wouldn't realize it's there without reading the recipe and adding it yourself.

VT Golden Syrup was here from the very beginning of the process. It is an awesome flavor, and I wanted to use it for adding sweetness and nuance to the pudding. It started out at .5% and kept going up with every variation to the point it sits at now. The flavor is what I imagine happens to sugar used in a pudding recipe while it's cooked. It's not dark enough to be a caramel, but enough to add some delicious complexity to the mix.

FLV Sweet Coconut is the second piece of Concrete wisdom that saved me a lot of headache. I wanted to add some buttery richness to the pudding, and went through many ideas before getting this right. I started out with TPA Butter, but quickly learned that people can get pepper out of it, so that was tossed out the window. The next idea was FA Butter, but frankly I'm not willing to order directly from FA to get it and I'm sure many others share this sentiment. Then I moved onto CAP Butter Cream, which at every level was turning my pudding into waxy frosting. Finally, after seeking guidance from someone with more knowledge than myself, I learned FLV Sweet Coconut can bring out some richness from a profile, and it worked perfectly.

Lastly, FLV Vanilla Pudding is the star of the recipe. When I first tested this flavor I honestly wasn't a big fan. However, after trying it out in other peoples' creations, I came around and embraced it. My opposition was most likely a symptom of expecting only excellence from a fellow pudding, and focusing on the flaws instead of the strengths. This flavor has an outstanding texture, and it is incredibly versatile in bakery and dessert recipes.

So that's it, my pudding is officially ready for consumption.

It really is great. Reminds me of something we used to get as a kid called Golden Eagle or to a lesser extent the Alaga. They are only sold in the SE AFAIK so you might not be able to find them in stores.

You've been hyping this up for a while and it's finally here :-) It looks good. Like I said on ATF I need to pick up the Golden Syrup and I'll mix it up.

I have a few thoughts and questions about the different iterations and notes or advice that you got. I'll edit this post as I have to finish up my order real quick at chefs (25% off which ends soon) and then I'll post.

But one of them is if since I'm picking it up is Devon Cream (CCF/Cup Cake World) not VT's if you tried it in this mix? Devon and INW Custard are a bit similar and maybe like you I don't like an eggy note and low on butter. Also if you tried VT's Pudding Base with it?

BTW: The holy grail of Pudding is GF Vanilla Pudding which has almost no eggy or butter notes due to no diketones yet somehow pulls it off perfectly. That's probably the only flavor to get from them too so they pulled a rabbit out of their hat.

Thanks for reading! I love CC Devon Cream, and tried it in this recipe fairly early. However, like many of the flavors I tried, it altered the texture too much for my goal. VT Pudding Base is more of a bread pudding flavoring from what I’ve gathered. So I would imagine it would cause problems similar to some of the others I ran into.

I did try VT Milkshake Base to accent the wetness (Concrete Recommendation), but it didn’t work either. Finally, while I’m sure that GF Vanilla Pudding is awesome, I’m not sure how many people have it. I tried to weigh accessibility into my creation without sacrificing quality. I’ll make sure to pick that flavor up in the future though!

I've been working with FLV pudding too trying to unlock it like you've been doing as it's just FLV Vanilla Custard without the Custard notes. But the Pudding imo has massive potential to make some amazing mixes. I have tons of iterations of it with FLV Creme de menthe with it and it's amazing. Then I use your basic FLV Cream and OOO Milky Undertone for the cream/milk. For the fruit I use Raspberry's then work it with Ice creams and obviously Banana mixes. I go in a different also direction using DV Absinthe & Anise and mints.

I have too many damn iterations that's almost laughable but I'm trying to get one that's perfect which it looks like you possibly did. You went in a totally different direction than I did and it looks tremendous and it got me thinking. I like it because it's unique and not a lot of mixes will make me sit down and spend time to analyze it and do research because 90% of mixes all basically cookie cutters that you've seen a million times. I'm not into the floral or off the wall like so many do now on ATF but this one has a basic normal profile but different than others so props on that.

I still need to order but thanks for the info as it looks like you truly did this proper. I have INW custard too and I'll mix it up and do other iterations on top of it like MB Milkshake since you went that route and VT Banana custard.

In my head I think subbing out the rich INW Custard with something that's very little eggy/butter notes which is hard to find but I think that is how to truly unlock the Pudding. Plus I'm so damn sick of all the eggy/butter notes with almost every single flavor now days with all the companies doing it.

I'm thinking WF Tahitian Vanilla Cream, FLV Whipped Cream. Dave did a creamy Marshmallow combo too with FLV whipped Cream - FLV Marshmallow - FA Marshmallow.

I'll pick up some flavors if you have any suggestions of flavors you don't have let me know and I'll pick up as I need to order within a few hours through chefs.

A lot of people say that INW Custard on it’s own will steep out into more of a light pudding base than a custard, I find it a bit too eggy over 1% but that could be a start. You could also use a cream flavor that you enjoy with a bit of FA Candy/Jammy Wizard from what I’ve gathered. I haven’t tested it thoroughly enough to guarantee it will be what you are looking for, but if you’re adding a fruit or something to your base it might blend with the fruitiness of the Candy/Jammy Wizard and give you the texture.

I wasn't happy with it. I made a recipe that actually tasted like vanilla pudding, but I lost it before I could upload. Hopefully someone else can figure it out.
