Atempting a Frozen Lime Fruit Bar and cant get the lime right. Any help?

I am a lime frozen fruit bar addict and am attempting to recreate that in a juice. I am having a very hard time getting the lime down.
Ingredients on the box list: Water, Lime Juice, Sugar, Citric Acid, Natural Flavors, Lime Pulp, Guar Gum, Lime and Lemon Peel, Carob Bean Gum, Ascorbic Acid.

Here is what I have so far:
4% Lemon Lime (Cap)
4% Key Lime (TFA)
2% Cotton Candy (TFA)
1.5% Lime Tahiti - Cold Pressed (TFA)
1% Mandarin (FA)
1% Koolada (TFA)
2 Drops Per 10ml of Sour

The lime is off. It is almost waxy tasting. Thinking of lowering Key Lime and bringing in more Lime Tahiti and Lemon Lime. Anyone have any thoughts?

More Lime Tahiti will definitely give you more of a tart, lime-zest flavor but it can get bitter over about 4-5%. Lemon Sicily also has some lemon-zest to it.

Drop cap lemon lime all together I find it's a weird lime flavor to work with and I don't see what it would add here. 2% cotton candy is a little high, even in skittlz blue raspberry it's lower than that. . Try 1.5 or 1. Key lime looks ok. Up lime cold pressed as it's your best tart lime juice flavor. Just where I'd go next in that mix but it looks like you have a good idea.

Fa lemon Sicily could add as well at low percents and if you still find it not sweet enough try cap tangerine.

Have you tried FA Lime Tahiti - Distilled? It's supposed to be more of a lime juice flavor that might fit better in the profile you're searching for

missing most of these to give insight on the flavors use here but i could see flavorah lime working nice in it .. like .5% or lower to help round out the lime/sugar combo going on in the bar.

been working on a lime gelati myself

flv lime at .75% is close all by its self. but it is definatly more of a candy lime. like those gummy lime slices or also reminds me of a lime flavored koolaid and similar sugary green drinks.

current attempt

flv lime .75%
tpa vanila swirl 2%* item 3
cap vbic 2%
cap custard v1 4%
tpa coconut candy 1.5%
sucralose 25% solution 2 drops per 30 ml

To be honest, I think you could completely remove the mandarin, lemon line, and sour.

Up the Cold Pressed to maybe 2%, and pick up INW Lime and add it at .75% to give it some of that good ol artificial lime flavor. I would also consider adding some FA Marshmallow at a low percentage for mouthfeel and sweetness, and maybe a touch of fresh cream to balance out the zest of the lime. I think ethyl maltol would help you out in achieving some sweetness, so Cotton Candy works.

Back the CAP Lemon Lime down to 1-2% and maybe skip the Mandarin, or try 0.5%.

It looks like most of your percentages are looking pretty good, but here's what I would change. Get rid of CAP Lemon Lime, it isn't going to add that lime focus you're looking for. CAP LL seems to be more of a sweet candy note than anything else in what I've used it in, and it definitely will take over the mix at 4% , so this is probably where you're getting that waxiness.

Drop that Cotton Candy to like, 0.75%. Anytime I use it over 1% in a mix, it just mutes the fuck out of everything after a day. I have honestly stopped using it altogether. Flavours like Meringue or TFA Strawberry in low percentages will achieve that added sweetness you're looking for.

Up Lime Tahiti Cold Press to 2% and you'll get a significantly better "lime zest" note that will help boost the tartness and slight bitterness of lime that you're probably hoping to achieve. Otherwise, looks good. I've yet to use Sour so I can't help there, but everything else is probably working.
