Came up with a dewberry taste-alike that I think is pretty spot on and would like some input

I wanted to make something like dewberry cream from kilo so I searched around and found a post here. I tweaked it pretty generously and came up with this.

  • TFA Honeydew 3%
  • TFA Strawberry Ripe 3%
  • TFA Marshmallow .75%
  • TFA Sweet Cream 2%
  • TFA Vanilla Bean Gelato 1%
  • 10% Vanillin solution @ .5%
  • INW Lemon Cake 1 drop per 10ml

It needs a night of steeping. Shake and bake works but the vanilla aftertaste bugged me until it sat for a day. Everything else seemed pretty close to what I recalled flavor wise, still lacking something. This juice looks clean though, and isn't neon green like the retail stuff.

You could most likely sub the strawberry because it acts more as a back up to the Honeydew. I even added a couple drops of bilberry to change it around. I like Honeydew as a foreground fruit flavor. Not acidic but still fruity and juicy.

The marshmallow gives the fruit that fluffy chewy feeling and the Gelato and lemon cake give it a little bit of tang and substance. You may be able to use meringue in place of marshmallow at a slightly lower percentage. The lemon cake is strong, one of a kind, and in my opinion necessary.

The cream and vanillin make a pseudo vanilla custard that doesn't overpower like CAP vanilla custard. I guess you could use cap but I'd start low and add as needed. The cream is one of the areas I feel needs the most work.

Interesting use of lemon cake, definitely agree its very strong. It really makes it self known not matter what percentage I seemed to use it at. A lot of the yummy classic line seems to be very concentrated.

The times I had it it was fairly colorful, maybe more yellowish. I was more so looking for input and help developing it more, rather than just sharing it as a complete recipe.

Is that alright, or should I delete it and just post it there?

Nah, it's fine. I thought you were sharing a finished recipe, my bad. Personally always felt like Dewberry Cream had more than one honeydew in it. TFA Honeydew by itself is too authentic tasting and has way too much of the rind smell. It need something else to tame it, like a cantaloupe or something. Try CAP Cantaloupe or FA Melon Cantaloupe.

I think there's more than one melon in it. I always get a chalky taste from dewberry cream too.
