Using Monk Fruit & Stevia Together, Looking for Ratio Suggestions.
submitted about 9 years ago by bikeatefoucault

So, I've some Monk Fruit extract from nudenicotine, and some of their Stevia on the way.

Both are their 10% solutions.

Last batch I made at .4% Monk Fruit (1ml in 240ml) was definitely better than the ~1% batch I made, but I'll want to drop down even lower next time.

With the above in mind, does anybody have any ratio/suggestions for using both together?

I've been using Monk Fruit at 1 drop per 30 mL or 1 drop per 60 mL, and it is providing a ton of sweetness. That might even be overkill in some recipes.

Not sure about your question on combining the 2, but I can only recommend using a tiny amount of Monk Fruit because a little dab goes a long ways. Just take a lick of a drop and you'll know what I mean.

Thank you, this is useful.

Do one or the other. You shouldn't need both in a recipe; but if you plan on using both anyways dilute both by 50% & then start at .1% each. They are much sweeter than sucralose, & upwards of several hundred times sweeter than sugar, IIRC.

Can you explain, exactly, why one would not want to use two similar ingredients, but with slightly different characteristics in a recipe together?

50/50, and then half the total I was using before, was the direction I was going to go, as it's pretty obvious, barring someone with actual experience chiming in.

They're pretty new. I've used both but haven't really isolated the distinction between the two. I'm not saying it's wrong to ask about it but you're probably in a position where you'll be one of the few people with experience. You'll have to DIY and let us know how the experiment goes :)

Guess I'll be mixing up a couple different batches to compare then...

Does any of the above mentioned gunk coils quickly?

Not that I've discovered, and I'm apparently using too much.

It's kind of the point of these alternative sweeteners, they are much more heat stable than sucralose.

i checked the NN site and it says the monk fruit is at a 5% solution. "We blend these mogrosides into a 5% w/v% solution in VG, ready for your dilution." also noticed you can now get it in PG.
