I'm wanting to create some nice fruity mixes, but they usually end up with a lot of throat hit, and I really enjoy smooth mixes. But I don't want to use creams. I'm open to all ideas and probably have whatever it is you recommend.
I use FA Marshmallow to great success in many fruit recipes. Adds a little mouthfeel, no cream, a little sweetness in some cases, and will help mute some of the harsher flavors a bit without making them a blubbery mess. Anywhere from 0.5% to 1% works well. In cases this doesn't work or isn't desirable, I use some EM like others mentioned.

This. I kept getting mad that marshmallow was muting my fruits so I didn't use it for a long time. All I had to do was stay light on the marshmallow and bump the fruits just a tad. The result is much better than without the marshmallow. I have a hard time not using it in every recipe. Just keep in mind that you might want to up the fruit percentages by 10-20% depending on which fruits they are and how much marshmallow you use.
A very small amount of triacetin will mute the top notes where you usually find harshness in fruits. It's packaged as smooth by a bunch of companies. Too much and it has a drying effect.
Are we talking one drop per 10ml? Does it affect the juice in other ways? I have it but have never used it haha.

Yeah you're right. I have found that it doesn't cover up fruits as much as the other heavier creams though. I'll give your EM suggestion a shot next solely fruit mix I try

A small dose of EM works best against Citrus harshness, because terpenes in general can be harsh & terpenes pretty much make up citrus vapes; but should work for other harsh fruits, too.

FA Meringue at like 0.75% has been my go to. It's not necessarily a cream flavour, but it has cream like properties. It adds a fluffy sugary note that I like better than using Marshmallow, because using marshmallow tends to mute a lot of my recipes after a steep.
.2% EM (10%) usually works for muting fruit harshness.
