So the other day i wanted to mix up another batch of my vienna applestrudl.The original recipe had 6% FW Green Apple in it and it had just the right amount of apple,bakery notes and sweetness. Because i did't have enough Green Apple left i decided to combine it with FA Fuji which is a great apple as we all know. I made a mistake and ended up with too much apple so in the end the apple-mix was way too sharp and had too much of a tartness. I thought i could save the batch by adding a bit of Ethyl Maltol to bring down the sharpness and the tartness of the apples. Boy i was wrong.It did completely the opposite of what i was going for so the 30ml bottle ended straight up in the sink. Conclusion: * Never use to much of any flavouring in the first place.especially fruits which come with some tartness. * If you have to mellow down things like i mentioned before go with Marshmallow or maybe a hint of meringue.EM doesn't do the trick IMO.at least not for apple

EM is not a flavor muter by any means. EM is a flavor modifier.
Every individual aroma volatile compound reacts differently with ever heavy compound. EM can work as a fixative. It can either amplify or reduce the potency of individual volatiles.
Maltol (methyl, the non-ethyl version) is already a great fruit enhancer but EM is 4-6 times stronger than regular maltol.
I use EM with Lime flavors to cover up the terpenes. It either smooths them out or covers them, because 2% FA Lime Tahiti with 1% EM10 is a much smoother lime than plain.
Makes sense. Maltol interacts with terpenes quite well -- in fact, terpenes are used to extract maltol from natural items. I'd assume EM is even better with terpenes in terms of that.
Would adding a couple drops of EM help smooth things considerably, or would you recommend using just a low percentage like .5-1% to get that smoothing effect to lime flavors? Or try a few drops, and if it isn't smooth enough add a bit more to the mix until I hit the point I like? I'd just be worried about repeatability at that point.
that's interesting.it wouldn't occur to me that EM would do any good on lime flavors.i've been working on a strawberry-lime shake and i used FW Key Lime Natural as the Lime part.That shit is so strong even at 0.3% that is still up front and it still overpowers the Stawberry (ripe)@ 4% and Sweet Strawberry@ 5% Maybe it's just a bad Lime Flavor but that's the only one i had. You think EM would do any good here?
I could never do that to Lime Tahity, I love that shit the way it is. However Lemon Sicily isn't as intriguing even at 1%. Would EM help that, or what else would you recommend to smooth off the lemon rind taste?
I don't know why i had the stupid idea to use EM here.I guess i just had a mixing-blackout for a minute lol i already knew before that EM is not a good use for mellowing down shit. but hey,you learn from committing mistakes and that for sure won't happen again
