Modest Monday - Building A Cereal Base

Ladies and gentleman,

As promised, I have not disappeared or sold out to big vapor.

However, as I did say, I have decided to move my articles to DIYorDie where they can be organized better and presented better.

Always see Vienna Cream being touted as a must for cereal bases but never see FA Fresh Cream and FLV Cream. Both of which are without a doubt and unarguably the milkiest most spot on milk flavors created for milky milkiness.

What gives?

Wayne uses FA Fresh Cream and not Vienna Cream in his Cereal Milks recipe. Personally, I enjoy that recipe as is but like it even more if I swap the % for AP with the % for Cream Fresh.

Cream fresh to me doesn't really have much of a taste, more just like density and an airy mouth feel. I always use it in my recipes, because its good shake and vape, unlike Vienna where it has a funky sour taste the first few days. I haven't read the Modest Monday yet. But I'm currently working on an Apple Jacks cereal so I'm sure it will come in handy. After actually having apple jacks I realized they don't even have that much flavor, maybe it was my taste buds but I'm going back to the drawing board to prevent it from tasting like an Apple fritter.

Not sure how old you are, but when we are younger tastes (and smells) are amplified. Unfortunately, our sense of smell and taste diminishes the older we get. Might account for the apparent lack of taste in the Apple Jacks you had.

Or they might have just changed the recipe, lol.

On a completely different note, I would love to see that recipe as I have a special place in my pre-diabetic (kidding) heart for Apple Jacks!

Cream Fresh tastes just like milk to me at 2%, but just density and mouthfeel below around 1.5%, what are you using it at?

Yes, I was just chatting with /u/Vurve about that Vienna Cream funky sour thing. I feel like any mention of that concentrate should come with a disclaimer. Great ingredient, just needs a steep.

What happened to make your Jacks taste like fritter?

FLV Cream is the grail of milk. Fully agree. That's one of my top 5 favorite flavors. I'm shocked it isn't used more.

I think both are great choices, but FA Vienna Cream has that sweetened condensed milk flavor that helps add to that end of a bowl of cereal flavor.

FA fresh cream is kinda tangy, but not that it hurts anything when trying to replicate milk. It's just kind of one noted.

FLV Cream, while absurdly delicious, has a decent throat hit.

I would gladly vape a cereal vape that used either of them though.

I'm surprised how versatile Vienna Cream is a a cream -- because in reality it's buttercream icing made with superfino instead of powdered sugar, and no vanilla.

That said, it makes sense because it's sugar, butter, and a little milk.

Realistically, it's more than just formatting. I also want to rewrite them to a more professional standard (similar to today's post) and overall include more content as I re-release them.

My goal is to complete one additional "legacy" Modest Monday to release with a new one every Monday till I'm caught up. That did not happen this week.

Honestly, 0.75% FA Meringue will accomplish nothing but add a light sweetness. I find it needs up to 2% to get that dairyness.

I feel like it wouldn't be too crazy to try using FA Yogurt to add dairy-ness. It's legit just like straight essence of dairy.
