I'm wondering what are the best creams to replace sweetener with? I have many of the popular creams, sweet creams, whip creams, normal creams, etc.
The basic idea would be to use a cream to replace sweetener in the hopes that it would gunk up the coils less, but still give that sweet flavor that we normal use EM or sucralose for.
FA meringue.
I use it at 0.25-0.5% in all of my cream based recipes that need sweetened.
It tasted like powdered sugar.
Two votes for FA meringue so far, good thing I got some. I used it mostly for milk type stuff, wonder how well it will go in a yogurt I'm working on.
I have used it in yogurts. Works good.
I have also used FA Caramel and FLV caramel to sweeten some creams and yogurts
I got FA caramel as well. Seen Wayne use it in a yogurt recipe as well.... my recipe is long off from his approche, but I might be able to adopt the caramel bit as a sweetener though (although so far mine juices color is crystal clear for the most part... caramel will darken it up. I love clear juices, for some reason they seem to keep coils and cotton cleaner longer).
Thanks for the reminder though, might have to try that one again.
FA Marshmallow adds a bit of sweetness as well (IMO).
I've used this before, but not much. I bought it because everybody was saying it added mouth feel to the mix (which is what I was using it for). I didn't know it sweeten it up much as well. I'll have to give that a try to.
I'm pretty excited because so far every flavor people have mentioned I own already
EM and inherent sweetness are way different than sucralose. EM is not a sweetener in the way that many people think it is. It doesn't make your juice "sweet". Sucralose does. Only sucralose (and a couple others like it) can make your juice sweet. Adding Meringue won't make your juice "sweet", but it will add an inherent sweetness to your mix. Sucralose works on your tongue, EM and aromas that perceive sweetness work on your nose. So in order to better answer your question, what kind of sweetness are you looking for?
Hey it's Wayne (big fan btw), what's up man.
Well, I've gotten sick of EM for the most part. I hate what it does to coils and cotton, and what it does (in higher levels) to mute flavors. Sometimes I feel like it gives a slight dryer feeling, or just less wet\moist\juicy (could be all in my head there though). I'll still use it in small amounts here and there. I've only recently got into Sucralose as a sweetener. It definitely packs a punch in the sweetness category, works real well for things like jolly rancher, fruit roll-ups, and candy type stuff. Since I'm new to it, my personal verdict is still out on how bad it is for coils and if it's worse than EM in that regard. I'm sure it's worse on my coils than not adding it all would be (but so far flavors I guess compared to what vaping pure VG would be). It does feel a little artificial or out of place at times in certain mixes, like in some custards or yogurts.
It's hard to describe what kind of sweetness I'm looking for since I'm by far a pro at this stuff... But I guess I was more looking for a way to cheat the system by adding different kinds of creams for added sweetness and saving myself from a coil killer juice. What made me ask the question is I've noticed I can get a fairly sweet note from adding things like CAP sweet cream to a juice that doesn't have any sweetener. I guess I wasn't to concerned with weather it was an on the tongue kind of sweetness, or a perceived aroma kind of sweetness (although that will be in the back of my mind in the future while mixing).
So in simple terms, yes you can kind of cheat the system. Adding sweeter flavorings like Meringue, Sweet Cream, Marshmallow, will give you some sweetness to your recipe and won't rape your coils. Start low, and increase to taste. People hate when I say that, but once you lock in that right percentage, you'll be able to use that knowledge in the future. Anyways, just remember you can only go so far with inherent sweetness. Anything past that point is where muting begins.
Thanks for the tops Wayne. Always good to hear from you.
Got any favorite flavors or combos in regards to what we were talking about? I know ever mix is different, but let's say the puzzle was....
An already slightly sweet creamy, custardy or yogurt mix that isn't sour\tart?
A yogurt\cream mix that still is a bit sour\tart?
A fruit combo mix that needs body and sweetness?
Not to put you on the spot or nothing. Not sure if the examples I gave are even enough info to make an educated guess.
Not a cream but Marzipan FA is sweet and buttery first then nutty second. Its an excellent sweetener in the right circumstances.
I like CAP Sweet Cream a lot. It's fairly neutral and sweet, and adds a lot of rich mouth feel. Works well to round out cheesecake or other bakery flavors, and Greek yogurts.
This is what I've been using mostly for this so far. Just wondering what others used as well.
TFA Vanilla Swirl is also good and sweet, with a nice rich mouth feel, but the vanilla in it is strong enough to become a major component of the overall flavor.
