FOTW is STILL back!! This week's Flavor of the Week is... YOGURT!
submitted almost 9 years ago by ID10-T

Thank you to everyone who participated in Flavor of Week's resurrection last week.

As always, the purpose of this thread is to gather the community to explore a flavor and its many uses. And it's also to have FUN!

Post recipes containing this week's Flavor of the Week, as the star or in a supporting role, with or without development notes. Talk about other people's recipes that use it. Compare and contrast different manufacturers' versions of the FOTW. Ask for help using that flavor in general or to achieve something specific, offer advice, brainstorm ideas, consider substitutions, suggest pairings, attempt to encourage others to complete recipes that have been in development for months... really anything at all as long as it's on topic. And if this week's flavor doesn't interest you, take this opportunity to suggest one for next week that does (or send me a PM to do that).

This week's flavor is: YOGURT

(sorry /u/DownwardSpirals)

Past FOTW posts can be found here.

So, I have a love-hate relationship with yogurts... I love the creaminess and twang they can give to a recipe, but I loathe the inherent butyric acid that is almost necessary to them. I've been messing around with yogurts for a while now, and here are some of my brief notes on them.

CAP Creamy -- This one is nice for a mild creamy element in a recipe. I don't get much zing, and the butyric acid is somewhat present

CAP Greek -- This one is a bit more of a dense yogurt than the creamy, and has more of a butyric bite to it. Still not much zing to it.

FW Yogurt -- This one is kind of like a sweet vanilla yogurt, like the yoplait kind. I can see why it's touted as one of the better yogurts, since it doesn't have much zing, the butyric bite is cut down by the sweetness/vanilla notes, and it's nice and creamy

FA Yogurt -- This has quickly become one of my favorites even though I think a lot of people dislike it. It's got that very distinct twang that I look for when I think "yogurt," and I think much more so than all the ones I've tried thus far. It does have a bit of a strong butyric bite, so you'll want to use it low and compliment it either with other creams or fruits/flavors that can stand up to it.

FLV Greek Yogurt -- This one seems promising, but I haven't actually tasted it yet. I have a tester sitting at home that I will try to give a taste to tonight. It smells very heavy on the butyric and I don't sense much of a zing, although it does seem quite thick/creamy
Edit: I don't get as much butyric note as I would have expected from the odor. Does actually have a nice twang to it, but not as much as I'd like for the amount of butyric note that is present. Very creamy and dense, much more so than other yogurts I've tried. I could see this working well in a lot of yogurt bases, probably why it's highly revered. I do still think it needs some help in other areas, such as twang and something to soothe you from the butyric notes.

TFA Greek -- I also still need to test this one. The aroma is reminscent of FLV Greek, but seems like it might not have as much body. I will try to test this tonight to provide some notes on.

Those are all the ones I have; I think I got all the ones I could from BCF, but I'm not sure if I'm missing any or not. The journey for a good yogurt has been a long and arduous one, a quest I don't care to take again.

I used to like the combo of CAP Creamy and CAP Greek, but they are both rather disappointing to me, and I didn't feel I was getting much actual flavor from them, just some creaminess and butyric note.

So far I've really been liking the combo of FW and FA Yogurts, since you get some of the sweet creaminess from FW and that super twang I want from FA. Last iteration I was at 0.75% FA and 2% FW; it seems to be in a pretty good spot, but the butyric was a little high (for me) so I may knock the FA down to 0.5%.

If anyone wants to tell me which yogurts I'm missing, I will begrudgingly test them out and provide my notes on them =)

Awesome write-up!

I mix FW, FA and FLV together. I feel they all bring something different to the party. But, if I had to pick one, it would Flavorah. I'm interested to hear what you thought of FLV Greek Yogurt. I think it's got that twang but the creaminess smooths it out.

> If this week's flavor doesn't interest you, take this opportunity to suggest one for next week that does (or send me a PM to do that)

I've already committed to doing "spices" (excluding cinnamon and vanilla) next week, Cranberry sometime in the next three weeks, and Plum sometime in the next seven weeks. But other than that, priority will be given to suggestions by you Beginner Blending boys first and your listeners second.

by matthewkocandaalmost 9 years ago

Oooh next week I'll have some fun. And talking about plum will be interesting so I can see which ones I should pick up and experiment with.

Definitely gotta message you with some ideas for FotW then ;)

I've got lots of spices and plum, those will be fun!

by ID10-Talmost 9 years ago

Terrific! I'm looking forward to hearing the community's input on spices. I know INW and probably others make a better plum, but hopefully I'll get some clue from that FOTW on how to use this TFA Plum to create something that isn't yucky. Or maybe how to approximate a plum-like flavor by mixing things like apricot, grape, and peach together into some kind of pseudo-plum.

Be sure to let me know if you have suggestions for future Flavors of the Week, please. Those three (spices, cranberry, plum) are the only ones on the agenda so far.

