How do I make the lemon in this recipe pop?

I've been playing around with this idea ever since I tried Smax's new juice, She's a Dime. It's like some kind of lemon bar cream thing. The recipe that I've been playing around with is kind of dull and muted. The lemon doesn't pop as much as I'd like. I'm thinking of getting a different lemon concentrate maybe? You guys are the experts lol

  • Lemonboy -

CAP Italian Lemon Sicily - 6.5%

TFA Sweet Cream - 6%

TFA Vanilla Bean Ice Cream - 2.5%

CAP Super Sweet - 0.5%

TFA Graham Cracker Clear - 1%

Citrus flavors get muted when you add a single cream or custard flavor to them, and if you add a sweetener.

You're adding 2 creams and a sweetener, so the citrus flavor is going to definitely get muted.

It's one of those things where I say "I need to lower these creams and sweeteners until the citrus pops".

Or play with citric acid if you really want to throw $20 at a 25 cent problem.

Ha, I've still got a few oz of citric acid laying around. I've got to figure out what to do with it. I made some hard candy using flavorings on Halloween, but I didn't think to put it in until after the fact.

I gave up on using it in juice though. I never really saw any positive results.

This is just what I needed to hear right now as I'm fanning away clouds of a "lemon bar" recipe that I'm trying to improve. I'll try lowering the Bavarian and Vienna Creams in it to see if that pops the lemon out. Thanks for sharing your knowledge.

Yeah, a different lemon. INW lemon mix and INW lemon are both pretty good.

Lemon Sicily was always a little flat for me. Try adding some lime if you've got it.

Editing to add that 6% sweet cream is a little overkill and I don't think it would taste very good. Might try it at 3 or lower.

Over 2% TFA Sweet Cream kills most fruit flavors in my experiences. That shit is thick.

EDIT: FA Lemon Sicily with the CAP ILS might round out the lemon more. I'd start at 1% with the FA unless you REALLY like lemon. But seriously, that TFA Sweet Cream is muting out your lemon flavor.

Take out the Cracker. Get TFA lemon/lime and ad 5% if you dont want it as tart, go TFA cirtus soda. Start at 5%
