Cheesecake Help!

So I have been working on a strawberry cheesecake for a friend for quite some time and I can't really seem to nail it. I've swapped out ingredients many times, properly steeped, and nothing is quite hitting the mark. The original recipe I started with was

V1

Ny cheesecake Cap 5% (the 1% flv cheesecake is better here imo)

Cheesecake gc TFA 2.5%

Italian cream hs 1.25%

Strawberry shisha 3%

Sweet strawberry jf 1.5%

Strawberry fa 0.75%

After a month this was just okay. No big time cheesy notes and and the strawberry didn't really come through much even though it heavily smells of strawberry. I decided to swap out the NY cheesecake for cheesecake flv @ 1%. This was a welcome change, things we're moving in the right direction. But something was still missing. Then at the suggestion of a user I swapped out cheesecake GC TFA for ooo vanilla custard cheesecake @ 2%. Can't tell if this helped much and I lost a lot of that graham so I dropped in 2.5% graham cracker fw. So my current version is

V2

Flv cheesecake 1%

Vanilla custard cheesecake ooo 2%

Hs Italian cream 1.25%

Fw Graham cracker 2.5%

Sweet strawberry jf 1.5%

Strawberry shisha inw 3%

Fa strawberry 0.75%

I still feel like v1 tastes better. But it's just not a cheesecake. I thought the Italian cream would be adding more of a cheesecake vibe.. missing those sour tangy notes and creaminess. These strawberries also aren't popping like I want them to. up the strawberries a bit ? Change the ratios ? Drop the Italian cream and maybe add a different cream? Any suggestions are welcome as I'm getting quite frustrated . Thanks in advance ! Also I've been steeping these for about 10-14 days. Could it simply be it needs to steep longer ?

Edit: maybe I should try some yogurts ? Or la cheesecake ? Haven't tried that yet

If you don't think the strawberries are popping in a way you'd like them to then try adding 1% INW Shisha Vanilla or 1% DIYFS Holy Vanilla. Think about baking a real cheesecake - I guarantee there's vanilla added to the recipe.

If I were trying to make a cheesecake, I'd probably try something along the lines of:

2% INW Yes We Cheesecake
.5% HS Italian Cream
2% CAP NY Cheesecake
1.5% TFA CCGC
(I'd then add whatever to the cheesecake base. I can't stand strawberries, so I have no suggestions for which to use.)

Ok I've been eyeing that new cheesecake conc. From inw I will definitely pick it up. And maybe Italian cream isn't working for me .. I don't really notice much added to a mix. I thought it would be adding much more tang/ Thick/ marscapone vibe or maybe it just has an extended steep time and I'm not letting it sit long enough..

I noticed you were using it pretty high... too much of a flavor can lead to it not tasting as expected.

And generally dairy flavors take two weeks to a month for steeping. Unless they're V2/DX flavors, and then you start at one month and double that for each of such flavors (so with one, you steep two months, etc.) unless you like the smell/taste of vomit.

I love cheesecake and I think i have at least 5 variants on the flavor from different companies. The thing is, i can't taste any of it, no matter the percentage, no matter the mixture i use, i can't taste anything that resembles cheesecake. The best I get from it is some kind of creamy sweetness, no cheese. It's disappointing and I'm wondering if others or maybe even you are experiencing the same?

I have tried it at about 5-6% after a month steep and I mostly get a buttery creamy taste but nothing like cheesecake.. maybe my taste buds are broken ? Ha

yeah, this is the only one that has a hint of a cheese flavor in it for me. I've cranked that stuff to 10% even, still, not even remotely close to eating a bite of cheesecake. :(

That's pretty much what I'm getting too. I have almost all the cheesecakes and I never really get a cheesecake vibe. However I have tried commercial juices that taste just like cheesecake so I'm at a loss.

Same here, the concentrates I have for it don’t even smell like cheesecake to me. I hope you find some kind of resolution I can learn from. :)

I'm super dissatisfied with all the cheesecake flavors. La and Flv come the closest but nothing that gets that authentic rich savory notes.

Bring back the TFA Cheesecake with GC and up it to 4 or 5%. Then, unless you're one of the weird people that hates it, try TFA Strawberry Ripe in it. Those two flavors work really well off each other, and upping that cheesecake gc to 4 or 5 will do a lot of good on its own.

I'm not a huge fan of ripe but I'm willing try anything at this point. Ripe and it's em tends to get muted by the sweetener I add, super sweet around 0.25-0.5%.. but maybe l try adding around what.. 4%? Thats about normal right. Maybe I'll try a version where I will pull the vanilla cc( or should I leave it?) and add ccgc back in around 4.5%. the thing is the ccgc really only tastes like graham cracker to me. I get a slight creaminess but no actual cheesecake flavor

Okay bear with me here... Don't add your sweetener at all and do 5% ripe and leave the vanilla cc. Keep everything else the exact same.

