I know this sub seems to be over doughnuts but I wanted to chime in with some updates on my glazed doughnut base.
Shake and vape seems to be on point but I am waiting for it to steep.

I've been working with /u/Nutz_of_Brin on a plain frosted donut for about two months now; between the two of us we've gone through probably 16 different versions. I agree that CAP and TFA Donut flavors are out of the question... They're just wrong. Both weird and gross in their own ways.
I'm missing the cereal to try yours out and give you some feedback, or I certainly would. I will say that Brin and I seem to be getting closer and closer. The key elements seem to be FA Joy, FA Meringue, and INW Biscuit. Getting the %'s right is a challenge and making the glaze seem wet and sticky like the glaze on a donut is also proving difficult. It's also possible that another base ingredient might be needed to get it more doughy and not too cakey or biscuity. Experiments with Cake Batter to provide that have fallen flat. Sugar Cookie performed slightly better but might be inferior to just finding the right Joy/Biscuit balance. But the basis for a donut is right there. So close I can... well, taste it.
If you want to see where we're going with this, try 2% Joy, 1% Meringue, 0.5% Biscuit. Obviously not a finished product, but a starting place that just needs some more doughyness and some wetness for the glaze.
Or don't try it, but just know that there are at least two others here who are definitely not over donuts. I feel you man. Whatever you do, don't give up.

This mix I kinda meant to leave them out to see if maybe my thought process was wrong/too "bronutty".
I tend to experiment a lot with cereal too with my doughnut mixes, since they tend to have some bakery notes along with sweetness.
All that to say, I agree that meringue, joy and biscuit (or a biscuit like flavor) are part of the overall equation.
The Joy, Meringue, and Biscuit mix seems to have two missing elements to me, like I said, something more doughy and something wet. If you try it and agree, maybe you can figure out what those two ingredients are and finally nail down the elusive donut.
Your thought process was not too "Bronutty." There are some other damn fine pastry recipes that use these ingredients.
Try /u/insigmatheory 's French Quarter clone. Delicious Joy/Meringue/Biscuit recipe. Its creator says still needs some work to be a spot-on clone. I don't care, never had the original juice. What it is, is a spot-on beignet. A French donut. How hard can it really be to get from Cafe du Monde to Krispy Kreme? A lot harder than I originally envisioned, for sure, but I refuse to believe it is impossible.
See also: /u/Botboy141 's Elephant Ears, and a rip off of that, /u/queuetue 's Dumbo Ears, which I am lovingly vaping at this very moment.
And just for fun, even though it probably won't help with building a donut that actually tastes like a donut, try /u/umpquastl's "23" which is a weird, wonderful recipe that really shows how much flavor you can get out of just a small amount of these ingredients.
Edit: /u/chrisdvr1 - I'm editing this comment to tag you, not to drag you down into this donut rabbit hole, but because of your enjoyment of Dumbo Ears - I thought you might want to take a look at these other recipes.
What do you feel like the beignet is missing that the Krispy Kreme has? I know you said doughyness and maybe some more glaze, but is that all? I'm sure you've tried LA cream cheese icing for the glaze. I don't believe I've had a beignet before. I'm going to try that recipe.
I haven't had a Krispy Kreme in like 10 years but I remember them being super buttery. The most buttery, light, airy donut I've ever had. This is why I avoid that store actually.
I'm currently trying 2% Joy, 1% Biscuit, 2% meringue, 1% FA marsallow, 1% sucralose.
Waiting for a couple days, I'm getting burnt out on this

