Howdy all!
Today's topic comes in spirit of last week's episode where I created the mango peach cream and offered it as just a shell of a recipe to be improved upon.
Learning how to adapt a recipe successfully is bit of a corner stone in becoming a great mixer. It's essentially just the process of learning to take the parts of a recipe you like and then improving upon them or changing them to fit your taste.
This process works in stages, just like standard recipe development.
- Identify a flavor profile you would like to achieve. This will help narrow down your search. I wanted a smooth mango cream.
- Find an existing recipe you think that looks good. Mix it up. Vape it. For my experiment, I started with /u/cheebasteeba's recipe Mango Lassi on All The Flavors.
- Identify the main ingredients that make up the flavor profile you want to take away from the recipe and mix it. I chose to mix up INW mango, TFA Philippine mango, and CAP creamy yogurt.
- Focusing on one flavor at a time, start to make adjustments to build your base. This may take a few tries until you find something you like. I switched out TFA Philippine mango for CAP sweet mango and CAP creamy yogurt for TFA Bavarian cream. It was also at this point I decide I wanted a mango peach cream, then added FA white peach.
- Once you have built your base, decide what enhancements you would like to make. This is the step I left my recipe at for you guys and gals. Personally, I added a little bit of FA whipped cream to lighten the cream and make it a tad lighter on the mouth feel since I didn't want something super sense. CAP vanilla custard would have been a good choice in the opposite direction.
- Tweak your recipe as normal.
So, as you can see, we have something completely different from cheebasteeba's recipe and completely our own, but directly inspired by his.
