Sikhye - Korean Sweet Rice Drink

Reference - https://mykoreankitchen.com/sikhye/

Summer Sikhye

  • FE Sweet Rice 4.50%
  • FA Fresh Cream 1.50%
  • FA Meringue 1.00%
  • FA Nonna's Cake 0.75%
  • FLV Yakima Hops 0.65%
  • FLV Oatmeal Raisin ~ 0.20% (1 drop/15mL, can do 1 drop/10mL if desired)

optional but suggested:

Sweetener (I used 0.75% NN Erythritol to add subtle coolness and sweetness (like added sugar))

FA Nonna's Cake - notably the source of pine nuts and slight citrus that goes very well with Yakima Hops. Also helps add a bit of body, depth, and sweetness to the milk without being too heavy as well.

FA Fresh Cream - Clean unassuming milky cream that doesn't detract for the delicate grainy profile.

FLV Yakima Hops - barley, malty, brings out the nuttiness of the pine nuts and earthy/green flavor of the rice.

FA Meringue - Further adds on the "malted" profile, sweetens the rice milk

FLV Oatmeal Raisin - Substitute for Dates, enhances the grain profile, pairs very well with rice. I like this because it enhances both the grain as well as being a decent substitute. FLV Fig/Sweet Fig might be an interesting variation on this if you're looking to experiment.

Pleasantly surprised with how this turned out. Very relaxing vibe and quite flavorful. Rich, nutty, and very malty like the real drink. Wanted to try something summery but different.

Let me know if you decide to mix this up and what you think!

Now this mix has peeked my interest. Very interesting mix of flavors. I just got in some of that sweet rice to mess around with so I'm going to mix this up.

The pictures on the website look like it's a dark liquid maggot soup on the bottom of your trash can. As you can tell, I'm not very cultured with Asian dishes.

lol! Yeah they certainly don't get a 10 star rating for presentation but I like the flavor of a lot of sweet Asian cuisine. I tried to keep the profile fairly modest and not too wild (i.e red bean paste, though that is something I'm thinking about :D).

I've had FA Nonna's Cake + FLV Yakima Hops lying around for a while and I was glad I was able to find a use for them (and together no less). I think if you like grainy/nutty/malty profiles, you will like this a lot.

/u/concreteriver's Fiestas and Fiascos recipe really turned me on to Yakima Hops so if you ever feel like trying something different give that a go.

I probably will give that a go, I'm a big fan of INW Cactus.

Hey, thanks for the Fiestas and Fiascos love. I'm a huge fan of hops, specifically because it brings some bitterness into recipes that helps set off the sweeter components and just gets makes interesting profiles all around.

Bro, I want to make 아침햇살 and 수정과 really bad but dont know where to start. I posted a 메로나 recipe in the June Recipes thread. Gotta try this next. I love that drink.

brown rice - FE Sweet Rice gets you a basic rice profile, if you want to go further could consider also adding INW Sesame Sweets to bring out more fragrant brown rice notes.

yam extract - http://www.realflavors.com/shop/sweet-potato-super-concentrate/ (I'm not super familiar with yam flavorings though this would probably work if you can't find anything else)

"mixed formulation(grapefruit seed extract, glycerin, vitamin c, green tea extract)"

Little FE Green Tea + Grapefruit of choice (INW/CAP, or FLV Pink Guava)

> 수정과

Flavorah has a lot of these flavors, like persimmon and ginger.

Hey, man. I watched an adjumma make 수정과 once when I was in the province (Out in 청도 or 경산 if i recall a few yrs back). She boiled cinnamon for awhile then let it sit over night. She added honey to it, then last minute added dried persimmon, pine nuts, and dried ginger. Maybe FLV Milk and Honey for the sweetness. I see a lot of you use RFs. Are they worth it compared to FLV and FA?
Also, I just picked up some of that 아침햇살 at the GS25 and mixed some Woodford Reserve bourbon into it. Call me wild but it was good. Costs only 1500won or so.

I've only used like 2 of their VG flavors, I plan on giving their super concentrates a try. I was just going by a review I read of the sweet potato flavor that it sounded like a good fit for a yam extract. From what I've seen of the reviews of RF SC, i think they sound fairly comparable.

I'd try FLV's ginger/persimmon, and Nonna's Cake for pine nuts. FLV Milk and Honey sounds good.

Funny thing, I drank some sujeonggwa today and hoped someone on this subreddit would have a recipe. It would be an awesome vape. So I thought of some flavours and read some flavour reviews of what might work. As a square one point here's what I've thought up. FLV Persimmon and FLV Rich Cinnamon sound like good starting points. Personally I think you could get away with not adding any ginger notes, but if you must I think FLV Persimmon Spice sounds like it'd work. A brown sugar might be worth trying as well. This part is subjective, but when I drank the sujeonggwa I got almost a tangerine-y peach-y type of note. Interestingly enough, an Orange Banana ejuice I bought from a local vape shop had that same tangerine note. So I think that might be something worth looking into for a sujeonggwa recipe. I'm definitely going to try develop a recipe for it. If you have any findings please let me know.

Not sure if the profile will fit but, TFA Taro at low percentages brings out a raw potato flavor as well, so it might be worth looking in to. I found mixing it with TFA whipped cream also turns it in to a sweet potato type flavor. It's pretty prominent as low as 0.5% and past 1% is like vaping dirt.

Also, awesome recipe OP. Saving this for later :)

I never tried the drink sikhye, but this really sounds interesting. I love recipes like this that use uncommon flavors. Thanks for sharing!
