Well the simple answer is that you are diluting those flavors further. The recipes you are using would be helpful if you want assistance.

Some will say DW mutes flavor (well anything other than flavor dilutes flavor), but others will say it's fine at 1-2%. I mix everything 80/20 and 1% DW. For me those ratios give me very usable viscosity in all my devices without adding any extra PG.

I've never used distilled water personally, but I'd also recommend trying some creams to cut down on the harshness. I don't know your recipe or application, but TFA Vanilla Swirl, for example, works great in the case of sherbets.

Adding distilled water will modify the temperature and flash point of the e-liquid making them with a less warm effect on the mouth but in bigger percentages like 10% will make a bigger throat hit.
