Sweet Dreams are made of Cheesecake. And it's the Flavor of the Week!
submitted over 7 years ago by ID10-TWinner of the 2nd DIYorDIE World Mixing Championship

As always, the purpose of this thread is to gather the community to explore a flavor and its many uses. And it's also to have FUN!

Post recipes containing this week's Flavor of the Week, as the star or in a supporting role, with or without development notes. Talk about other people's recipes that use it. Compare and contrast different manufacturers' versions of the FOTW. Ask for help using that flavor in general or to achieve something specific, offer advice, brainstorm ideas, consider substitutions, suggest pairings... really anything at all as long as it's on topic.

#This week's flavor is: CHEESECAKE

How did that get to be the FOTW?

It was requested. If you're not interested in this FOTW, please take this opportunity and comment to request one that interests you (or send me a PM to do that).

Past FOTW posts can be found here

The NOTED podcasts, which are bascially video FOTWs, are listed on this sheet, maintained by /u/apexified

It's not really cheese. It's not really cake. It's more of a cream cheese pie. Maybe I should google creampie to check out some recipes for inspiration...

Or just check out the notes and recipes shared the last time Cheesecake was Flavor of the Week.

I think you'll get more than recipes when you Google cream pie.....🤣

So, while you're at it, maybe you could google whether latex bonds to stucco... "latex bondage" oughta give some results...

I purchased INW Cheesecake a few weeks ago. This is pretty potent stuff which is inline with INW's other flavours. I really can't see myself using this above 2%. It's noticeable in a mix even as low as 1%. I really like this concentrate but it did freak me out a little. Single flavour testing @ 1% got me a really nice cheesecake flavour but the second I exhaled the vapour filled the room with a really strong Lemon Pledge smell but I didn't get any Lemon flavour at all from the single flavour test, absolutely none. It goes extremely well with the new FA Juicy Strawberry or/and FA Premium Custard.

The fact that they named it “Yes, We Cheesecake” sold me. But it’s good to know it doesn’t suck, too.

They've nailed the profile but smelling Lemon when you exhale is freaky as hell because there isn't a hint of Lemon in the concentrate.

I am so disappointed with cheesecake flavors. None of them are as rich and savory as I think they should be.

Last year we had a conversation on discord about adding FLV Brie to their cheesecake. Curious if you ever gave it a try? I never did but think I'm gonna go for it.

This is jbird, btw

CAP NYCC v1 wouldn't be a complete cheesecake without TFA Cheesecake Graham Crust.

I feel like the Graham Crust is what really gives you the reminiscent taste to make you feel like your actually tasting cheesecake.

Looking forward to next weeks FOTW!

Also I love to eat cheesecake but have never messed with it in my juices yet.

Now we're talking cheesecakes.

Has anyone else found themselves with some butter-flavored popcorn taste when using CAP New York Cheesecake in a recipe?

Not that it's entirely unpleasant, though. But not quite like I was expecting. I've tried this and this, both using it at 6%, steep for 2+ weeks... and... voila! Strawberry and Lemon Popcorn!!

Which has not happened when steeping for way longer, and using at lower percentages, like this custard, which I mix and leave alone for 4 weeks at least.

Is it because 6% is too much? Any thoughts?

I would say 6% is definitely at the ceiling for this flavor. I think it's a great starting point for a cheesecake but it really needs support from either a smooth vanilla or some graham cracker. I definitely know what you're talking about though. Every time I open that bottle I feel like I'm at a movie theater. Prop it up with some Vanilla Swirl or VBIC to give it a bit more of a creamy body and fill it out. Graham cracker is obviously optional, but in my opinion is the secret to a good cheesecake (at least IRL)

EDIT: Another note. Looking at those recipes, I think Vanilla Custard is a bad match for that flavoring. The eggy bottom note is probably part of your problem.

I made DIYorDie's strawberry cheesecake recipe last week which uses NY cheesecake and something just tasted off but I couldn't put my finger on what. You described it perfectly. It's some kind of weird artificial buttery dairy note that reminds me of margarine. Someone here recommended 2 parts FA cheesecake graham to 1 part NY cheesecake which is a really good starting point but needs something to fill it out and add more body and thickness IMO.

HS Italian Cream ought to give it that body.

So does anyone have a good cheesecake base they think works? I was trying to mix up a cheesecake recipe a while back but could never really get satisfied with the actual cheesecake part. I tried a lot of the suggestions in the last flavor of the week thread.

I like tfa cheesecake and la cream cheese icing. Probably 4% and 2%. Its not complete but taste good. Haven't messed with it too much. I mix that with 2% Shisha strawberry.
