Changing out and priming coils in a regular sub-ohm seems like too much work and a waste of coils. Rewicking an RDA for each flavour also sounds tedious.
Can I just drip straight on a coil that hold juice well? I'm comfortable making triple core fused and dual core staggered fused claptons but nothing more complicated than that.
What are the recommended methods when testing 5-7 flavours in one sitting?
Just use short pieces of cotton. No reason to have anything going into the drip well or anything. You just need it to hold enough for a few puffs. It's not that tedious. Just do a wide coil and throw bits of cotton in.

Yes, just drop a few drops right on the coil and you are good to go.
I place enough cotton in the coils to hold flavour, then drip the flavour i'm testing, when i'm ready to switch I drip unflavoured base mix onto the coil until the previous flavours gone then move onto the next.
I do this too, I'm thinking of setting up one of my squonks with just unflavored base to clean my cotton in between flavors.
I use an RDTA (geekvape avocado) with a 70/30 vg/pg unflavored base in the reservoir with a single coil (ss 0.28 ohm) and regular wick which dips into the reservoir. This way my wick is always soaked with unflavored base. I drip a single drop of the concentrate directly onto the coil. It gives me about 4-5 puffs and a pretty good clean representation of the standalone flavor. After the puffs the flavour is completely gone and the wick is read for the next flavour to test. You can easily test a whole bunch of flavors in a short period of time this way. The only thing I don't like is the avocado rda itself because it is side air flow and I prefer bottom airflow (I almost exclusively use a wotofo freakshow for my daily driver). I find side airflow rdas tend to dry up my mouth/tongue quickly while the bottom ones keep my mouth juicy all day.
I don't like RDTAs because I switch flavours all the time, so I don't want a big reservoir of a single flavour in my tank. But this may be a great use for them, I have an iJoy Combo RDTA that I might now have some use for. Thanks.
You can do that but you may or may not taste the metal from the coil a little. Depends on your temperature setting. Keeping it on TC at 400°f should keep that down some.
I usually only vape Kanthal in wattage mode. Should I consider switching to SS316L for this and doing TC?
Temperature control is definitely the way to go with this, if you ask me. Using wattage you risk glowing your coils halfway through a hit if you aren't careful. Better safe than sorry. Protip- never get ss316l glowing red. Burn it until it stops giving off smoke, don't let it get red or it will taste funny.
When I was doing a search for flavor notes on a concentrate that I couldn't find much about in this sub, I ran across a post from 2011 or 2012. Someone was putting one drop of the concentrate in a certain amount of water and drinking it as their flavor test.
I kinda chuckled and thought about trying it out of curiosity - but considering I'd never heard of that way after doing a whole lot of homework for my orders, it probably isn't real accurate. I just use little bits of cotton with a couple of drops, no need to fill the juice well. It's easy to pull out and stuff another little piece in for the next flavor.
I recall someone mentioning using stainless mesh as wicking material, so a quick burn between flavors would replace rewicking.
Or you could use my approach - get a Vandy Vape Mesh RDA (or Ceto, or the Digiflavor Mesh, you get the idea). Easiest RDA ever to rewick. (Yeah, I hate rewicking too.)
