I cannot figure out lemon...

I've been working on a Turboroar clone (lemon poundcake) but I can't get the lemon to taste sweet. I've tried FE Lemon and FA Lemon Sicily in different percentages, but keep getting a Pinesol lemon, like a cleaner or a detergent.

Any tips on a flavor(s) I can use to get a sweet lemony taste?

Lemon Sicily shouldn’t taste like Pledge. Which is what I assume you meant to say. What percentages have you tried?

Haha yes I did mean Pledge. Tried it at 2 and 4%.

Way too much Sicily imo. I'd say keep it below 0.75% and add a fuller lemon like INW Lemon @1% or JF Lemon Juicy @2.5%. Also, are you single flavor testing the lemon flavors or are you just assuming that they're the cause of the lemon pledge taste you're getting? It couod easily be something else that's in the mix.

Never tried anything from JF, I'll check both of those out. Haven't been single testing these. I figured that the other flavors in the mix (custard, vanilla, graham) wouldn't be giving off that chemical cleaner taste, but that was obviously a mistake. Do you buy a bunch of 10ml bottles or something for your testers?

Lemon Sicily at higher percentages like that is more of a Limoncello flavor. You shouldn’t be getting lemon Pledge out of it.

I got the lemon pledge effect with a 2% FA Lemon Sicily mix... for a day or so. Once it steeped for a couple days it settled into the mix.

For me, lemon is one of those flavors that needs a combination of multiple lemons to get what I am after. You might consider adding Juicy Lemon and CAPs Italian Lemon Sicily to your collection. I find Caps Lemon Sicily to be quite a bit sweeter than FAs

CAP Juicy Lemon + FA Italian Lemon Sicily works great, at 1.5% and 0.5% respectively it will sit nicely as a back note of a bakery, you could push the Juicy Lemon to 3% if you want to bring out the sharper notes

Low amounts of CAP/FW Lemon Meringue can help. FA Custard works better at enhancing citrus rather than CAP/TFA if you are using it.

Try INW Lemon Concentrate mixed 50/50 with INW Lemon Mix.

P.S. They are both insanely strong, no more than 0.5% of each IMO.

TFA fruit circles was about the best sweet lemony taste I could find. If you take around 3% and then enhance with one of your other lemon flavours (at like 0.5% to prevent that pledge taste)

You can aso try Juicy Lemon from Capella - never tried it myself but I have heard good things as far as lemon poundcake goes.

Oh and I hear you about the pledge taste - once made a very nice orange toilet spray :)

Best Orange I found was FW Blood Orange - gives a fresh Orange juice taste, but never tried it with cream - not sure that would work, if you think about fresh orange juice with cream

Only tried blood orange in that Orange Dreamsicle V.Perfected, but I got a crazy peppery harshness from that mix, which I found weird considering its popularity. Honestly I've never tried any orange flavored juice that didn't taste like chemicals to me : (

That Orange Glow thooo. I just make my own... You gotta layer that stuff with creams. That's my go to for smoothing out bitter or citrus flavors. FLV Cream is the best cream IMO. TFA whipped cream. CAP Vanilla Whipped cream... All great. (that's for an orange cream tho) For cake... I think taking out the cheesecake and layering and lowering your lemons will help, as other people have stated. (Favorite oranges are OoO Orange Juice, FW Blood Orange... they even go nicely together, especially with an ice cream flavor)

Not too experienced, but I can vouch for Caps juicy lemon. Used at 2% with 1.5% INW eucalyptus w/mint for a cough drop juice. I've tried retail juice that had lemon in it and got the pledge taste from it

I'd maybe try working around the lemons from the Dinner Lady recipe. Cap Juicy Lemon + FW Lemon Meringue Pie + FA Lemon Sicily. It's been my favorite lemon recipe so far!

I have tried FA Lemon Sicily with CAP Juicy Lemon and its OK but i found that TPA Lemon with FA Lemon Sicily is the best. Each @ 2-3% does it for me. No cleaner detergent taste, just proper lemon :)

I’ve had similar problems with trying to get a sweet lemon, too lower % and they get lost after a few days steep and when I compensate and bump the % up I’m getting pledge and harshness. 🤔

I have CAP Juicy Lemon, INW Lemon and INW Lemon Mix.

I’ve been wanting to make a lemon cream or lemon Viennese whirl with a shortbread biscuit and lemon butter cream filling but can’t nail down the lemons. 😢

I would suggest taking a look at fresh's Brutus the Barber for ideas. Its a really nice lemon pound cake, then after a week or two the lemons fade but its still a good twinkie then lol.

The lemons that have worked for me

FA Lemon Sicily - anywhere from 0.25% to pop mixes all the way up to 2% for lemon flavor.

FE (flavor express) Lemon - This is my favorite Lemon flavor out there. So friggin good and pretty potent too. I've used it successfully up to 2%

INW Lemon - This is also a good one and it's potent as all hell! I would not recommend taking this over 1%

INW Lemon Mix - This one is also strong as fuck. This is a little different than a straight up lemon, def get some grapefruit and other citrus out of this. Highest I've gone with it so far is 0.5% and even there it takes over mixes for me.

I also have JF Juicy Lemon but have yet to use it. Anybody got any recommendations on % to start out with it at?
