As promised on our most recent episode, we are taking it back to the roots of Modest Monday

Dewberry Cream Clone (WIP)|% ---|--- CAP Honeydew Melon|4 FW Sweet Cream|1.5 TFA Strawberry Ripe|0.5 TFA Wild Blueberry|0.5 CAP Lemon Lime|0.25
Since we are starting off the new version of Modest Monday with fruit and cream, I decided this would be a good time to debut my dewberry cream clone, especially given its versatility.
-
CAP Honeydew Melon - This is probably my new favorite of all the honeydew and melon flavors I've tried so far. It's very sweet and candied. No rind flavor or earthiness it at all. This helps lend itself to a great fruit/melon base for a cream.
-
FW Sweet Cream - This recipe really got me into playing around with sweet creams and I find them to be a fantastic flavor profile. It's got tang, cream, and dense mouth feel. Reminds me of cream mixed with yogurt.
-
TFA Blueberry Wild and Strawberry Ripe - These two flavors are purely for accenting the melon. They are both bright, sweet, and candied. A perfect match to further enhance the honeydew. At only 0.5% each though, it's not enough to throw off the flavor of the honeydew.
-
CAP Lemon Lime - This adds a nice little sharpness that is definitely present in the original juice in some realm or another. I don't think it's necessarily this flavoring for the original juice, but there is definitely a splash of lime. It plays with the tang of the Sweet Cream and the candied fruits very well.
This liquid ultimately end up tasting like melon yogurt smoothie parfait type of drink. Not a common profile you'll see around here, but I love the tang and sweetness.
As for possible substitutions, the most important factor will be to stick with fruits that are bright and candied. The sweetness of the fruits against the tang of the sweet cream is vital to making this recipe work. I tried this with FW blackberry and FA Bilberry, and it started to taste like hot garbage.
For substituting the cream, you could probably use just about anything. TFA whipped cream would be a good first choice since it also has a little bit of tang to compliment all the sweetness. Otherwise, a nice dense flavorful cream would be best to, like vanilla bean ice cream or fresh cream.
Lastly, this is definitely a work in progress, but I'm hoping that sharing my work up to this point will encourage other's to throw in their 2 cents on it.

%|Jack's Fruit and Cream ---|--- 5%| FA White Peach 3%| TFA Juicy Peach (SORRY JOSH) 3%| CAP Sweet Cream 2%| TFA VBIC
Not much to say about this recipe. The cream and VBIC are fairly interchangeable with other dairy concentrates; Fresh Cream, Bavarian Cream etc. for people who have fucked-up tastebuds that tell them VBIC tastes like pepper or Sweet Cream tastes like socks.
Greek Yogurt around 3% instead of Sweet Cream gives a really good yogurt/smoothie type flavor and mouth feel. Personally I don't like Greek Yogurt all that much, but it's worth mentioning as an option for any fruit & cream blend.
Also benefits from a tiny bit of Lemon Sicily and/or TFA Raspberry Sweet, for a slightly more complex flavor. 1-2% for Lemon Sicily, 4-5% for Raspberry.
Thank you for making Monday's whole again. Last Monday sucked and I filled the void with some shitty chef Ramsey show that had the contestants making godam french fries. Cheers.
Yesss, this means Beginner's Blending is on. You all definitely deserved a break but I'm glad it's back to business as usual.
As far as the post goes I'm happy to see fruits and creams that aren't just strawberries and cream. I struggle to taste strawberry so it's a bummer it's so many people's favorite to pair with cream.
How can you talk about creamy goodness without bringing in TFA vanilla bean ice cream? That stuff is like Frank's red hot sauce of vaping. I put that shit in everything
it adds a nice creamy mouth feel without over powering the other flavours nicely at 3%
Looking forward to listening to this! I think this is such a great beginner topic because you can make both simple, and complex fruit + cream mixes and they have a wide margin for success. Recipes look good, I'll probably whip up Jack's but I am missing the FW Sweet Cream unfortunately =( One of my favs is Forest Fruit + some cream, I love that one!
