Sous Vide DIY (Heat Steeping)

I know a lot of people think heat kills flavor, however if you can accurately control the head to the half of degree and keep it low I haven't seen an issue. Especially with high VG mixes it allows it to thin out enough to mix and shake occasionally. This is my ANOVA that we use a whole lot for cooking during the week, serving a dual purpose. And since the idea is water immersion everything is sealed in bags. Food savers (vacuum sealed) for umm food, and I just use zip locks for the bottles.

And since it moves the water during the process it mildly moves the bottles slightly mixing the juice.

What temp/times do you recommend?

95 to 103 (I believe 105 degrades Nicotine) and I just let it run overnight. I usually only mix when my son goes to bed so that's why I let it go overnight. It's meant for extended run times. Also most have a timer setting that will shut it off if you feel like it.

Honestly steak is amazing after 45 minutes in. And literally 1 minute each side on the grill. But it will change the way you think about chicken and pork chops. Never dry again and full of flavor. Me and my wife could be spokes people for this thing.

I don't follow the brands. But I can say we have had the ANOVA over 2 years and use it 3 to 5 days a week and (knock on wood) haven't had a issue. 6 months ago the plastic bracket that hold the unit cracked. My wife emailed them about buying a new one and they sent one for free. So they will have my business in the future.

FYI the joule doesn't have physical buttons and can only be controlled with the app.

Well they are in a bag so they never get wet. Usually overnight is enough to take a custard base from ehhh to good.

I've used an ultrasonic cleaner and a crockpot for steeping and just haven't found that it really makes any difference. You really feel this works? Not just a placebo effect?

I definitely notice a difference. I put straight torrone (FA) in there last night. Freshly mixed is perfumey and floral, 12 hours later a completely mellow smooth Torrone.

Interesting looking cooking tool there. Must be a newer technology I've never seen on of those in my life. I googled it and seen they even come with Bluetooth lol. Cool stuff
