WF Walnut (SC)

🏷️"A complex and smooth, somewhat earthy, nutty flavour."

SUGGESTED DILUTION RATIO: 2-4% - wonderflavours.com "...SC should be started standalone at 1% up to 4%" - Frank EBlender | WFlavors |11/2017

📑 " Walnut...in general, fairly mild, but it has a complexity that includes some tangy and sharp notes. Researchers have identified 3 contributors to this bite: oil content, a tendency to become rancid if not stored properly, and the tannins in the walnut skin. Dr. George Ennis, flavor chemist at David Michael & Company... "The astringent taste is a result of the tannins and catechin from the paper-like skin (pellicle) surrounding the nut kernel." - https://walnuts.org/

"...English walnuts...have a milder taste...thinner, easier-to-crack shells. Black Walnuts...have a bolder, earthier flavor..shells are thick, tough to crack...will likely stain our hands" - http://www.seriouseats.com

> ↓ as Walnut Clarity

I'm reading that as,"it's more vaguely nutty than clearly walnut," is that correct?

Hi ID10-T,

That is correct. At approx. 3 weeks steep the flavor tastes like a light, delicate, and mellow nut with hints of a walnut flavor. It becomes less mild and loses that initial body, however it retains some tangy and sharp notes associated with a walnut flavor.
