I need some advice on creating a base for a "roll"

I recently decided that my Cinnamon Roll recipes (7 months of mixing them) have a fatal flaw. They focus on the mixture of the baked part and the cinnamon together. Which isn't what I need at all. Instead of cheating and using a "Cinnamon Roll" flavor (eyes on you Flavor West, even though you're delicious) I should focus on the other elements of the cinnamon roll first.

I honestly want to get a base that has that baked roll type of taste. I have ideas: INW Biscuit, FA Joy, CAP Sugar Cookie (maybe, for that buttery taste), etc... but I'm not sure what combination of them would create the actually base for the roll.

I do note that I use Flavor West's Hazelnut at 2% because it gives the roll this nutty sweet flavor that is addictive and that can add a lot.

So far I know, Biscuit and Joy create a Donut base which could be bent to a roll maybe...

Sugar Cookie seems iffy to me because too far into it and I have Sugar Bear which is more of a Cinnamon Sugar Cookie type of flavor.

AP is my one and true hard to use flavor. It's most of the time an over-baked mouthfeel when I use it and I've used it down to .25%.

Brown Sugar? Maybe.

I've done a lot of research but a lot of "roll" / baked bases just simplify things and use Cinnamon Roll by Flavor West and wait for the Cinnamon to die down. Does anyone have any experience in creating this type of base?

dilute the ap mane. I can tell a difference between 0.1 and 0.2% of it. It has its places, but sometimes it is best left out. IDK if this is one of those times.

How about Joy with a touch of Torrone? Joy gives the yeastiness of bread and Torrone would give a very subtle confectionary/pastry touch. Maybe top that off with FLV Rich Cinnamon at a super-low ratio.

I used to use the dreaded FA yellow cake and CAP sugar cookie for a simple roll/cake base, sugar cookie adds the frosted element you might be looking for

You could try

2% CAP Cinnamon Roll Danish 3% CAP Sugar Cookie 1% FW Yellow Cake

And go from there with maybe some Joy/biscuit

CAP Marshmallow has a baked element to it.

Equal parts of FA Cinnamon Ceylon and FW Butter Pecan works well for the flavor part. Play around with it, but 2-3% of each is plenty. If you have the coin, FLV Rich Cinnamon <0.5% does wonders to the recipe as well. As for the roll, I haven't actually had much success, but I would think Biscuit and Joy would get you there.

Edit: I would leave out the AP, maybe add it in sparingly afterward if you really think it needs to be there.
