Many ways to enjoy this flavor of the week, But I think it's better off Spread: HAZELNUT!!!
submitted almost 8 years ago by ID10-TWinner of the 2nd DIYorDIE World Mixing Championship

As always, the purpose of this thread is to gather the community to explore a flavor and its many uses. And it's also to have FUN!

Post recipes containing this week's Flavor of the Week, as the star or in a supporting role, with or without development notes. Talk about other people's recipes that use it. Compare and contrast different manufacturers' versions of the FOTW. Ask for help using that flavor in general or to achieve something specific, offer advice, brainstorm ideas, consider substitutions, suggest pairings... really anything at all as long as it's on topic.

This week's flavor is: HAZELNUT

How did that get to be the FOTW?

It was requested. If you're not interested in this FOTW, please take this opportunity and comment to suggest one that interests you (or send me a PM to do that).

Past FOTW posts can be found here

  • Molinberry's offering Nut Hazelnut is very close in flavor to FA's Hazel Grove. Both are strong and not particularly sweet. I can't tell them apart.
  • Wonder Flavours' Hazelnuts and Cream is a balanced blend of sweet hazelnut and cream. It is good enough to enjoy as a single flavor mix at 6%.

Am I the only one who thinks "maybe I should add 0.5% FW Hazelnut" on half of the recipes I try? 😂

I’m right there with you, I just used this flavor for the first time a few weeks ago, and I’m already trying to find every possible application to shoehorn it into.

Strawberries. Anytime you think strawberries in a setting that's supposed to be like actual strawberries and not candy, think 0.5%ish FW Hazelnut.

That’s an awesome tip, I had no idea. Thanks!

No. No, you are not alone.

1% is great in the burley/cured base you talked about in that video!

There aren't many creams I don't. And any time I'm using caramel and don't want it to taste like those store-bought candies.

Just picked up TFA hazelnut. Have yet to test it out so will be keeping tabs on this thread

I've used both FW and CAP Hazelnut for a really long time now, and in my experience I haven't needed to use either above 1%. CAP definitely has a good hazelnut flavor but if you like more of a malty-type Hazelnut I would suggest FW (which seems to be the king around here). It also supports creams better imo. I personally don't have much experience with other hazelnuts though, anybody know of another good one?

FA Hazelnut is the only answer to me

It's a more true representation for sure. Not a great all arounder like FW, but I've found that when mixed with butter OR butterscotch, oh man it turns into this buttery, amazingly rich flavor. Same with FA Walnut, btw.

Have only tried tfa, it's not bad at all, but not perfect. I will order fa next time and test some combinations

I’m relatively new at this, but I made something of my own and I think it's good enough to share, although it could definitely be improved. I posted it in the monthly recipe thread, but since I'm really going for a Hazelnut forward mix I'll post it here. After 12 days I get Hazelnut, but it still seems to be in the background. I used Soho and AP to try the boost it a bit, but I'd love suggestions on how to get a more forward Hazelnut. This was somewhat inspired by Hazelnut Cavendish from Sloth Sauce, one of my all time favorites. It's nothing like it, but I think it's on it's way to being great.

INW Tobacco Symphony - 2%

FW Hazelnut - 2%

INW Classic for Pipe Gold - 1.5%

INW Tobacco Cavendish Type - 1.5%

FA Soho - 1.25%

FA Caramel - .75%

TPA Acetyl Pyrazine - .75%

Wayne's obsidian is the only recipe I use hazelnut in but I've tried it without it and it definitely brings that recipe together

What, nobody has a Nutella recipe?

I've got some FW Nutella testers steeping.

Huh. Hadn't seen that one. Well... guess there was no point.

FW Nutella has a awesome milk chocolate smell, looks like motor oil, been a while since tested seemed to me remained constant to a Nutella flavor on all %

Bust-a-nut I lower percentages by about 1/3 and I add some TFA double chocolate or INW Milk Chocolate and it reminds me of nutella.

Include CAP Pralines and cream in your next order, and start with 4-5% of it. Fill it up with FW and a dash of FA. Add a bit of bavarian cream and sweetener to taste. Enjoy

Haven't tried CAPs pralines but I can say avoid tfa pralines & cream. It annihilates any mix I've tried it in. Its got a weird sourness to it and even at .5% it just steamrolls any concentrates I have it with. Maybe i got a bad batch but jeeeeezzzzus

Yeah, I've thrown TFA... I've also got FW Pralines and cream which is completely different from the rest, mostly cream but nice. Also WF's Hazelnuts and Cream is quite good, like a creamier FW Hazelnut but not as useful for a nutella recipe.
