Flavor of the Week: Graham Cracker

The purpose of this thread is to gather the community to explore a flavor and it's many uses.

We're not just looking for you to post recipes you have containing the flavor of the week, but looking for you to share your process as you develop a new juice using the flavor of the week.

This should help us all to better understand how certain flavors interact, and give us all a launching point to perhaps discovering new wonderful recipes. Please post new recipes created using this flavor as well as any and all tasting notes as main posts. Thought process is encouraged also.

While I definitely encourage you to branch out with this flavor and use some more rare flavors, I would encourage everyone to keep it in mind that others will not be able to try your recipe and comment or offer assistance if they do not have the flavors you are using. I would also encourage you to use this week's flavor as the "main" flavor in your recipe although this is not required.

TFA Graham Cracker (Clear):

  • Crisp, light cinnamon-sugar graham cracker.

Very light cinnamon notes, sugary. Not a great standalone, but great for adding an additional sweet "crunch". I typically use this when looking for an inbetween from INW Biscuit and FA Cookie.

CAP Graham Cracker v1:

  • Full-bodied cinnamon graham cracker.

The cinnamon is much more apparent in this mix, very similar in taste to their Cinnamon Danish Swirl. Once again can provide a crunchy boost in mixes, but is sweeter and the cinnamon note can blend very well into some mixes. This is used in a great deal of my cinnamon-pastry mixes.

Pairing: Peanut Butter, Chocolate, Vanilla, CUSTARDS (<3)

Mixing: Pastry enhancer, sweet, crunchy, crispy-cookie

Typically in mixes I use CAP GC, as long as even a low % won't ruin the mix with cinnamon notes. If trying to avoid cinnamon notes altogether I go for TFA GC + Brown Sugar. I am still on the hunt for a cinnamon-free graham cracker, but for now TFA and CAP are my go - to's.

X-post from the monthly thread. The graham cracker is very much a secondary flavor here, but still important. It helps transform the pastry from a light, flaky dough, to a darker, more fried flavor.

I think certain other fruits could be substituted here. I plan on trying a batch with lemon, and a batch with tangerine. Peach will definitely pair well with the liquid amber as well.

Fried Nectarine Danish

Flavor profile: Think something like peach cobbler, except with a sweet nectarine glaze instead of peach, over fried pastry dough (not quite like a danish, more like fritters), with some cream cheese and ice cream to top it off.

Flavor | Percent ---|--- AP (5%) | .25 Biscuit (INW)| 1 Cheesecake (Graham Crust) (TPA) | 2.5 Graham Cracker (CAP) | .5 Joy (FA)| .25 Liquid Amber (FA) | 1 Meringue (FA) | .5 Nectarine (TPA) | 7 Vanilla Bean Ice Cream (TPA) | 1

The Joy is there to tie it together, while Liquid Amber really helps create the right flavor profile for the nectarine. Those two go well together in pastry recipes. The meringue helps provide, IMO, a better mouth feel.

I like to add a very small amount of sweetener to this, but I know many people don't, so adjust accordingly. I feel like a bit of butter flavoring might take the recipe to the next level, but I don't have any.

I'm honestly really proud of this juice. It's one of my few (out of WAY too many failures) that I think can stand up to premium lines.

TFA Graham Cracker (Clear) is my hot sauce: I put that stuff in everything. 6% is enough to give it real estate in the flavor profile. Like a cream, it manifests primarily on the exhale to add body to otherwise flat flavors. Mix with 4% TFA Dairy/Milk and you've got the beginnings of a pie flavor. Just add the filing of your choice (Key Lime, Apple, Double Chocolate & Hazelnut) and you've got enough complexity for an ADV. Graham Cracker is by far the most versatile flavor I own.

STRAWBERRY JAM CRACKER

One of my favorites, it's in my daily rotation. You could almost call this my contribution to the zillions of strawberry and cream juices out there but this one is more like a strawberry cookie/cracker treat, with the cream as a mild afterthought to smooth things over.

  • INW Strawberry 3%
  • TFA Strawberry Ripe 3%
  • CAP Graham Cracker 3%
  • TFA Graham Cracker Clear 2.5%
  • INW Biscuit .35%
  • TFA Vanilla Swirl 1.5%
  • FA Vienna Cream 1.5%

INW Strawberry (not shisha. haven't tried it) is my favorite strawberry hands down. Very bold and unmistakeable. Paired with equal parts TFA Strawberry Ripe it tastes quite "jammy", very very sweet.

CAP Graham Cracker tastes exactly like graham crackers to me (which is good!) but the addition of TFA GCC rounds out the cracker-ness of the juice. INW Biscuit serves to add an extra dimension to the flavor.

The combination of TFA Vanilla Swirl and FA Vienna Cream is pretty much my go-to cream mix in a lot of my juices. Works great in fruit as well as bakery mixes. Add in an equal part of TFA Bavarian Cream if you want a little extra creaminess.

Just wanted to say that personally I consider graham cracker essential in any custard mix.

Wish I had more advice to put in but that's my two cents. GC really takes custards to a next level in my opinion.

I could swear there's a gc that brings a buttery element but I don't have it in my flavors and can't seem to find the reference. Anyone (or possibly everyone but me) know which it is?