I don't have ton of experience with yogurt but I have tried CAP Creamy Yogurt and TFA Greek Yogurt.

CAP Creamy Yogurt - Pretty good but after a long steep I get a weird off taste. Almost a dirt taste. Fairly creamy by its self but not my cup of tea.

TFA Greek Yogurt - This one is a lot better IMHO. Nice and creamy with a decently thick mouth feel. It's kinda tart but not in a bad way. Might be good in low percentages in a bakery mix (like a cheese danish). But I have only used it in a yogurt mix (my attempt to clone Kiberry)

I just got FA Yogurt but haven't tried it yet. It smells kinda cheesy. Might be good mixing TFA Greek Yogurt with it to get a fuller Yogurt flavor. I will have to try that this week.

Recipe: Kiberry failed clone ( But tasty still)

4% Greek Yogurt - TFA

4% Strawberry (Ripe) - TFA

2% Kiwi - FA

3 Drops Ethyl Maltol per 10mls

Simple but good. Adding some more creams would probably make it a lot better.

Edit: missing ingredient lol

Coincidentally I received FA Kiwi on Friday and tried

 • 4% FA Red Touch (strawberry)
 • 1% Kiwi

Then bumped the kiwi up to 2% and it is really good. I dont have any yogurt flavors but cream was definitely the next flavor I was thinking.

My point was that I think you are spot on with the percentages and to anyone else: what I have tasted of this is delicious.

Also the TFA Kiwi smelled more "floral" or "soapy"

> Might be good mixing TFA Greek Yogurt with it to get a fuller Yogurt flavor.

Judging mostly from the recipes I've seen that people enjoy, that seems to be the case with yogurt flavors; they need to be mixed with each other yogurts and creams to get a well-rounded flavor, such as in NCM's Greek Yogurt Base.

> 3 Drops per 10mls

what?

3 points

by ThomasMinotauralmost 9 years ago

Every 10ml of liquid he makes he adds three drops. So 20ml would have 6 drop, 30ml would have 9 drops, 120ml would have 36 drops and so on

a sweet, tart yogurt with sliced apples sprinkled with cinnamon.

Apple-Cinnamon Yogurt

Vendor | Flavor | % ---|---|---- FLV | Greek Yogurt | 3.75 FA | Fuji Apple | 1.5 TFA | Apple | 1 FA | Cinnamon Ceylon | .7 FA | Pear | 0.5

STEEP TIME: 3 Days Minimum, 1 Week Recommended

BEST AT: <50W, this is a yogurt, no one wants to taste hot yogurt.

FLV Greek Yogurt: This is the perfect standalone yogurt, ranging from 0.75% to impart a tart dairy note up to 4.5% for a sour yogurt. Starting at 5% the sour notes start to turn it into what I assume TFA Cheesecake tastes like. At a little under 4% it creates a thick dairy cream with tart and sour notes resembling a sweet Greek Yogurt, very true to name.

FA Fuji Apple: If you haven't tried this flavor yet, although I assume everyone on reddit has, it is one of the most perfect apple flavorings available. No off notes, just a sweet, juicy apple. At 1.5% it creates the flesh of the apple and lies nicely in the background behind the yogurt.

TFA Apple/FA Pear: These two flavorings change the whole mix from apple yogurt to yogurt with apple. TFA Apple resembles a sour, green apple with mild sweetness and a somewhat off-putting apple skin note in any quantity used. The "skin" note distinguishes the apple from the yogurt and adds a bit extra tartness that you would want in a yogurt. FA Pear is for sweetening the entire mix, bolstering the apple flavor, and makes the yogurt even creamier providing a thicker blend. An incredible flavor that should be in every mixers arsenal.

FA Cinnamon Ceylon: This was originally not my first choice of cinnamon. CAP CDS, TFA Cinnamon Sugar Cookie, FLV Cinnamon Crunch, TFA/FA Apple Pie, and CAP Graham Cracker were all contenders but added a bready flavor that does not work well with yogurt. Cinnamon Ceylon resembles ground cinnamon that would be applied to baking. At under 1% it provides a just a small hint that transforms the mix into a complex blend of fruit, yogurt, and spice.

Substitutions: Only thing that could be subbed is possibly the Cinnamon Ceylon for FLV Rich Cinnamon at a much lower %, although that is based only on the descriptions I have heard of it. This is a very light cinnamon taste so use a light hand if using a different brand.

Somehow, I have all these flavors, even the Ceylon! Going to try it later!

Wow! Nice recipe with notes! Thank you for sharing this with FOTW. Sounds like I need to pick up some of that FLV Greek Yogurt.

IMO, FA Yoghurt is probably the superior yogurt if you don't mind diacetyl. FW's version tastes like candle wax, CAPs version has an odd aftertaste. And TFA Greek yogurt is way too funky smelling.

