My latest Churro recipe (no sweetener yet). There's likely to much to it, trying to decide what to take out of it or just leave it as is. I have gone through 15ml of it so far and I think it's got a great cinnamon kick with some good doughy flavor. I'll probably add a couple drops of CAP Super Sweet eventually. Been doing DIY for a year but this is the first thing I have come up with that didn't just suck. I haven't tweaked it yet but looking for any of you flavor aficionados to tell me what might be worth stripping out or swapping.
- .5% TPA Acetyl Pyrazine 5%
- .75% INW Biscuit
- 1% TPA Brown Sugar Extra
- .5% FA Joy
- .5% FA Meringue
- .6% FLV Rich Cinnamon
- 3% CAP Sugar Cookie
- 1% TPA Vanilla Swirl
- 2% CAP Yellow Cake
I think FA zeppola would be a great friend here. FA zeppola at 4% will get you halfway there. You could probably simplify the hell out of this if you used that bad boy
I love zepolla but I believe it has a jam note to it as well no? It's been awhile but I remember it's one of the best I've mixed ..
I think you're confusing it with FA WOW which is a donut with slight jam.
Zeppola and sugar cookie should get you halfway to a churro. I've been contemplating this profile for a while but I just haven't gotten to mixing it up. From my notes I remember I was going to start with those two and continue to add on as needed.
You dont think zeppola at 4% would give too much of a doughnut type taste?
The type of donut that zeppola emulates is not a traditional big fat yeast donut. It's more of a zeppole which is pretty in line with what a churro is, they're just different shapes. The powdered sugar note would also help, all you need is some cinnamon and maybe some more buttery notes and you're there. That's just my opinion and taste. I haven't tried this specific application and you could very well be right
Try adding 0.50% - 0.75% Pie Crust TPA
Cap funnel cake would be a good base to build a churo with. It's a really doughy cinnamon elephant ear type flavor. Maybe add that as the main note with sugar cookie being an accent flavor?
Just my thoughts though, not trying to change up your recipe.
You get cinnamon from Cap funnel cake? I use it quite a bit and I've never gotten any cinnamon out of it, it does pair well with cinnamon danish swirl touch.
Yea, the first recipe I tried making was trying to clone Coney Cake by liquid state.
Cap funnel cake 4% Cap vanilla bean ice cream 2% Purilum vanilla custard 2% Also probably added some em im sure.
It wasn't bad, it was just too cinnamon for me when the original didn't have any cinnamon flavor.
If you grabbed the free RF SC flavors Cinnamon Roll fits in with churro awesomely. It's more like a candied cinnamon glaze.
