Pastéis de Nata (Portuguese Custard Tarts)

This recipe came about after seeing Grimm Green review a juice called 'Taruto', it sounded delicious but being from Australia, I wasn't able to find it without paying exorbitant shipping costs; thus I decided to try and make my own take on the profile.

Pastéis de Nata

MFG | FLAVOUR | % ---|---|---- INW | Biscuit | 0.75 TPA| Brown Sugar | 1.00 TPA | Butter | 0.25 CAP | Cinnamon Danish Swirl | 1.00 FLV | Cookie Dough | 0.75 FW | Dulce De Leche | 1.50 CAP | Funnel Cake | 1.50 TPA | Pie Crust | 1.50 CAP | Super Sweet | 0.25 TPA | Toasted Marshmallow | 1.50 CAP | Vanilla Custard | 4.50

 

NOTES:

TPA PIE CRUST / CAP FUNNEL CAKE / INW BISCUIT / TPA BUTTER

This is the base for the butter pastry cup. They all mix together well to create a nice flaky, all butter, decadent pastry for the custard to sit on.

 

CAP VAN CUSTARD / CAP CDS / FW DULCE DE LECHE / FLV COOKIE DOUGH

This is obviously the custard filling, the vanilla custard, dulce de leche and cookie dough create a nice dense custard with caramel notes, having the vanilla custard at such a high percentage means the eggy notes are pretty obvious and up there which is what I wanted, however adds a lot to the steep time. The Dulce de Leche adds more of a sweetened milkiness to the custard, it adds a brightness and really boosts it into something delicious and unique. The Cinnamon Danish swirl is there to add the cinnamon, is also adds a bit of fluffiness to the pastry base. I would have just gone with FLV Rich Cinnamon instead of CDS, however I don't have it, give it a try?

 

TPA BROWN SUGAR / TPA TOASTED MARSHMALLOW

This works with the cookie dough to create a caramelized and 'burnt sugar' taste to the custard, like it's fresh out of the oven. The toasted marshmallow was also added to fluff everything out and provide the nice mouth feel you get from the recipe.

 

Give this bad boy at least a 10 day steep to let the custard really come together.

This sounds super good, and I actually have all the stuff. I'll probably make a couple batching with FLV rich cinnamon in one and let you know how it goes, I'm not a huge fan of CAP CDS.

I've Favorited this on ATF so I'll drop you a review after I try them out. :)

Did you ever try the recipe with rich cinnamon? Just wondering if any modifications have been made recently. I found 1% of CDS to be a little overpowering.. Love the juice though. I might try .5% CDS next time I mix it.. or rich cinnamon (which I don't have right now) I've got 120mls of the original steeping right now.

G'day! Nah I havn't yet, I only got my Rich Cinnamon in the post today, so gonna give it a try soon. I'm also gonna try working on the tart base a bit more.

I just ordered the ingredients for this last night and can't wait to try it. Have you tried Yami Taruto? I'm wondering if this will have a similar taste.. That stuff is delicious, but I refuse to pay the high price for it.

Hey, Yeah thats where I got the inspiration for this recipe, from Grimm Greens review of Taruto. I really wanted to try it but couldn't find any in australia, so decided to make my own take. I ended up getting a bottle and I think this tastes a lot better, if only for how utterly sweet Taruto tastes to me.

Oh shit! Pastéis de Nata are the absolute best. Here in Brazil we sometimes call them pastel de Belém. Thanks for the recipe.

Also, do you feel like there's some wiggle room for some substitutions? I only have TPA Dulce, and no FLV Cookie dough.

There probably is, one iteration I used NYCC in place of dulce and that was good also. I'm not really sure what could go in place of Cookie Dough though.

flv cookie dough is a pretty unique flavor. It is worth it imo to pick that one up.