3 points

by altneurosealmost 9 years ago

Correct me if I'm wrong, but the Diacetyl version was discontinued. I ordered FA Yogurt straight from FA (got the "V2" obviously) some while ago due to the raving reviews and this, this is not good. It's very dry, cheesy and has a hint of woolly socks, needs a LOT of support. Maybe if blended and steeped to high heavens at very low % it could shine but I'm mostly disappointed.

by PalefaceVaperalmost 9 years ago

i heard they were getting rid of the v1, so right before they did i bought 120ml of the good old dirty dirty Dtone version. Still trying to fully figure it all out and come up with something worth vaping... not something that was good enough to finish the bottle, but something so good id post it up here. I also have a love hate relationship with yogurts and own all the ones listed above and then some.

I have the one with diacetyl so yeah, my comments till applies. I have no idea what the non-diacetyl one tastes like.

Have you tried FLV's offering? So far it's my favorite, but I really disliked TFA.

I've been using flv exclusively for a while and I'm loving it. But I'm also here to listen to counter arguments or other suggestions. Goes wonderful with almost any fruit combo at 3-4% for me.

1 points

by ID10-Talmost 9 years ago

TFA definitely got the funk and I think I might be addicted to diacetyl, will have to try FA's. Is the odd aftertaste you're referring to in CAP Creamy, CAP Greek, or both?

3 points

by thedirtyprojectoralmost 9 years agoMixologist

I'm referring to CAP creamy, it has an odd astringent taste to it for me.

Yogurt was the first profile I ever worked with. I tried to clone Hi Chew by The Gurtz which was a mixed fruit yogurt and honey juice, delicious. One thing I always do now with yogurt is add a touch of flv milk & honey, it sweetens it up nicely.

1 points

by ID10-Talmost 9 years ago

Neat! Which yogurt or yogurts? How much is a "touch" milk and honey?

2 points

by mlNikonalmost 9 years ago

I mainly stick with cap creamy yogurt since I don't like tangy yogurt flavor but I just picked up flv greek yogurt and am excited to play with it. I use mainly around .5% of milk % honey. a little bit goes a long way with this flavor, too much and it gets sort of dark.

I really love mixing FLV Greek at 4% with some French vanilla TFA, Cream FLV, and Vanilla Bean Ice Cream CaP. If anyone wants my yogurt base, feel free to PM me.

That FLV Cream is nice, isn't it? I have to resist the urge to Frank's Red Hot that stuff.

by cyantacoalmost 9 years agoMixologist

Yes, it's amazing. I absolutely love thee spiced cream it gives. It's the best with some nillas and a little fresh cream o go as a cream base for any berry/fruit (kiwi is my fav)

While we're on the topic of yogurt, I think another worthy additive to mention is FA Oba Oba. It adds a silky vanilla note to yogurts and some mouth feel.

2 points

by ID10-Talmost 9 years ago

I think /u/CheebaSteeba would agree with you on that one; he's mentioned that it will probably be featured in his much-anticipated (by me, anyway) Mango Lassi II recipe.

2 points

by thedirtyprojectoralmost 9 years agoMixologist

Yeah he mentioned it when I did my flavour review on Oba. Such an awesome understated flavour that doesn't get enough love. I think it would work great in a creamy vanilla base too.

Oh, this is a fun one! Don't listen to /u/MatthewKocanda Idiot.

FLV Greek Yogurt is a nice blend of creamy and greek yogurt. Not too tangy, not too sweet. Just right. Great stand alone mixed with some fruit.

FA yogurt has the most traditional yogurt flavor. Decent amount of tang with sweetness included. Doesn't have the slightly bitter flavor like most greek yogurts do.

FW yogurt is probably the most bland yogurt, which can be a huge positive if you just want a hint of yogurt. There's nothing over powering in this flavor, but still reminiscent with an ever so slight amount of tang, yogurt flavor, with no bitterness or off flavors

TFA greek yogurt is pretty much just vinegar.

2 points

by CheebaSteebaalmost 9 years agoFrugivore

TY for the notes brotherman, still need to try that FLV Yogurt of mine. Do you think the TFA is even worth trying?

3 points

by Vurvealmost 9 years agoVurve with the Swurve

FLV Greek yogurt is definitely a must have for this flavor profile.

I'm sure TFA greek yogurt has a place somewhere, but it's definitely not in a yogurt recipe

1 points

by ID10-Talmost 9 years ago

Any thoughts on CAP Creamy or CAP Greek?

2 points

by Vurvealmost 9 years agoVurve with the Swurve

CAP Creamy falls into that middle ground area. Not amazing enough, or bad enough, to stick it in my mind. The flavor profile is a bit lacking and needs help from another cream or yogurt.

CAP greek yogurt is in a similar boat, but if I recall correctly, there was also an essence of melted plastic
