So, I've heard and read that Capella reformulated their Marshmallow flavor. This is disappointing to me as the original CAP Marshmallow was one of my favorite flavorings, and it had something to it that most of the other Marshmallows I've tried just don't. It was a very nice addition to recipes that added sweetness and an excellent mouthfeel, and im afraid the reformulation is basically a DX version that wont be the same. Can anyone comment on the new vs the old and/or suggest a flavoring that would be a worthwhile replacement? Thanks
Have you tried FA's marshmallow? I haven't tried CAP so I can't compare, but I can tell you that we use the concentrates in a similar fashion for similar reasons. Mouthfeel, a sweet puffiness, a bit of density, goes good with fruits as well, etc
Yes, FA is actually the one I use most often instead of the precious little OG CAP I have left...it comes close for sure, I haven't used TFA's but FA's is definitely good, but I think between the replies here I've pinned down what felt missing: Vanilla. The CAP is much more vanilla heavy and to my palate a bit creamier, both qualities which I find desirable in a typical recipe I'd make calling for Marshmallow. That also seems a bit evident in the color, CAPs was a mid to dark brown, while FA's is clear. I'll have to play around with maybe substituting part of the marshmallow % in a recipe with a bit of heavy vanilla (maybe vanilla bourbon?) and see if I can replicate it. Man I hope the new formula is a temporary measure!
Question: Would you use the marshmellow flavour as a sweetener if you were to mix it with fruit flavours? Im thinking of adding a little to my pom lemonade to cut the bitterness...
I thought I read there's a shortage in a particular type of vanilla that they use to make it and had to reformulate. I could be wrong.
This is exactly it, a nice vanilla creaminess to it that the other Marshmallows just lack. I have only maybe 30ml left of a 4oz bottle of original CAP Marsh and have been treating it like gold, because none of the others capture the particular flavor and mouthfeel that OG CAP's does. Ah I don't know, I suppose I'll have to play around with heavy vanillas added to other brands to see if I can recapture its magic. Sucks because I'd imagine CAP Marshmallow was probably one of their more popular flavors.
I haven't tried the new one to compare, but the old one does seem to be a much more complex flavor than TFA's and FA's marshmallows. If I wanted to replace that one, it would probably depend on how much I used, because at 0.5% I could probably use TFA's and not be able to tell the difference. But as I went up, the lack of certain qualities would become apparent and I'd probably try adding things like FA Marshmallow, some kind of vanilla flavor, TFA Toasted Marshmallow, and FA Meringue as well to try to replace those missing qualities. Or I'd buy the new CAP Marshmallow formulation thinking surely it's not that different, and then try using those flavors to "fix" whatever's "wrong" with it.
Yeah, FA is my backup marshmallow or used in recipes calling specifically for that brand, and I know now what it is that's missing from the other brands, a creamy vanilla complexity the other brands don't have. Those flavor suggestions are all great jumping off points to try and mix with FA to recapture the original magic I get from OG CAP, thank you!
So, I happened to bring this up on Discord the other day and I tested them both out to see how different they were. The OG marshmallow was pretty damn good. The inhale is a sweet, fluffy, light vanilla flavor, but the exhale and the left over taste is a sugary cereal marshmallow, for sure. The latter however was not that. Although, it's definitely tasty, it doesn't have the same sort of flavor. It's still light and fluffy on the inhale, but on the exhale, it's not that super sugary cereal marshmallow. Instead, its more akin to any other marshmallow flavor. It does have the impression of a cereal marshmallow though. I think with a good steep, it'll still taste rather the same but it just won't compare to that sugary flavor. Ironically, I tried /u/enyawreklaw 's Cuprian recipe with both versions and it actually seemed like the new one went along better with it. But as for addressing your question, it's hard to say. When i smell the bottle, it's reminiscent of DIYFS Holy Vanilla. Maybe, and thats a big maybe, you could try to use a very small amount of that along with another marshmallow. I would say FA since it has that sweet marshmallow flavor.
