Chances are we've all been through the same search "What pairs well with [insert fruit]--" and probably ending up in a cocktail recipe page. I want to get a little bit more informed and understand why flavors go together. Trimethylamine is found in caviar and white chocolate, so they're flavor pals. Indole is creates a bromance between Jasmin and Porkliver. I want to learn how to apply that scientific approach to something like Watermelon. Any book suggestions?
There is a site called Nouveau Raw that used to have a nicely laid out chart of flavor pairings that I found very useful, but, they've pay-walled it this year.
THIS might be helpful for a quick fix, but, I wholeheartedly recommend grabbing a copy of The Flavor Bible, because it's downright inspiring to paw through, and will up your mixing/cooking game considerably.
I'm not saying it's easy to find a .PDF/.EPUB file through nefarious means, but, I'm not not saying it, either.
Flavor Bible is great as stated by others. It doesn't cover the science aspect you're looking for and I haven't come across a resource that does.
This is the best I got but it's only a tease. I watched an interesting vid where a Japanese guy is building a data base of recipes that links them all in a huge web. Then he designed an algorithm that spits out interesting food pairings. Check it out, well worth the watch. And if you do find a good scientific resource for flavor pairing, please link us!!

I've been using www.foodpairing.com, it's not perfect. There's an underlying problem in DIY going off traditional pairings--not all flavors taste exactly like their profile. We're also unable to include the texture of foods/fruits, which is a major pillar in pairing.
But that video is sick. I wish I had that program in front of me rn. I'd feel like Professor Xavier doing his psychic helmet thing.

Ya, that's part of the challenge I guess. Picking the best version of any flavor is essential, and doing a little flavor bending to get it perfect is the only way. But we can get pretty damn close with a lot of recipes. Minus the texture of course.

I'm a foodie and I cook a shit ton. I mostly rely on my food and drink instincts to come up with recipes. They usually are pretty spot on, but getting the percentages right is the challenge.
I too am going to seek out The Flavor Bible to see what I might be missing but sometimes it's best to go with your palate and instincts.
I think the best thing any mixer can do is get about 100 30ml bottles and single flavor test every flavor you have.
Keep those around too, they'll help remind you if your notes are vague and you can see how they endure prolonged steep. Some flavorings tasted awful to me with even a 2 week steep that are quite awesome after a month or more.
Just to make sure, you mean applying this directly to the e-juice recipe? Since I know of a certain reviewer (Ruby Roo) that does flavour pairings of e-liquids with cocktails, and it never really did it for me.
One of the best liquids I've tasted was Ruthless's Ez Duz It (Strawberry + Watermelon). I've been trying to nail a nice Watermelon Strawberry combo ever since.
Me and a friend made the switch together and Ruthless was all the local shop's rage at the time, and especially Ez Duz It On Ice. We both got a bottle, loaded up our EVOD 2's, and....ack, Robitussin! I had to clean the tank and just gave him the bottle. I went back and got Swamp Thing which was amazing to me along with the banana ones and some smaller company's, Sirius I think? Cherry Pomegranate which I'm still chasing the right flavorings for to capture that unique take on it. I can mix a candy/jolly rancher juice in my sleep but I just can't figure out what flavorings went into the cherry pom or the brands.
Anyway, he was still buying top dollar for Ez Duz It 120s while I transitioned to sub $30 120ml companies like Seduce Juice then Casey Jones Mainline Reserve(now he was the golden needle in the haystack, I remember being Order #500 something then next time 2500 then 11000 in like a 3 month period...good for him though, his juice was good, wait time did used to suck as it was just him and his wife running the whole thing) and finally ITCVapes before DIYing exclusively. Just funny how palettes differ (even if mine was still broken back then)
Besides what's already been mentioned, this one is good, and updates regularly. Sucks that nouveauraw is behind a paywall now.
