Bashful (lemon donut) recipe

After not being able to find a lemon donut on ELR I started to play and make my own. Thanks to the help of FA zeppola it turned out very good after 7 days.

Simply a lemon cream filled donut/pastry

CAP glazed donut 1.75%

FA zeppola 3%

FA custard 4%

FA Nonna's cake 1.25%

FA lemon silicy 1%

FA Vienna cream 1%

Glazed donut/zeppola/Nonna's cake - the doughy body of the recipe. Zeppola really shines with a touch of glazed donut and the Nonna's cake really completes the donut body, even better since Nonna has a touch of lemon. The creamy frosting type in Nonna really almost adds a sort of powdered sugar feel to the donut . I used yellow cake at first but found nonna turned out way better.

Lemon silicy/Custard/Vienna cream - perfect combination for a gooey, creamy, lemon filling. Custard FA is gold in the recipe. It's perfect for the filling as it has a touch of Lemon to it. I used lemon silicy only at 1% since Nonna and Custard both contain lemon. It's the perfect amount of lemon goodness. Vienna cream adds profile to the lemon filling and also, it's almost like It adds the powdered sugar on top.

FA Zeppola makes my heart sing! I recently mixed up something very similar to this, so I can imagine how tasty it is!

If you haven't had the chance, I would recommend checking out the JF Lemon Juicy. It's a somewhat mellow yet forward lemon flavor without any of the acidic bite that you might get from something like Lemon Sicily (which I think lends itself perfectly toward bakeries). I can see why you chose the Lemon Sicily though; makes sense and really pushes the idea of lemon.

do you find jf juicy lemon to be harsh? I made a green tea with jf juicy lemon, tfa green tea, and flv milk and honey and it is so harsh but I can't figure out where it is coming from. None of the other flavors in other mixes are harsh.

I don't find it to be harsh. What % are you using it at? I wouldn't go above 3% with it since that seems to be the cap for flavor.

I was only using it at 2%. It could be the green tea that is harsh maybe and the creams I was mixing with it in other recipes calmed it down.

I find milk and honey harsh until about a week steep maybe slightly longer if I use more than 1%

I have never used more than 1%, I normally stay around .5% as it is very potent.

Yes I freaking love zeppola. I actually have jungle flavors lemon..just for some reason didn't try that one. I got tons of lemon flavors but lemon silicy has always been the tastiest. Maybe I'll try it with JF next batch!

Yeah, I have a couple I really like. It's not a profile I usually seek out, but there is a Snickerdoodle recipe I like that has some cinnamon in it.

Wow. I've been working on a recipe very similar to this. The citrus notes in Zeppola, Nonnas Cake, and Custard are perfect for a lemon donut. Even used Vienna Cream in mine, too. Looks good. I'll have to try yours out!

I had breifly worked on a similar recipe before, so I'll for sure mix this one up.

I got some Zeppola and holy shit I was so happy, it's an incredible donut flavor without the play-doh I get from CAP's, I have a few recipes steeping with it now.

I'd replace Nonna's Cake with Pandoro at the same 1.25%. In fact, I'll try that Friday.