So: 1% flv cheesecake

Cheesecake gc TFA 4.5%

Italian cream hs 1.25%

Strawberry shisha 3%

Sweet strawberry jf 1.5%

Strawberry fa 0.75%

strawberry ripe tfa 5%

If that comes off as too much strawberry and not enough cheesecake, bring the strawberries down just a hair or add in a bavarian cream to round them out.

I get a little bit of generic coconut creaminess from that cgcc but it's not unpleasant. I'm trying to narrow down which concentrate to use with graham cc .. flv cheesecake.. ooo vanilla custard cc.. inw yes we cc.. or maybe I'll use 2 of them. I need to do more testing with la cheesecake because the reviews are all over the place and I haven't Vaped it in a while but I remember not being too impressed.

You could try Yogurt FA for the sour, dairy tang. It's quite good.

Also, I am feeling that the recipe in general is getting a bit muddled with so many flavors. When I get to this kind of point, I step back, look at a blank canvas, and pop in the bare basics that I think is necessary, using what I learned from the prior process. Just as an example, I would try:

  • FA Yogurt 1%
  • FLV Cheesecake 2%
  • FW Graham Cracker 2%
  • JF Sweet Strawberry 2%
  • TFA Strawberry Ripe 3%

After reading your notes above, this is what I came up with. No worries if you disagree, but simplifying your recipe, if you have been fighting with it for a while, could be what it needs.

I have found JF Sweet Strawberry plus TFA Strawberry Ripe are awesome, in concert.

Back to the basics. I like it, I'll whip this up and report back. I've heard that around 2% flv cheesecake gets pretty butryic. But maybe that's what I'm looking for in a cheesecake ? Ty

Ah, whoops, I haven't a clue about FLV Cheesecake. I just read what you wrote about Hangsen Italian Cream not doing what you expected, so I took it out and increased what was apparently more effective. Adjust as you see fit, but you see what I was doing, right? Good luck!!

I can concur that FA yogurt gets you one step closer to that cheesecake tang. I use it too. Haven't found the perfect cheesecake mix yet but it helps.

Pretty simple one.

CAP Sweet Strawberry - 6%

CAP NYCC v1 - 5%

CAP VC v1 - 4%

TFA CCGC - 3%

TFA Malted Milk - 2%

That's from my original notes I've been mixing it reduced overall to like 15% instead of 20% though. I've also been thru a few different trials but I seem to like this one the best.

I’ve had luck adding just a couple drops of FA condensed milk to bring out the cheese a bit more but tread lightly.

I've made a few cheesecake recipes and have tasted zero cheesecake. Made another last night with 10% cap NYcheesecake . Took out all fruits so nothing will get in the way. I fucking love cheesecake but have been very frustrated in trying to find a good recipe.

Browsing ELR one day I found a very simple recipe and made it. Three weeks later I fell in love with it, it's a delicious but very smooth strawberry cheesecake, nothing too empowering, ADV worthy. The recipe is simple:
Cheesecake GC TFA 6%
Strawberry Ripe TFA 10%
It's just right for me because I've never been a fan of recipes with a mile of flavors, the most I use in a single recipe is 4. Try it and you might like it.

I have had the same problem as you for a while, and I used some of Heat's aspects of his dragonfruit cheesecake, which is pretty cheesecakey and fluffy in my own. It's a lot of flavors but it turned out really good and pretty cheesey. LA Cheesecake is pretty damn strong and definitely accents the others well.A little bit of LA Cream Cheese Icing could help boost it as well, but I wouldn't use more than 1%. Also the Graham Cracker Clear could probably be removed or dropped down, that part of the recipe seemed a little much, almost pie-crusty but I haven't had motivation to remake it.

If you are after American style cheesecake then stay away from INW Yes We Cheesecake because it's a full on in your face European style Cheesecake. If it's the European style you after then INW Yes We Cheesecake is perfect. I see no reason too go above 2% though as I can see it being really overpowering. Drop some FA Sicily Lemon in there and it's a perfect S&V.

I think this concentrate(in the mail) is what I'm looking for.

I'm going to try this simple mix :

4% Cheesecake GC TFA (graham/cream body/base)

2% Yes, We Cheesecake INW (cheesy creamy notes?/base)

3% Strawberry FA (body strawberry)

3% Strawberry Shisha INW (top note strawberry)

I honestly can't answer that. I've read discussions before about them being very different but I'm not sure what differences are. All I can add is that INW Yes We Cheesecake is very different too what i remember NYCC tasting like back when I used it a long time ago.

HS Italian Cream gets really cheesy at higher concentrations. Maybe try it higher instead of lower. 3% or so.
