Description:
Sweet, ripened blueberries swaddled in a thick vanilla custard with a generous dusting of powdered sugar.
Story:
As I continue pursuing the ever elusive Cereal Milk by Momofuku Milk Bar, I decided to take a break to clear my mind and explore other options. One of the other flavor profiles that I wanted to tackle on my list was a custard, not any custard but a thick dense custard with some light fruit.
After doing a research, I realized that a lot of people had problems nailing a blueberry custard. This is my rendition of it, and I hope it's as well-received as my strawberry milks.
The goal was to juxtapose the thickness and density of your favourite eggy vanilla custard with a light, playful fruit. The result was numerous reiterations and tweaks to get it where I like it. The end recipe is as follows:
Baeberry Custard
Ingredient|% :---|---: TFA Blueberry Wild|4% FW Blueberry|3% FA Bilberry|0.5% CAP Vanilla Custard|4.5% TFA Bavarian Cream|1% CAP Sweet Cream|1% CAP French Vanilla|1.5% FA Meringue|1% Flavor total: 16.5%
Steep time: 4 days!
Optional: 1 drop per 30ml MTS Vape Wizard
Notes:
The Blueberry Base - The reason why I went through so many revisions was because I wanted to lock down the blueberry. Everyone who tried to tackle this profile knows that blueberry is a cruel mistress. Too little and you get almost zero blueberry. Too much and it yields a chemical, almost musty taste to it.
The combination of TFA Blueberry Wild/FW Blueberry and FA Bilberry makes for a rounded and full-bodied blueberry. On the inhale, the blueberries are on the milder side but on the exhale is where it really shines as the blueberries playfully dance on your palate.
The Custard Base - CAP Vanilla Custard is pretty self-explanatory. It's eggy, buttery, rich and sumptious. No other custard comes close. CAP French Vanilla perfectly complements CAP Vanilla Custard and together, they make for a really rich vanilla-forward custard. I utilized TFA Bavarian Cream and CAP Sweet Cream to bring out the buttery and dairy notes. Lastly, I used FA Meringue because I've completely dropped TFA Sucralose from all my recipes. FA Meringue adds to the creaminess and sweetness of the custard, and also, perfectly accentuates the blueberries.
I rarely use MTS Vape Wizard but I personally feel that it works really well in this particularly recipe. It helps to give a thick mouthfeel as well as meld the flavors together.
So there you have it. Cook it up, shake it religiously every day and enjoy after 4 days!
I LOVE Blueberry so I'm pretty stoked to try this. Seriously, blueberry beats strawberry 100 times out of 100.
I haven't tried to add BB wild to my BB base yet, but FW BB and FA Bilberry do make a great combo. It's been awhile since I used wild, but looking at my notes it should work awesome to round out that blueberry flavor.
Looks good. Unfortunately I'm one of those weirdos who hates CAP Vanilla Custard. What would be your personal suggestion for a replacement? I could use FLV Vanilla Custard as it's quite creamy and eggy without that horrid (to me) diacetyl taste.
I've never gotten eggy from FLV custard. Standalone it's slightly nutty, sometimes.
Strange, I always pick up a slight eggy note and cream with very little vanilla. Never picked up on a nutty note to it whatsoever.
Just curious, why CAP Sweet Cream over TFA's?
You can sub TFA for CAP. I like CAP cause it feels creamier and has less of a cheesy note to it.
Looks good, cheers! Guess I'll finally have to pick up FW Blueberry, been putting it off for a long time but everyone seems to swear by it :)
This sounds very delicious! I don't have the cap French vanilla though. Ive got Holy Vanilla and Shisha Vanilla. I may have to try a substitute although Im loathe to mess with folks good mixes! I will give it a shot tonight. Thanks for the recipe!
Holy Vanilla at .5 - .75% in place of cap french & thank me later.
Looks tasty, might I recommend LA Cream Cheese Icing in lieu of the FA Meringue. Don't get me wrong, I love Meringue, but for custards I feel like the Cream Cheese Icing brings more buttery goodness while still being a good alternative to sucralose.
For a non-custardy blue cream sauce
Blue Sauce | % ---|--- Vanilla Bean Ice Cream (TFA) | 2.86 % Greek Yogurt (TFA | 1.07 % Fresh Cream (CAP) | 1.07 % Biscuit (INW) | 0.30 % Cream Cheese Icing (LA | 0.25 % Blueberry Candy (TFA) | 2.00 % Blueberry Extra (TFA) | 1.50 % Wild Blueberry (TFA | 1.50 %
Flavor Level 10.55%
Age time - vapeable day 1 ideal day 3 or 4
This sounds amazing. I have been struggling with a blueberry base for all the same reasons you described.
Also, your custard base is very interesting, my base has been coming out "flat" and uninteresting.
I am going to mix up a batch as soon as my other Blueberry flavors come in. Thanks for sharing.
In the almost 2 years since I started mixing I have never been able to conjure a blueberry recipe that I totally enjoyed. Most were adequate at best and I just said fuck it. But after reading your post here I may have to blow the dust off my BB concentrates and give this a go. If half as good as it looks I'll be happy! Thanx for sharing.
OP, you need to try MF Blueberry. I make a base like this
- 4% Blueberry FW (best compared to wild/extra IMO)
- .7% Bilberry FA (accentuates the depth of the blueberry)
- .5% Forest Mix FA (adds a nice subtle black currant tone)
- 3% Strawberry TFA (I use this to tone down the blueberry, you can barely tell it's there but it still helps make it more of a rounded flavor)
- .25% Blueberry MF (the beat berry ever but you need others to balance it)
Thanks fawgmachine
