Hello Reddit juice-masters!
I'm trying to make a great juice that tastes just like Strawberry Jam, but am having a really tough time getting the flavor right. Has anyone made Strawberry Jam juice before? I'm really hoping to get some guidance on this. Maybe even a full recipe so I can compare.
Here is the strawberry jam recipe I have been playing with for the last month or so.
(FA) Billberry - 0.35%
(TFA) Dragon Fruit - 1.15%
(TFA) Strawberry - 2.5%
(TFA) Strawberry Ripe - 4.5%
(INW) Strawberry Shisha - 1.5%
The strawberry and strawberry ripe are the body of the flavor. Strawberry shisha has a jellied taste to it that adds to the jammy aspect. To round out and balance everything I have found that TFA Dragon Fruit works well, but the thing that really set this off for me was the Billberry. It adds a sour note and gives the jam a heavier feel.
FLV Strawberry is quite jammy.
I'd use that as a base, maybe a little TFA Strawberry Ripe for some complexity and top notes, and a touch of TFA Strawberry to add some brightness.
Add some FA Joy for jam on toast.
Definitely going to check out these recommendations and follow up with how it came out! I'm willing to try a variety of options, so please if anyone else has a thought I'd love to hear it.
I was going to recommend FLV Strawberrry & INW Strawberry. I never liked strawberry ripe. It evaporates/degrades quickly & becomes like vaping sweet air IME.
Yummy strawberry jam base:
- TFA Ripe Strawberry 3%
- INW Strawberry Shisha 3%
Strawberry Jam Cracker recipe:
- INW Strawberry Shisha 3%
- TFA Strawberry Ripe 3%
- CAP Graham Cracker 3%
- TFA Graham Cracker Clear 2.5%
- TFA Vanilla Swirl 2%
- FA Vienna Cream 1.5%
- INW Biscuit .35%
Let steep as long as you have the patience for but at least a couple days. I constantly fiddle with this one as it can be tricky to get the graham cracker flavor to stay put but this is delicious as-is :)
Notes:
INW Strawberry Shisha: Personally INW Strawberry Shisha (and straight INW Strawberry) is the only strawberry flavor I've tried that actually tastes like strawberry. Everything else I've tried (TFA Strawberry, CAP SS, FA Red Touch among others) all taste "good" but mostly taste like candy. I do enjoy them in other strawberry juices but IMO they are better suited for flavor modifiers or enhancers.
TFA Strawberry Ripe: Even TFA Strawberry Ripe barely tastes like an actual strawberry but here it serves to take the legit strawberry flavor of INW and add a touch of, well, ripe strawberry, freshly picked.
CAP Graham Cracker: When doing standalone flavor testing this was the only graham cracker flavor I had that tastes like straight-up graham cracker. It's sweet and airy but still with a bold, robust flavor. Wasn't a fan of TFA Cheescake Graham Crust or TFA Graham Cracker Clear when I did standalone flavor testing but TFA GCC works great here to flesh out the CAP.
TFA Vanilla Swirl, FA Vienna Cream, FA Cream Fresh: I use this particular combo of vanilla/creams in some of my fruit mixes and I love it. It's not heavy or necesarily syrupy, it works very well to complement the sweetness of the graham cracker and strawberries. In fact it's quite light IMO.
Fresh Cream is in your notes, but not the recipe. Did you mean Biscuit?
Any thoughts on (INW) Wild Strawberry? I can't get that sh*t to work no matter how low I go.
I know how you can use it. Start a line of children's perfume and your first scent could be "Wild Strawberry." Oh my heck, that stuff is terrible. It reminds me of strawberry perfume. I ruined a 240 ml bottle of juice thinking it was strawberry shisha. I actually would give my bottle away.
If it smelled at all like strawberry, I wouldn't have been so weirded-out, but, to me it smelled like disposable plastic diapers.
Now that I have some mixes with it that have been sitting for 30+ days, I might be less scared to try them, but, yeah, I fear you may be right.
I've used wild at 1% max with 4% Sweet. Goes bloody so so well with MF dark chocolate. Wild needs a low % & a long steep to mellow out to be appreciated. As does MF. Which makes them a great pairing.
I salute your balls, sir! I used wild at 0.50% and thought it was WAAAAY too much, but, now that I sniff a modified Strawberry/Rhubarb Pie recipe that smelled awful last month, it's really mouth-watering now.
I hope it's as good as it smells. I'll report back, but, I suspect you're 100% right about the long steep time on INW Wild.
