Lemon Meringue Pie

Description

A rich, crumble biscuit base, covered in thick juicy lemon curd topped with fluffy meringue, all in vape form and each element comes through perfectly.

The Recipe

  • CAP juicy lemon 2%
  • CAP Italian lemon Sicily 1%
  • TFA cheesecake Graham crust 1%
  • CAP SL biscuit 2%
  • TFA marshmallow 0.5%
  • TFA meringue 2%
  • TFA whipped cream 1%

Steep Time

5-7 days minimum

The Breakdown

  • biscuit base
    I tried several variations of this base, but found the combination of CAP sl biscuit and TFA cgc to work perfectly together to create a solid, crumbly biscuit base to build on.

  • lemon curd
    My favourite combination of lemon is the mix of CAP juicy lemon along with their lemon Sicily. The Sicily gives a nice zesty lemon taste, and the juicy lemon is a mouth watering lemon juice. Combined, they offer a solid all round lemon flavour profile which fits well in this recipe.

  • meringue
    I find TFA meringue on it's own to be Ok, but I wanted to boost the overall thickness and mouthfeel here as it's an important part of this recipe. A small amount of marshmallow helps to fluff up the meringue. While TFA whipped cream is my secret weapon, giving the meringue a rich, dense creaminess to round off this recipe.

Anyone found a concentrate to replicate just whisked egg whites? All the meringue concentrates I’ve tried taste like a dry cooked meringue with a browned top.

Its a pretty even distribution of flavours but I'd say the lemon has a more forward flavour over the crust

Pretty big difference between them. If you do I wouldn't go above 0.5 with inw

Could adding a tfa butter at 0.5-1% add a depth or dimension to the base?

I'd go lower, maybe 0.2-0.3% so the butter isn't identifiable as such.

My Lemon Meringue recipe is kind of similar. I have both the TFA and FA Meringue and trust me, the TFA is crap compared to the FA version. You would be doing this recipe a ton of Justice by swapping to FA.
