Pumpkin Spice Eggnog Cookie.

Recipe was inspired by /u/ID10-T Pumpkindoodle Cookie recipe. I was in search of a decent pumpkin-centered recipe to transform since I'd had a few customers request one. I had limited experience with pumpkin flavorings, so I took a chance on a tip given by /u/mlNikon in this thread.

After that convo, I was browsing ATF to see how other people were using their pumpkin concentrates while my single-flavor test batches were steeping and I stumbled upon ID10-T's pumpkindoodle cookie and immediately knew that it was going to be my canvas.

I was going for a snickerdoodle cookie heftily dunked into a cup of pumpkin spiced eggnog, but ended up with what ID10-T describes as "two pumpkindoodle cookies used to make a ice cream sandwich with eggnog ice cream". I like how that sounds more, so we're gonna go with that!

Pumpkin Spice Eggnog Cookie

  • 5.00% Sugar Cookie (CAP)
  • 3.00% Eggnog (FLV)
  • 3.00% Vanilla Custard (CAP)
  • 2.00% Cinnamon Danish Swirl (CAP)
  • 1.50% Rich Cinnamon 10% (FLV) -.15% if undiluted-
  • 1.50% Yam (TPA)
  • 0.75% Pumpkin (TPA)
  • 0.30% Holiday Spice (TPA)
  • Steep it for at least 5 days. Wait 10 if you want it at it's full potential.

The Cookie:

Cap Cinnamon Danish Swirl, Cap Sugar Cookie, TPA Yam, and TPA Pumpkin make up the cookie base here. These 4 concentrates alone create a warm, gooey cookie with just the right amount of bite to it to appease the palate. IDK about you guys, but I hate gooey cookies with little to no crunch. The consistency feels like mucus without that bit of crunch.

The Eggnog:

FLV Eggnog is the star here. At 3%, you should be picking up a good amount of dairy along with hints of freshly ground nutmeg and cinnamon. Cap Vanilla Custard is the Frank's Red Hot of the DIY world for good reason. It does so much that it's hard not to throw some of it in a mix. Here, at 3% it thickens up the eggnog and it's juuuuust eggy enough to blend into the eggnog as opposed to standing above it or sitting below it in the mix.

The Spice:

I bought TPA Holiday Spice nearly 7 months ago for some reason...Or maybe it was sent to me by mistake, because I had never used it and can't think of why I would have it in my arsenal. But while testing the pumpkin flavorings, I decided to mix up a few test batches of this stuff and lo and behold; it's straight nutmeg and ginger. Shit is GNARLY above .5% and can completely take over a mix if you overdrip. It's one of the few TPA concentrates that is concentrated on an FLV or INW level. Almost strong enough to dillute it. But that's neither here nor there. At .3%, it boosts the nutmeg in FLV Eggnog to the perfect level for me. And what good is a pumpkin spice without FLV Rich Cinnamon? I have mine diluted to 10%, so it was actually used at .15% in the mix. For those of you that haven't used it, it is STRONG. Heed my words: If you put too much in the mix, you'll get a completely different profile. However, you could drop the percentage to a level more tolerable for your own palate without losing the warmth and natural spice that it brings to the table. It plays well with the CDS, because it's a natural cinnamon and thus, it sits on top of the mix.

It's panty droppin' recipe, my friend. 5 stars. Since you stole my ice cream sandwich description - which is a food that I'm definitely going to have to make and eat now because I'm making pumpkindoodles this week and I love Braum's Egg Nog Ice Cream - I don't have much else to say. I finished my 30ml of this stuff after it had steeped for about 10 - 11 days and was sad to see it go.

I still think it would be just teensy bit better balanced spice-wise with 0.25% Holiday Spice and 0.2% Rich Cinnamon. Sounds crazy that shifting 0.05% from one flavor to the other would make any difference at all, but as you pointed out, them shits is STRONG. Dilutions are a good idea unless you are very good at dripping very tiny amounts or are preparing a huge bottle - which also wouldn't be a bad idea with this one because YUM.

rich cinnamon is totally worth it, you just use it one drop or two at a time, I actually make a 10% dilution of it.

Yeah, $13 for a single 15mL concentrate is ridiculous on paper. But you'll end up diluting it to give yourself 150mL and then realize that it'll last you forever and all will be right in the world.

It's a disservice (to yourself) to not buy rich cinnamon. There's no cinnamon flavor out there that comes near it.