2% of FA Joy will just be a malty mess. 0.5 - 1.0% works much better in every recipe I've used it in. But I definitely agree with the use of FA Meringue and INW Biscuit. My "plain" glazed donut recipe does make use of 4.5% CAP Glazed Donut as its base (I actually like it, and don't get the "play-doh" flavor that many people complain about unless I use it at above 6%):
- 4.5% CAP Glazed Donut
- 2% FW Cake (Yellow)
- 1.5% FA Meringue
- 1% FA Marzipan
- 1% TFA Cheesecake (Graham Crust)
- 1% TFA Whipped Cream
- 0.75% INW Biscuit
- 0.5% FA Joy
I don't want to "argue" with you because there is one thing we can all agree on - taste is subjective. But if you look at my next comment, I just listed three examples of Joy 2% that aren't in any way malty messes to me or others who've given feedback on them - French Quarter, Elephant Ears, and Dumbo Ears. Try that French Quarter clone. The "23" actually does taste ... fermented? I think is a good word for it... and it only has Joy at 1.4%. It just depends on what you mix it with, I think.
You aren't alone in not getting a Play-Doh taste from CAP Glazed. You might not even be in the minority -- I think people are more vocal about detecting gross off-notes than they are about an absence of gross off-notes. Anyone not in the Play-Doh camp should appreciate your recipe. Hell, completely remove the CAP Glazed and if you don't mind the coil-gunk from FW Cancer Cake, and I think it looks absolutely delicious. No longer a donut, but steep that long enough for TFA Whipped Cream to get good and there's no way that's not a tasty cake recipe.
But I got hit with an almost perfect take-me-back-to-prek Play-Doh flavor at 4% CAP Glazed standalone. I makes me hesitant to try it. If you tasted the Doh but found a way to mix it so that it was masked, I'd be all over that. But not tasting at all it below 6%? No, thank you. Sincerely thank you, not sarcastic or snarky thank you, but no.
I have been flavor testing and messing around with CAP Funnel Cake and if you guys are searching for a slightly sweet fried bread flavor I highly suggest testing it at 5% and about 3ish days steep. The flavor needs a little bit of support but definitely has that deep fried sugar bread taste down pat.
I've been eyeballing that one. Any off notes? Any chance I could talk you into trying that French Quarter recipe and comparing it to CAP Funnel Cake?
I'm the bottle it smells a bit like the ole same song and Capella dance (play-doh) but once you drip it out onto the wick and sniff it it's fine. Fried bread taste through the inhale and exhale. Every so slightly a a sweet powdered sugarish taste on the exhale. I think I may get a very minute powder feeling in my mouth but it may be my mind messing with me.
I'll look the French quarter recipe up and give it a shot if I have everything.
damn it... i finally get joy for the 2-3 random recipes with it in there' now i gotta go get biscuit too. I've been on the donut hunt myself recently. I haven't completely written off CAP & TFA Donut flavors yet, but i am one of the people that get play-doh taste from it a bit. Been trying cake batter, meringue, and various cupcake flavors to kill the play-doh notes a bit.
and a super long steep time seems to come into play with the donut flavourings for some reason as well.
Since this might as well be the Donut collaboration thread, can someone test this out?
I just made it, shake and vape is pretty good. Only been 20 minutes, but I think this is promising.

Is the holy vanilla vital? I was thinking maybe vanilla swirl or vanillin?
It's not. Vanilla Swirl is like poor man's Holy Vanilla. Try it with Vanilla Swirl and just know that if you had Holy Vanilla, it would be better. I'm tasting Brin's version at this very moment and I got a weird chemically off taste -- just the slightest hint of it -- at first, but it seems to less and less detectable the more of it I vape. With that much meringue and joy in there I'm actually surprised it's not disgusting.

I feel like there are 3 main notes to the doughnut. Dough + glaze (sweet) + additional flavors (vanilla, cinnamon, etc).
I feel like we are close to the dough, we need work with the glaze, and the additional flavors should be pretty easy to add on top. The hard part is that most of the flavors we work with contribute multiple pieces. Example: vanilla may add to the sweetness of the glaze, etc...
I am starting to have my doubts on biscuit too, I feel like it's a lot of AP, and makes things have too much "crunch". Maybe that's just me.
Meringue and joy feel necessary though.

Did you try it with an actual donut flavoring? What made you decide not to include one in the final mix? Just curious. I've never been able to get a real tasting donut. They always come out plastic-like
I don't have lucky leprechaun or I would. A GOOD doughnut is a white whale for sure. And to the other comment I suspect he didn't use any doughnut flavors for exactly the reason you said, all of them except chocolate doughnut or not very good.

My brain keeps telling me CAP VC V1, but my taste buds keep saying HELL NO to the attempts to work that in. We'll see how the latest steeps out but my hopes are not high. I think it just plain does not get along with Joy. Bavarian Cream could be the answer to making Biscuit into something more creamy/doughy and less... biscuity.

Well if this tread has anything to say about it, you'll probably be fine omitting the LLC flavor. We've got top minds on this doughnut recipe. More science is needed.
I want to add that I have been playing with Banana Cream LA as well at low percentages.

Fyi, /u/ID10-T and I are working on a straight glazed donut. Maybe you have other ideas, but we want the glazed down before adding anything else.

I can't get Joy to work in the doughnut recipes I mixed so far, it's too pungent tasting for me. Loco Mojo mentioned Funnel cake and I like it but it gets too play-doh'ey for my tastes. I kept it low and opted for biscuit as mentioned in this thread. Right now it tastes more powdery than glazed but it's not a bad start
Up your Meringue to counter the Joy.
I've got a 2% Joy, 5% Meringue, really helps offset that "pungent" taste you speak of, and Sugar Cookie helps as well.
If you have everything, I highly reccomend the V10 Donut I posted and see what you think. I think it's close to a Glazed Doughnut
I'm missing holy vanilla. How essential is it to the recipe? could I sub it for FA vanilla's or TFA Vanilla swirl? EDIT...looks like you answered this question already. I think I'll give this recipe a go with another vanilla to see how the meringue and joy work at those percentages
