Advice on molasses?

Hello all!

I've been trying to achieve a shoofly pie juice for awhile now, but decided to work on the molasses first, in hopes that I could add my normal crust base to it and make it more like a shoofly pie.

Anyway, the closest I've gotten was a combo of
TFA Marshmallow 9%
TFA Brown Sugar Extra 3.5%
TFA Meringue 2%

This combo required about a month of steeping before it started to taste mostly like thick brown sugar. Am I trying to hard? Should I just try Brown Sugar Extra and some Meringue or Irish Cream? I've tried searching the subreddit, but unless I missed something, it doesn't look like anyone has made this request before.

edit: I have tried TFA molasses and wasn't a fan. It was lackluster. It didn't help to thicken up the taste of my above recipe, so I deemed it worthless, since I was getting a closer flavor without it. Please let me know if I'm missing something about this flavor, but imo its basically useless. Had no taste on inhale in percentages up to 8% in my experience.

Have you tried adding any TFA RY4 Double? Got a different type of caramelized dark brown sugar flavor to it that may help.

Have you considered including a maple syrup flavor? It may help a lot. They have similar qualities (maple syrup and molasses). Also, I don't know if you have it, but FLV Gingersnap defintely has molasses notes in it.

EDIT: OH! Real Flavors has a molasses flavor. Has pretty decent reviews on ELR

Oh, thanks. These all sound like excellent ideas. I had considered some kind of gingersnap or holiday spice but I haven't tried it yet. I'm waiting on some FA maple syrup but I might try some INW waffle for the maple syrup taste and hope the waffle blends well into a pie crust.

oh right, totally forgot to mention that in the post. I have tried it, and its really disappointing. It doesn't have much of any body at any percentage I've tried it at. Mostly just useful for an aftertaste. I've tried adding it to the recipe I have above and it didn't help much.

I'm afraid I'm not much help then, but you might have some luck using a "thicker" marshmallow than TFA's - FLV, FA, CAP marshmallows all seem thicker to me than TFA. Might even try adding some TFA Toasted Marshmallow as well. The toastyness might combine with Brown Sugar in a way that tastes more molasses-y.

Ah Toasted Marshmallow sounds like a great idea. I have that, and the FA Marshmallow. I know I tried FA once, but didn't let it steep nearly enough to get the taste I wanted.

I hear the dx brown sugar is quite a bit different in flavor; it's also much darker. I' picked it up but haven't tried it yet. I'll try to do some testing soon to let you know if it's got a bit of a molassesy taste to it. Was the flavor on TFA molasses good on flavor just not texture? Or were both lacking?

TFA Waffle (Belgium) gives me a molasses flavor, like they took a waffle dropped it in molasses and served it soggy and covered.

One of my caramel pie flavor combos is this:

  • Brown Sugar (TFA) - .75%
  • Vanilla Custard (Cap) - 3%
  • Caramel (FA) - 2%

You can play with that, I used it mainly with different combos for a Pecan Pie and I wanted to get the sticky creamy filling. Try a cream, a low percentages of brown sugar and then something that resembles the flavor you're after.

The predominant flavor there is maple, not molasses. The caramel pie recipe looks fantastic.

Inawera Kent. It's supposedly a tobacco, but I get a rich, thick, sweet, brown treacle and dark caramel from it. Beautiful stuff and often overlooked. Good at 3-4% standalone, 0.5-1% might suit your recipe, any higher and it takes over everything else

I'm pretty new, so I can't give you advice on that particular recipe, but I just added TFA Molasses flavor to my cart this morning, although I know little-to-nothing about it yet. Not sure if you've tried that yet or not.

Yes I have! It wasn't very helpful and I actually forgot about it. It doesn't have much body and didn't help to "thicken up" the taste of my other brown sugar recipe.

Oh, that's too bad. I was hoping it would help me with a Molasses cookie I'm trying to make. Still going to try a 10ml just to test.

FW Brown Sugar might have that thickness you are looking for. Be warned, it will gunk your coils. It also make me hack a bit more than usual.

heads up, if you are still looking for a molasses, looks like real flavors just came out with one recently.
